Bread goes in- bread goes out
Before we had the bakery we put all our subscription orders in this cabinet beside our front door for our customers to pick up. This month the shops shut but I can’t help myself from baking, so I’m putting all my experiments in the cabinet, anyone can swing by and grab one (all free)
I put bread in, post that it’s there and 10 minutes later it’s empty and I NEVER seen anyone take the loaves.. like small elves at work...

Marmite muffins!
Ingredients:
140ml full fat milk
140ml warm water
1 tbsp marmite
50g melted unsalted butter
20g caster sugar
10g salt
250g plain flour
250g bread flour
6g dried yeast (eight if not adding starter
50g sourdough starter (optional)
Method:
1) grab a large mixing bowl and pour in your milk,water and butter, stir in your yeast and set aside for a couple minute to get to know each other. Whisk in your marmite and starter then add the rest of the ingredients. Knead on high for 7-8 minutes, once the dough is smooth and silky pop a tea towel over the top and set aside for 90 minutes or until doubled in size.
2) tip your dough onto a floured surface and dust with semolina, if your using muffin rings (I use campbell2664 ), cut up the dough into 80g balls, roll in semolina and place into the centre of your rings. If you are go free style, roll the dough into a 3cm thick rectangle and using a round cutter, cut out as many circles as you can then pop onto a floured baking tray and dust with more semolina.
2) leave your muffins to prove for 30-35 minutes.
3) on a low heat, warm up a hot plate or frying pan. Griddle your muffins for 7-8 minutes on each side.
If worried your muffins are still doughy shut them in the oven for a couple minutes.
4) eat hot and smothered in butter

Butter!
With three variations:
-Toasted sesame and miso
- marmite (the obsession continues marmite )
- za’atar and smokey sea salt
Ingredients:
1litre double cream
Add ins:
2tsp flaked sea salt
1tbsp marmite (don’t add salt)
1tbsp za’atar
2tsp miso paste (again don’t add salt)
2tbsp toasted sesame seeds
Method:
1) Let your cream come to room temperature and pour it into a clean bowl.
2)whisk on a medium to high speed for a couple minutes, the cream should go from whipped and stiff to curdled and and buttery.
3) Turn down the whisk to a lower speed, the cream should have now split into either butter globules or butter milk.
4) with a sieve and your hands, seperate the butter from the milk, pop the milk into a jug and set aside (I like to use it for pancakes or buttermilk chicken).
Run the butter under a cold water tap, once the water runs of it clear, you’ll know all the buttermilk has gone, squish out any liquid you can and pop your butter back into the bowl.
5) Add your flavours, mix in with a fork of hands.then wrap up and enjoy 😊.

Ahh the top oven- my nemesis 😈
This is probably the piece of equipment I injure myself the most with, burning my fore arms reaching to get the back, loaves always sliding of the board and onto my head as I offload. This morning there were no casualties!- I was very proud😅
