I’m still here. Sorry, my sinus’ have been insane this past week so I haven’t really been on Facebook much. Dinnner is pretty boring tonight. Chicken breast, jasmine rice, and salad. We have this at least once a week because it’s something that everyone will eat every item 😂

Finished your pickles and have an empty jar of juice? Don’t throw it out! Pickle juice has many great uses!! Today I had some cucumbers from last grocery shop that needed to be used up because we bought new ones so to extend their life I chopped them up and threw them in the jar the pickles used to be in with part of a ranch dip seasoning packet for extra kick. In a few days they will be great refrigerator pickles and life extended. You can also add extra spices, onion, or garlic to boost the new pickles!

OTHER GREAT USES FOR PICKLE JUICE:
-Post workout and electrolytes
-Brine for meat like chicken as it is a great tenderizer!
-Add to marinades
-Use as an ingredient in homemade dressings
-Steam veggies in it instead of water for a bit more flavor
-Soak sliced potatoes in it overnight for a strange flavor when making homemade fries
-Pickle other vegetables in the liquid by letting them sit for a few days in the liquid
-Add to potato salads, tuna salad, chicken salad
-Boil potatoes in it with a bit of water before making mashed potatoes
-Use in deviled eggs
-I hear it’s good in Bloody Mary as well.

I made this recipe for dinner. It’s one of my favs. I double the chicken and skip the chili in adobo (because others in the house don’t like spicy). I prefer using the slow cooker on it as I find it gets more depth of flavor. For serving I sub Greek yogurt in place of the sour cream, a bit of chopped cilantro, green onion, and for me I crumbled some baked tortilla chips over using fried. Always delicious! I made cottage pie last night. I did not take a picture of the final product as it definitely was not a food I suggest very often for weight loss, however I made sure my choices for earlier in the day were lower calorie ones to allow for the calorie bomb that dinner was. Balance is always possible! I made a couple alterations to lower the calories like skipping milk/cream, less cheese, and using a ground turkey/ground beef combo but it was still pretty caloric. My husband gets the leftovers for the next few days. I cooked the potatoes for the mash in chicken broth and some seasoning then saved some cooking broth to mix with Greek yogurt to make the mash and to make a cheesy sauce for the meat layer. The chicken broth does not turn the potatoes yellow fyi. It was a 32oz container plus a tiny bit of water to fully cover the potatoes.

Pork loin, broccoli and cheese cornbread casserole, and salad. The cornbread casserole was quite yummy! next time I plan on playing around a bit more and seeing if I can keep it as yummy but lower the calories some. I already altered it a little by switching to whipped garlic and herb cream cheese from Boursin and adding a bit of cottage cheese in place of some as well.

I have never made chips and I do not own an air fryer so for a first try they aren’t too bad. Along with the chips I made some crisped ham strips and bomb yogurt. The only thing I would change is that if I had any spring mix left I would have made a small side salad on 1/4 of the plate to add some green. Perhaps next time. 402 calories, 43.7g protein

In have not had lunch yet, but I did want something a bit sweet so I had 3/4c thawed dark cherries with 1/2c thawed blueberries. Once thawed I mixed with 1tbs of nonfat Greek for a bit of creaminess and a couple packets of Splenda. It totally hit the spot at 111 calories.

Husband and the kids had cheeseburgers, Annie’s Mac and cheese, and salad. I had a taco salad and used cottage cheese for the base of my dressing and cheese with a bit of ranch seasoning then a bit of mild fresh salsa. On the side I baked some corn chips that I made with Susalia tortillas I had in the deep freezer from before they changed off the old keto formula, and some guacamole mixed with a bit more fresh salsa. I do use full fat large curd cottage cheese so anyone who likes the low fat can change that for slightly less calories or also switch the ground beef for ground turkey. I used 3.5oz of lean ground beef. I chose tri-color tortilla strips because they’re just easy to crumble up even more to get the flavor nice and distributed.
594 calories, 36g protein.

*sorry mama was tired so just decided to use the kids plastic plates 😂😂 who cares when the flavor is there though right?

Breakfast- 1 banana with 1tbs of creamy peanut butter divided with each bite, 1 serving regular Cheerios, 1 serving unsweetened soy milk, pinch of cinnamon, 1/3 scoop of vanilla protein powder on the cereal then mixed in. 460 calories, 25g protein.

I generally try for at least 30 per meal but as I will likely go over in another meal or with snacks I’m not too worried. It was yummy and satiating 😁 for anyone wondering, the protein powder sort of makes the Cheerios taste similar to frosted only not quite as sweet.

I made spaghetti and Italian sausage with garlic toast for the family tonight. I opted not to have pasta or sauce this evening and quickly cooked up some thin sliced cabbage to have with 1 1/2 mild Italian sausage links, 1.5 tbs bacon bits, and spices with a slice of garlic toast. This is not because I had to because I could have balanced things to have pasta and sauce, but this was what I was feeling. 644 calories, 34g protein. (I only had a 300 calorie lunch today so I had plenty for dinner) 😁❤️

*ALSO- cabbage is very yummy with pasta sauce as an option as well, I just didn’t feel like that version tonight.

It’s a pizza kind of night as my we forgot to take chicken out of the deep freezer for what I had planned and I did not sleep well last night (coming off vacation it’s hard to shut my brain down). Back left is mine- naan flatbread crust, tomato sauce & cottage cheese mix on mine, cheddar and Italian blend (1/4 cup together), pepperoni, bacon, ham, sweet bell peppers, Parmesan, and a few dots of basil paste. 2 pieces + 1 middle each are for my husband and son and front right is my daughters.

Finally decided on lunch. It only took me an hour to decide 😂 595 calories, 48.6g protein. 4oz rotisserie chicken with bbq sauce on 1 slice sourdough, BOMB yogurt (1/2 servings dark cherries, blueberries, strawberries, + Splenda, + 1/4 scoop vanilla protein powder), and 1/2 serving dark chocolate skinny dipped almonds.

Breakfast- I made a very simple quick breakfast wrap as I have a doctor’s appointment shortly. One of the larger carb balance wheat tortillas, Philadelphia whipped garlic and herb cream cheese, good & gather thin provalone, smoked turkey deli meat, pepper, 1 scrambled egg. 410 Calories, 31g protein.

Balance.. sometimes if you know you are going to have something more calorie (or points) dense later on for dinner simply plan lighter earlier in the day. Today I started out with my favorite Greek yogurt, berries, and some protein powder (I like to call it BOMB yogurt), lunch was that delicious salad, 2 snacks of popcorn with a few dark chocolate covered almonds and later a plain carb balance wrap allowed me to eat my REALLY delicious dinner of 1.5 servings of pasta, red sauce, 6 homemade meatballs, and 2 slices of garlic Texas toast. I don’t always have the pasta and I do not always make garlic toast, but dinner sure was yummy and all still within my daily calories. Over my daily protein goal as well! I already ate one slice of the toast 😂
