Smoked Birria Sliders
These are some of my favorite sliders to date! They’re loaded with a ton of flavor and they’ll be a huge crowd pleaser.
Recipe
• Preheat the smoker to 275°F using cherry wood for sweet smoke flavor.
• Use yellow mustard as a binder then season the chuck roast with salt, pepper, garlic powder and an active charcoal rub.
• Smoke the chuck roast at 275°F for 3 hours then place in a dutch oven and add the braising liquid with 2 cinnamon sticks and 2 bay leaves.
• Cook for another 2-3 hours until fall apart tender.
• Assemble the sliders using @kingshawaiian Sweet Slider Buns. Add shredded oaxaca cheese, ¼ cup diced onion, ¼ cup cilantro and more shredded oaxaca cheese.
• Place the tops of the buns back on, brush on butter then cook for 15 minutes.
• Cut up the sliders, dip them in the consume and enjoy!

1/2 large white onion
5 cloves of garlic
3 ancho chiles
3 guajlo chiles
2 chipotle peppers in adobo sauce
2 roma tomatoes
4 cups of water
4 cups of beef broth

Buffalo Parmesan Garlic Chicken Wings
Warning: Extra napkins required, but it’s so worth it. These are packed with mad flavor.
Recipe
• Create buffalo sauce in a pot by melting 1 stick of butter then adding 1 cup buffalo sauce, 2 tbsp honey and 1/2 tbsp garlic powder
• Inject the buffalo sauce into whole chicken wings then season the outside of the wings with salt, pepper, garlic powder
• I cooked these via rotisserie on my @kokomo.grills but you can also grill or smoke these wings
• Put together the Parmesan garlic sauce
• Once the wings reach and internal temp of 185F, remove them and coat them in the Parmesan garlic sauce

2 tbsp apple cider vinegar
1/4 cup grated Parmesan
Juice from 1/2 lemon
1 head roasted garlic
1/2 tsp salt

• Wrap it in pink butcher paper once the brisket’s bark is set at about 175F.

The Perfect Prime Rib
Be sure to give this recipe a shot this prime rib season!
• start by French cutting your rib roast so that the bones are exposed.
• Salt brine the roast overnight using kosher salt in all sides
• Rinse roast off with water, then pat dry
• Let the roast come to room temp 90 mins prior to cooking
• season it up with your favorite steak rub then coat it with softened butter and 1 tbsp each rosemary & thyme
• Insert @meatermade MEATER Plus to monitor your internal temp
• Get @kamadojoe fired up and smoke with oak wood
• Smoke at 250F for about 2.5hrs or until the internal temp reaches 110F
• Remove roast from smoker, open vents to increase heat then sear over direct heat on all sides. Be sure to remove your MEATER for this step.
• Once roast reaches 125F, remove from heat and rest the roast for 30 mins and tent it with some foil
• Slice on in to perfection and enjoy!

This steak just hits on all levels of flavor and you absolutely need to try it.
Recipe
* Soak bone marrow boats overnight in salt water for clean tasting bone marrow
* Season the bone marrow boats with salt and pepper then smoke at 325F for 30 minutes
* Place 12 tbsp butter in a bowl with 1.5 tbsp cajun seasoning, 3 cloves minced garlic and 2 tbsp chopped parsley. Scoop the smoked bone marrow into a bowl, mix well and roll into a log using saran wrap. Chill in fridge until firm then cut into 1 inch slices of butter.
* Season Wagyu tomahawk steak with salt, pepper and Fogo active charcoal rub.
* Insert the @meatermade MEATER 2 Plus to monitor the internal temp during the cook
* Smoke the steak at 250F for 45 mins until it reaches an internal temp of 100F
* Sear the steak on both sides over direct heat and remove once the steak reaches an internal temp of 125F
* Top with a few slices of butter then let the steak rest for 10-15 minutes.
* Slice against the grain and enjoy!

These are one of the most delicious bites of bbq you can make!
Recipe
• Cube a 3 lb well marbled chuck roast into 1x1 inch cubes.
• Use yellow mustard as a binder, season the cubes on all sides with salt, pepper garlic
• smoke them at 2:50 for three hours using Cherry wood on the @kamadojoe
• Once the bark is set, put them in a foil pan with one quarter cup honey 4 tablespoons butter and 1 cup of bbq sauce.
• Cover, then place back on the smoker for another two hours. The last 30 minutes remove the cover mix then let the sauce tack up.
• Once they reach 205 F internal, serve them up and enjoy!
