China's standard-bearer for Zhejiang cuisine makes a marvellous debut in Malaysia: LONGJING has launched in Pavilion Kuala Lumpur, its flagship for a three-restaurant rollout that spans Sunway Pyramid and Sunway Velocity this month, following triumphant forays into Singapore and Bangkok.

Founded amid the Longjing tea fields beside Hangzhou city's West Lake, LONGJING champions Zhejiang province's culinary artistry, celebrated for its calibrated flavours, fresh rather than forceful, light and refined instead of heavy or heated.

This Pavilion locale is LONGJING's largest overseas restaurant, its design drawing eloquently from Ten Scenes of West Lake, a canon of classical landscape vistas. The space is structured like a lakeside promenade, with vignettes that reveal themselves poetically, like a stroll on the water's edge.

Black-awning seating evokes boats that traverse West Lake, while hand-painted murals and oil-paper umbrellas sketch out the Jiangnan region’s visual vernacular with motifs like Three Pools Mirroring the Moon.

LONGJING's gastronomy mirrors that geography, built on the soulful clarity of broths, the sweetness of the fisherman's catch and the succulence of slow braises, in collaboration with Chinese Gold Chef Award recipient Chef Yu Bin.

From Emperor Qianlong Fish Head to Dongpo Pork Ribs, LONGJING raises Zhejiang cooking traditions to the esteem long held by Cantonese, Sichuan and Shanghainese food, widening Malaysia's map of Chinese culinary expression.

Fusing French sauce craft with Thai spice work, PJ’s new THB Bistronome is a culinary crossroads of rues and sois, where the Seine flows into the Chao Phraya and the Eiffel Tower shares the sky with King Power MahaNakhon.

Equally at ease with bechamel and basil, tartare and tamarind, poulet and pad Thai, THB Bistronome is steered in Section 19 by Malaysian chefs Andy Choy and Kuik Wei Han.

Bisque and bouillabaisse both find fresh flavours here. The soup is simmered with flower crab, coconut and Thai ginger, balancing smooth and sharp, forward in heat and herbs, charming with a crustacean cracker. The stew of red snapper is steeped in saffron aromatics and tomyam accents, a galangal-grained bridge between Marseille and the Mekong.

Soak up these scents and sensibilities with lemongrass-laced brioche, matched with massaman curry butter. Then swoon over the omelette soufflé, a thick, crisp-cloudy fantasy, fringed with frisée and ulam raja, relished with red and green chilli ferments.

Whether you prefer duck as Champs-Élysées confit or Chinatown roast, poultry is a THB pleasure: The roast is slick and succulent, punched up with pickled greens, pooled in classic jus that brings the fowl’s flavours into focus.

Orange-centred Thai milk tea canelés turn THB into a Phloen Chit patisserie, a Parisian plate for a Bangkok palate. Fun fact: THB stands for The Humble Beginning, reflecting how the French reached Siam in the 1600s before embarking into Indochina.

Championing Niigata-inspired coastal ramen, Sunway Velocity’s new Ramen Takahashi tackles a triple-stock broth that blends sea and land, simmered with yakiago (grilled flying fish), pork bones and chicken, balancing smoky savouriness with soft-structured clarity.

This is meticulously made ramen from top to bottom, from broth built on Japanese-sourced stocks to custom-crafted curly noodles with springy smoothness, from shoyu-marinated, slow-braised pork shoulder chashu to three-day-aged, ham-like pork loin.

Fun fact: Ramen Takahashi runs nine locations in Tokyo, with recipes refined by Niigata native Yuma Takahashi. Its first Malaysian outpost pours a complimentary prelude of yakiago dashi, boiled with Hikada kombu and bonito, before plunging into the oceanic main bowl.

The most acclaimed pizzerias in Malaysia and Indonesia both turn ten this month, marking the milestone with a celebration that unites two regional forces of fire, flour and fermentation.

A decade after launching in 2015, KL's Proof Pizza + Wine and Jakarta's Pizzeria Cavalese recently linked up to offer their cities a taste of cross-border craftsmanship. Proof and Cavalese remain their nations' sole representatives in 50 Top Pizza's ranking of the Asia-Pacific's 50 best pizzerias this year.

First, Proof's head chef Kim San travelled to Cavalese in August for a bilateral dialogue in dough. Then in October, Cavalese's chef-founder Dicky Tjhin returned the favour by heading to APW Bangsar for two exclusive nights.

The flavourful summit in KL spanned Cavalese's signature star-shaped Piedmont Stellata Pizza to Proof's kulim aioli-studded Jungle Wild Marinara. Guests also savoured Klepon Tiramisu, a unique Indonesian ode to onde-onde, marrying mascarpone with pandan and palm sugar.

The pièce de résistance: A Dolomites-meets-Campania Four Hands Pizza created by both chefs, with cured meat and cheese influences from Italy's north and south.

While the October collaboration has concluded, enthusiasts can return to Proof for other limited-time pizzas in the months to come, charting the course for the next decade and beyond.
