Peach Bourbon Smoked Pork Tenderloin 🔥
It starts with a pork tenderloin trimmed and coated with fireandsmokesociety Sweet Preacher rub. This gives you some amazing flavor and color. You can find this rub at your local Kroger and Walmart stores.
Get your grill setup for indirect smoking at 350 degrees.
Smoke the pork tenderloin with some Cherry wood until the internal temperature hits 140 degrees.
Sear over the direct heat for a minute or until you get some good color. Then remove from the grill and let it rest.
For the glaze heat up some peach preserves, bourbon and a pat of butter. Let it simmer for a few minutes and then taste. This is all up to your taste buds how much you add of the bourbon.
Slice the pork tenderloin against the grain and pour that beautiful glaze on top. You will absolutely love the flavor with this one and it’s so easy to make. Enjoy!!

What’s your favorite kind of burger? 🍔
For me a good smash burger has to be near the top of the list. I love the simple flavors that stand out. It all starts with quality ingredients.
Start by getting your griddle hot. Add some beef tallow.
Add your sliced onions. I used a vidalia onion for this. I love the flavor that it gives.
Add your eatmeatdistrict Smash Patties. Since they are prepared already it’s so easy and I love the chuck, brisket and short ribs that they use.
You can smash with a press but as a hack you can use a spatula and a can like I did.
Flip the burger and then add your Salt, Pepper, Garlic. Then add your cheese.
I like to toast the hamburger buns and heat them up. After putting your burger together you can add any sauce or toppings. I wanted to keep this simple and let the flavor shine through with the ingredients. These were so good!

I took these wild caught shrimp from lobsteranywhere and wrapped them around a piece of sliced kielbasa.
Season with your favorite seasoning. I like to use the spiceology Lemon Chili Rye for this. That flavor profile adds a nice touch.
These only take a few minutes to grill. Be careful not to overcook the shrimp.
Melt some rich butter and add some seasoning to the butter to kick up the flavor.

Who loves some Chimichurri? Chimichurri adds so much flavor and I wanted to put a twist on it.
I added this chimichurri to some amazing Picanha but you can add it to any meal to punch up that flavor.
Chimichurri Recipe
4 Garlic Cloves Chopped
1/2 Cup of Fresh Parsley Chopped
2 Tablespoons Red Wine Vinegar
1/4 Cup Olive Oil
1/4 Cup trufflinnyc White Truffle Oil
Sea Salt
You can add some oregano to this and some add some red peppers. It’s all personal preference and for me it just depends what I have on hand when I make this. As always experiment with flavors and adjust accordingly.

Who is hungry for some scallops?
At the primoceramicgrills bash everyone loved the lobster but I had a lot of questions on grilling scallops. It is so easy to mess this up but there are a few things to keep in mind.
Start with high quality scallops. Day Boat scallops like these from lobsteranywhere . The flavor is more concentrated because no liquids are added to them. They will also sear much better.
Dry your scallops before putting them on the grill. I like to use a wire baking rack and pat the scallop dry with a paper towel. Add your favorite seasoning.
Get your griddle hot. You can also do this in a pan. You can add some ghee to the surface but lately I dont add anything to start.
Once you get the color that you are looking for flip the scallop. You want get a nice brown crust.
Pour over that rich butter. Let those beautiful scallops simmer. The toughest part is knowing when to pull the scallops off the grill. I go totally by feel. They should be opaque and when you press the center it should have a slight rebound.
Like I always say put those reps in. What that means is the more that you do something the easier it gets. That is totally the key to an awesome scallop.

This is something that you don’t see every day. These are salmonandsable Sockeye Salmon wings. The belly is the best part and the flavor will blow you away.
I did a short marinade with some trybachans Yuzu Sauce. This stuff is absolutely delicious.

It all starts with quality ingredients. We want to add flavor but not cover up that amazing salmon flavor.
Let’s start with these beautiful salmonandsable sockeye salmon filets. Look at that amazing color. It’s one of the cleanest proteins that you get get.
Let’s add some fireandsmokesociety Potato Slayer. Such a great blend of flavors and it works perfect on fish.
I cedar planked these filets because I wanted to add a little wood fired flavor. I like to take this salmon to 140 degrees or less. Sockeye is very lean so you don’t want to overcook it.
I topped the salmon with some compound herb butter. It adds such great flavor.

When it comes to seafood there are so many good options. I love to go back to the basics. Shrimp is one of those basics that I love to grill. There are so many good ways to do this but we’re going to keep it simple and add some great flavor.
It starts with selecting larger shrimp. I think the larger shrimp have a different texture.
For this cook I used some spiceology Chile Margarita seasoning. I like a little bit of heat that this brings.
Add some rich butter to your pre heated skillet. Add your shrimp to the pan. When you get some good color flip the shrimp.
Shrimp cook very fast so be careful not to overcook them. A few minutes each side is all that you need.
I wanted to add some flavor that compliments the seasoning that I used. I added some lime zest to the rich butter. We absolutely loved that added flavor.

What’s your favorite way to sear a steak?
Lately I’ve been loving searing on a cast iron griddle. I make sure that griddle is piping hot and add some beef tallow to slick the surface.
The griddle gives you lots of surface area that builds a beautiful crust.
Just light up that fogocharcoal and watch the magic happen. For a quicker cook like this I use the black bag. I find this charcoal size perfect when you go from smoking to searing.

I was invited by my friends at ardbeg_usa to check out Taste Upper West Side in NYC.
Ardbeg put on a great display. Their Smoky Bacon Old Fashioned was really good. They use this their 10 yr for this and it has a great smoky flavor.
Smoke on the Water cocktail uses their Wee Beastie which is a single malt scotch whisky finished in bourbon and sherry casks. That combination yields some amazing flavor.
If you need a little more smoke put your cocktail In the smoke chamber. This added a really nice touch.
They call this BizarreBQ for a reason. They had bbq bugs for you to sample. I could have added them to my cocktail but I wanted to try them alone. I have to say they were pretty good.
They had these awesome sliders that they used their own Smoke Sauce. Loved the flavor on these.
Such a fun event and always great to experience something like this in the heart of the city. Cheers!!
