Hot Honey Chicken Burger w pickles and mayo. 🍗 Recipe makes 4 Marinade 4 Chicken breasts 250ml Buttermilk 15ml Hot Sauce 10ml Onion Powder 10ml Garlic Powder 10ml Cayenne 10ml Paprika 15ml Mustard Powder 5ml Thyme 5ml Oregano 5ml Salt 5ml White Pepper Flour Dredge 200ml Flour 300ml CornFlour 50ml Baking Powder 7.5ml Onion Powder 7.5ml Garlic Powder 7.5ml Cayenne 7.5ml Paprika 10ml Mustard Powder 5ml Salt 5ml White Pepper Hot Honey 200g Honey 150ml Chicken Stock 2 Garlic Cloves 15ml Chilli Flakes 3-5 Dried Birds Eye Chillies 15ml Lemon Juice 10ml Apple Cider Vin Salt & Pepper Frying Oil 4 Buns Pickles Mayo Method Marinade 1. Butterfly the chicken breast. 2. Add all the ingredients to a bowl, cover and marinade chicken in the fridge overnight. Dredge & Fry 1. Combine the flours and spices in a separate bowl, to form seasoned flour. 2. Remove chicken from marinade and add to the seasoned flour, coat very well then place on a wire rack for 10 minutes. 3. Re Dunk the dredged chicken back in the buttermilk and then into the seasoned flour. 4. Fry the chicken at 170°C for 6/7 minutes. Remove onto a wire rack Hot Honey 1. In a small pot add in the chicken stock, chillies, chilli flakes, garlic cloves and lemon juice. Bring to a simmer. Add in the honey and bring back to a simmer. Cook for 3 minutes on medium high heat. Dunk or baste fried chicken with hot honey and assemble burger.

episode 1 🍋 I’ve always had a crazy sweet tooth but I’ve never been much of a baker. Cooking is so much more forgiving, it’s a balancing act between different flavours and it’s something I think I’m naturally quite good at. Baking on the other hand requires precision which to be honest I struggle with and definitely want to work on. So follow along as I try, learn and sometimes fail with all things baking. Pie crust 500g flour 250g butter 100g icing sugar Pinch of salt 2 eggs Splash of milk Lemon Curd 400ml water Lemon zest 200ml lemon juice 100g caster sugar 6 Tbsp cornflour 3 Tbsp water 100g butter 8 egg yolks Meringue 6 eggs Pinch of salt 350g sugar 4-5 Tbsp water
