Mustard-and-Herb-Crusted Salmon with Warm Asparagus Salad

Ingredients:
Kosher salt and freshly ground black pepper
1/2 cup panko
1/2 cup loosely packed fresh flat-leaf parsley leaves and tender stems
1 sprig of fresh tarragon leaves, plus 2 tablespoons coarsely chopped fresh tarragon
2 tablespoons olive oil
2 teaspoons brown sugar
2 teaspoons Dijon mustard
3 tablespoons fresh lemon juice, plus lemon wedges for serving
Four 6-ounce skinless center-cut salmon fillets (about 1 1/2 inches thick)
1 pound thin asparagus, trimmed and cut into 1 1/2-inch pieces
2 cups shelled English peas or thawed frozen peas (about 10 ounces)
2 tablespoons unsalted butter
4 radishes, thinly sliced (about 4 ounces) (see Cook's Note)
Instructions:
Preheat the oven to 425 degrees F and line a baking sheet with aluminum foil.
Bring 8 cups of salted water to a boil in a covered large saute pan. Fill a large bowl with ice water and set a mesh strainer on the ice.
Pulse the panko, parsley, and leaves from 1 sprig of fresh tarragon and 1/4 teaspoon of each salt and pepper in a mini food processor until the herbs are coarsely chopped. Drizzle in 1 tablespoon of the oil and pulse until the mixture is combined. Transfer to a plate.
Combine the brown sugar, mustard, 1 tablespoon of lemon juice and the remaining 1 tablespoon of oil in a small bowl. Brush the tops and sides of the salmon generously with the mustard mixture and sprinkle with salt and pepper. Press a salmon fillet, top-side down, into the panko mixture. Place, panko-side up, on the prepared baking sheet. Repeat this with the remaining fillets and bake until the panko is toasted and the salmon has been cooked, for 8 to 10 minutes.
Meanwhile, put the asparagus and peas in the saute pan of boiling water and cook until almost crisp-tender, about 3 minutes. Transfer the vegetables to the prepared ice bath with a slotted spoon and let cool for about 1 minute.
Meanwhile, heat a second large saute pan over medium-high heat and add the butter, swirling until melted. Drain the cooled vegetables and add them to the pan. Season with salt and pepper. Cook, stirring occasionally, until tender, 3 to 5 minutes. Remove from the heat and add the radishes, the remaining 2 tablespoons lemon juice, and 2 tablespoons tarragon. Toss to combine, taste, and adjust the seasoning. Serve the salmon with the asparagus salad and a lemon wedge.

What's new at Isla Animals OASIS?

The heatwave has been a new challenge... sweaty or not we keep going!

- Surgery room – we are almost done there, still missing some plumbing and electricity, and we are trying to find the strength to lift and fix the cabinets so we can start placing stuff in them and making this place our pharmacy, testing station, surgery room, we are pretty excited to have an especially dedicated area for all of this!!!

- Shelter room – almost done painting and yes... we painted WHITE... BUT.... There is a good reason for it (like we know it may get dirty hehe)... we would like all the walls to be covered with murals... jungle, animals, a happy place for our pups!

- Outdoor areas - this is a tough one cause the sun has been quite brutal lately! We are trying to move rocks and clean up the areas of debris. It's going well, just a bit slow due to all the sweating!

We have had to slow down the build... but we are NOT stopping!
For now we are doing most of the work ourselves
(keep in mind there is 2 or 3 of us!)
But we can already imagine our pups enjoying Isla Animals Oasis!

What's next at Isla Animals OASIS?!

With things going a bit slower and us, with very little knowledge and limited skills and energy, are doing most of the jobs... well... this is what we are concentrating on...

- Painting - There is a ton of sealing, insulating and painting to be done. Some colors have started to come up but we are trying to figure out how to climb to the higher areas to finish the painting!

- Making sure everyone stays fresh - with the heat peaking at crazy temperatures here, while out of the sun is bearable, we want to make sure the pups are fresh. We have set up fans in their pens and we are working on hanging some shades to make sure they stay cool during the hot afternoons.

- Electrical issues - we are struggling to figure out solutions for our electrical problems. We have low voltage coming in, so turning on electrical appliances is a challenge and there is no talk of AC, which has weighed heavily on our team spending day and night here. We know the problem is over 2000 feet of cable hanging through the jungle to the transformer. A little price to pay for being a bit away from the buzz and hustle. AC is also a must in our surgery room so we are looking into solar systems... we learn something new every day!

What animals are here with us at Isla Animals Oasis?!

We have about 15/20 dogs here and 4 cats..

The little cows, still under 2 mo will be ready to travel in July, hoping to find them homes and get them out before the change on the CDC rules leaves them stranded.
Their mommy, Chesnut, will soon be spayed and she's almost ready for adoption!

We still have Lucy, our beautiful fluffy senior who's ready for a home. She adores other dogs and prefers a chill life with walks and mostly big humans (and women more than anything... she likes men but they will have to win her heart with treats!).

