For this weeks I’m testing a Thai Beef Lettuce Wrap Recipe using Beyond Meat beef! I’m still tweaking the recipe and be sure to share it once it’s locked down!

I MISS California Burritos.

Carne Asada Ingredients:
1 1/2 - 2 Pounds of Flank or Flap Steak (im using flap here)
1/2 Cup of Soy Sauce
1/2 Cup of Orange Juice
Juice from 2 Limes
1/4 Cup of Olive Oil
1 Cup of Beer]
2 Teaspoons of Liquid Smoke
1 Cup of Chopped Cilantro
1 Jalapeno Seeded and Minced
4 Cloves of Minced Garlic
1 Teaspoon of Cumin
Salt and Pepper*

Burrito Ingredients:
Flour Tortillas
French Fries
Cheddar and Jack Cheese Blend
Sour Cream
Guacamole

Directions:
1. Combine all the ingredients in a bowl or large jar and marinate overnight.
* I like to season the meat with salt and pepper AFTER I pull it from the marinade right before I cook it.

2. Cook the steak to your desired doneness. I did 130F for a medium rare.

3. Let the steak rest for 15 minutes while you cook a big handful of french fries.

3. Slice steak against the grain and place as much as you think you can eat into a large flour tortilla

4. Add cheese, fries, sour cream, guacamole, and do your best to roll that MF up!

5. Feel free to throw it on a hot pan to toast each side and melt the cheese. My cheese didn't melt because there was a lot going on with the filming process. So the steak and fries were actually cold when I rolled my burrito. The struggle of being a food content creator.

So I was that as***le who would post the “I said happy mothers day to my mom in real life instead of posting a long ass paragraph on social media...” meme. Until one of my friends, who just lost their mother commented, “I'd give anything to be able to do that..” I felt like a total turd. Seeing other people writing these long posts about their mom always made me feel some type of way. As I get older and try to learn more about myself and why I do what I do, and feel how I feel, I try to dive deep into why. Why do I feel the need to judge other people posting about their love for their moms. Like wtf? Why should I even care? Why does that make me feel the need to hate on that. And it's because I'm jealous. I'm jealous of the relationships that other people have with their mothers that I don't. I'm not as close to my mom (or my family in general) and it's something I really wish I was. And as I get older and see my parents get older I'm realizing that I don't have much time left to say anything. I love cooking because I watched and helped my mom cook a lot growing up. I must have helped roll a million lumpia in my life. Last time I was home in 2019 we were able to shoot some of my favorite recipes together. It was honestly the closest I ever felt to my mom and being able to watch the videos makes me so happy. Here is a blooper from the Nilaga video we did last time I was home. Happy Mothers Day to all the moms out there. My deepest sympathy to everyone who has lost their mom and has to see all the posts this weekend. My heart goes out to you too.
