Chicken Rice Pilaf - A festive, yet easy, Mediterranean inspired recipe. It is aromatic and full of flavour and it is done in under one hour.As always, I use European Rice for my recipes as I have full confidence in its safety and quality. Ingredients:To cook the Chicken:500 gr chicken breast1 onion, cut into 4 pieces2 cloves of garlic1 carrotPeppercornsSalt6 cups of waterFor the Rice:2 tablespoons unsalted butter1/4 cup vermicelli1 1/2 teaspoons all spice1/2 teaspoon ground cinnamon1/2 cup sliced almonds1 1/2 cup medium-grained rice rinsed thoroughly2 1/3 cup stock from the chicken breast boiling hotInstructions:1. In a deep pot combine all the ingredients to build the chicken breast. Bring it to a boil, and then gently simmer (in medium-low heat) until the chicken is cooked through, skimming and discarding the foam from the top as you go, 25-30 minutes.2. Transfer the chicken breasts to a plate, and allow them to cool for 10 minutes. Using two forks shred them into smaller and thinner strips. Cover with aluminum foil and set aside. Reserve the liquid that the chicken was cooked in.3. Heat the butter in a deep cast iron pan. Add the vermicelli, and cook, stirring constantly, until brown. It will look like it is (almost) burning. This will take 5-7 minutes.4. Add the allspice, cinnamon, almond slices, and rice. Cook in medium heat, stirring constantly for 6-7 minutes, making sure that the rice is thoroughly mixed with the vermicelli and spices.5. Add 1 cup of the reserved liquid and 2 1/3 cups of boiling water, 1-teaspoon salt and 1/2 teaspoon black pepper. Give it a stir. Bring it to a boil, turn down the heat to low, cover tightly with the lid, and simmer for 20 minutes or until all the water is absorbed.6. Combine the rice with the chicken. European Rice with Lamb Shoulder
You will need:
Approximately 1kg of deboned lamb shoulder
2 cups of medium grain European rice pre-soaked
1 onion
2 garlic cloves
2 bay leaves
Salt & pepper corns
1. Boil the meat cubes, remove the foam.
2. Add the onion, garlic, bay leaves, salt & pepper and boil for 1h on medium heat
3. Remove the meat, filter the stock
4. Layer the rice, then meat and pour the stock over
5. Take it to the oven 200C for 30 min.

Sweet European rice in a pumpkin
Happy #nationalpumpkinday ! Celebrating with a cool and delicious recipe: European Rice with dry fruits and nuts in a pumpkin! It’s sooo good!
For a medium sized pumpkin (the same one you would carve for Halloween 🎃 ) you would need about 2 cups of uncooked rice. I cooked the rice in my Instant Pot this way:
2 cups medium grain rice
2 cup plus 8 tbsp cold water
Manual or high pressure 6 min
Slow release 10 min
Now, you will need a handful of nuts of your choice. I used walnuts. You will need a handful of dry fruits of your choice. I used dried apricots and prunes. Chop them coarsely.
Melt about 200 grams of butter. Then add the nuts and fruits. Add pumpkin spice or cinnamon to your taste. Simmer for about 5 min. Remove from the heat.
Carve the top of the pumpkin. Remove the seeds and the strings. Now let’s layer: rice, nuts and fruits, honey. Layer until you reach the top and cover with the top.
Use foil to completely cover the pumpkin and send to the oven for about 2.5 - 3 hours on 180C.
Remove, let rest and serve. You can cut the pumpkin in slices and serve the rice with the slice or just scrape the pumpkin when you reach for the rice. Enjoy.

A paella-inspired recipe (video) that is quick to make and tastes wonderful. If you like seafood, this recipe is for you. Once again, the European Rice I used catered excellent results. Save the recipe and try it out soon:
Ingredients:
2 cups chicken stock
1 pinch saffron thread
10 shrimps, peeled and deveined
Salt & pepper
2 tbsp olive oil
1/2 onion, finely chopped
1 garlic cloves, minced
1 tsp paprika
250 grams European rice
250 grams canned tomato cubes
8-10 mussels scrubbed and debearded
½ lemon, juiced
Fresh parsley leaves, finely chopped
Instructions:
1. Add the chicken stock to a microwave-safe liquid measuring cup and microwave on high power for 2-3 minutes, until hot. Stir in the saffron threads and set aside.
2. On a cutting board, pat the shrimp dry with paper towels. Season with 1 teaspoon of salt and the pepper on both sides and set aside.
3. Heat the olive oil in a cast-iron pan over medium-high heat until it begins to shimmer. Add the onion and cook until softened, about 3 minutes. Add the garlic and paprika and cook, stirring, until aromatic, about 30 seconds. Add the rice and stir until lightly toasted, 1 minute.
4. Add the tomatoes and reserved chicken stock and stir to combine. Reduce the heat to low and cover the pan with a lid. Cook without stirring until the rice is al dente, 15 minutes.
5. Remove the lid and arrange the shrimp and mussels. Cover and increase the heat to medium-high. Cook until the shrimp are opaque and the mussels are open, 5 minutes.
6. Remove the lid and pour the lemon juice over. Sprinkle with the remaining teaspoon of salt and the parsley and serve. Enjoy!