We also have Mistica, the goddess of icy blue eyes... she is mostly ready to fly but we are waiting for her fur to finish growing so she looks a bit better!

And we still have Barky, the last survivor of a litter that gave us nightmares earlier this year... she's almost 7mo now and too big to fly in cabin ( a taste of what is going to happen after August 1st with the new CDC rules)... She is so ready for a home... desperate for love, she makes us laugh cause she loves playing with the hose!

Lopez, our long-term resident has his first year anniversary with us this year, being one of the doggies that have spent the longest time here. We have made an assessment with a trainer and we are hoping to tackle his social issues, clearly cause by living in the streets for a very long time. We are hopeful that he and Lucy will become friends soon! So we are putting some more work in exercising him and making sure he is confident and comfortable, while we still dream of a home for him!

And then we have Eenie, a little chi that has been under observation for a while, Esperanza with her two legs, can't wait to have her running free, we also have Maggie, a pup that hopefully will leave soon, we have Lalo, the cutest chi boy, and our newest Isla girl, Zoe, a very small dog ready to love with all her heart!

And of course some more pups in foster... as usual!

4 April... One year anniversary since the government of Isla Mujeres withdrew their (little) support to Isla Animals

A year of corruption and misinformation that only harmed the most vulnerable.

It's the 14th of April 2023... we have been told some snob government official came to Mundaca to "look around" with what was described to us as an arrogant attitude, like all politicians that find themselves in a position of power without actually holding it.

So, there we go to a meeting where while we are on time, no one actually is. Nothing was hinted, nothing was said until then. But in 10 min, sitting in front of someone who had no clue of what was going on, Isla Animals future was suddenly at risk.

We are passionate about Isla Animals, what we do and how much more day by day we can achieve. The team, tiny as it is, has left sweat, blood and tears to make sure the animals we take in, the animals we sterilize, and every animal we see, has a better quality of life. They are the ones that matter. Not this person in front of us.

So, how did the conversation go?

- We need you to leave Mundaca. Restauration. New walls. Island Patrimony. Etc.
- OK (shock). So what is going to be the relationship of the government of Isla Mujeres with Isla Animals?
- (silence) I don't know. That's some other useless politician's problem.
- So.... We won't continue being abused by people that only fill their pockets with our work and exploit the suffering of the local abandoned animals?

Yes... you see the island all pretty and looking good... Because that's what they want... tourists to see the island all pretty. However, the real problems are there still and they are just painted over, just like our murals were at Mundaca. By Law, the govt of Isla Mujeres should have a Centro de Bienestar Animals, they don't. By law, they should have animal well-being programs. They don't. And in our souls, cause we have common sense, we thought they would kick us out and have some sort of plan B.

They didn't.

So here we are.... A year later... Mundaca sits empty still, with the shelter walls painted but everything else exactly as we left it. The safe place where thousands of dogs found happiness, now waiting empty to become a souvenir shop or who knows what.

But we are CELEBRATING the anniversary of our eviction. Why? Because we transformed horrible heartache and desperation into a reality we hadn't even dreamt of... Isla Animals Oasis!

A space that is ours (and no one can take away from the animals), a space for all of our animals, cats and dogs, a space with outdoor areas that the dogs can enjoy, with medical isolation areas where we can safely treat our dogs, a space to welcome visitors and also volunteers that may want to stay and experience the rescue life in Mexico, a surgery room to do continuous spay and neuter programs. This wasn't even a dream, and only a year later... 10 months after starting construction, it's a solid beautiful REALITY.

Yes, Isla Animals Oasis is not finished. We moved in at the end of February and walls weren't painted, there was dust everywhere, the shelter side of the building is still pretty much blocks and cement.... But WE DID IT... we said we would and we did it!

We are hoping to be able to fundraise enough to finish the hardcore work, we are still working on the electric installation, plumbing, covering the walls, working on outdoor areas, filling the land. There is SO much to do... but we are hoping by the summer we will be somewhat established in order to receive volunteers and visitors. It may depend on how successful we are in taking this last step... already a bit tired after a year of nonstop work (we are architects and contractors for this place!)... but we are HERE now, and also for us is a magical reality and so exciting in terms of the possibilities for the future!

So... celebrate with us... a year of being evicted... a year of tireless work now being transformed into a beautiful reality... thanks to YOU... thanks to YOUR kindness today our dogs have roofs, enjoy the fresh air and have the space to run they never had before. Thanks to YOU, Isla Animals didn't die when short-sighted politicians decided they didn't care about animals after all.

In any case. Isla Animals as a 501c3 and a Civil Association in Mexico remains independent, remains focused on the animals and not some bureaucratic rabbit hole. We have learned a lot this year. We have always fought for the animals that need it the most and that won't stop, if anything we are more committed than ever before! We continue regardless of challenges that seem unbearable, we know who our friends and supporters are, hard times are good for a clean slate, and Oasis is our clean slate and our door into a new world of options to help the street and abandoned animals of Mexico.

Please help us with this beautiful project. We still need funds to finish the surgery room, covered area for the pups to be safe during the nights, and the isolation areas.
