Flavor-Packed Fried Rice with Veggies & Chicken – A Crowd Favorite!

EASTER RICE

This Fried Rice with Veggies & Chicken is a perfect fit for lunch, dinner, or even a party side dish!

Ingredients:

2 cups cooked rice (preferably cold)

1 cup diced cooked chicken (grilled, boiled, or fried)

1/2 cup chopped carrots

1/2 cup sweet corn

1/2 cup green peas

1/4 cup chopped green pepper

1 small onion (diced)

2 tablespoons oil

1 seasoning cube

1/2 teaspoon curry powder

Salt to taste

Instructions:

1. Heat oil in a large frying pan or pot.
2. Add onions and stir-fry until slightly golden.
3. Toss in the veggies (carrots, corn, peas, green pepper) and cook for 3–4 minutes.
4. Add your diced chicken, curry powder, and seasoning cube. Stir well.
5. Pour in the cold rice and mix everything together until evenly combined.
6. Cook for another 5 minutes, stirring occasionally. Adjust salt if needed.
7. Serve hot and enjoy every bite!

Shakshuka is a delicious and hearty North African and Middle Eastern dish made of poached eggs in a rich, spiced tomato and bell pepper sauce. It's commonly served with bread for dipping.

Basic Shakshuka Recipe
Ingredients:

2 tbsp olive oil

1 onion, diced

1 red bell pepper, diced

3 garlic cloves, minced

1 tsp ground cumin

1 tsp smoked paprika

½ tsp ground coriander (optional)

1 can (400g) crushed tomatoes

Salt and pepper, to taste

4-6 eggs

Fresh parsley or cilantro, for garnish

Feta cheese (optional)

Bread, for serving
