After a workout, it’s so important to fuel your body properly—especially with the right mix of carbs, protein, and healthy fats. 🥗💪 But let’s be real, I don’t always have time for a big, elaborate meal. That’s why I love quick and easy recipes that still pack a lot of flavor!

Today, I whipped up two sheet pans with chicken breast, broccolini, sweet potato, onion, and garlic. Seasoned with salt, paprika, fresh rosemary, pepper, and olive oil. Simple, but so satisfying! 🌿✨ This keeps me full for hours, and the best part? There’s enough left over for the next two days!

For us women, especially those of us in menopause, strength training is key to maintaining muscle mass, which we naturally start to lose. So, keeping our protein intake up after workouts is critical for recovery and building strength.

✨ Baking Bread & Boosting Health ✨

Today I started my morning by baking some homemade lectin-free sourdough bread, topped with sesame seeds. 🍞✨ But my journey to better health goes beyond the kitchen. As some of you know, I’ve recently started running again after years of focusing on other forms of exercise. 🏃‍♀️

Protein has become a key part of my diet to support muscle growth, and one of my go-to meals is a hearty chickpea or bean salad with tuna. 🥗🐟 These salads are staples in my kitchen, and I’ve even shared a YouTube video featuring two of my favorites. Check it out if you’re looking for easy, healthy recipes! 🎥

But let’s talk carbs for a second. While protein is crucial, carbs often get a bad rap. The truth is, our brains need carbs to function properly, and they play an essential role in our overall health. That’s why I make sure to bake a fresh loaf of bread at least once a week. This time, I topped this delicious lectin-free sourdough by with sesame seeds.🍞💪

Balance is everything—protein for the muscles, carbs for the brain, and fats for optimal health. All the love for the food that nourishes our bodies.

Last year, I really committed to hitting the gym, and it’s been doing wonders for me. My body feels firmer and stronger than ever. However, I realized my cardio was being a bit neglected. Even though I walk my dog every day, I tend to focus more on him than on myself, so it wasn’t really doing much for my cardio.

Yesterday, I decided to get back on the treadmill. 🏃🏼‍♀️ I initially planned for just 20 minutes, but I got into such a flow that I ended up running for an hour! It was at a really slow pace, only three miles, but I enjoyed it so much. I was a bit worried I might not be able to walk today, since I’m not used to running anymore. 😅 But after a 20-minute Epsom salt bath, I woke up without any sore muscles!

I think all the strength training I’ve been doing over the past year helped prevent the worst. Surprisingly, I even woke up nearly an hour earlier than usual, which allowed me to enjoy a beautiful sunrise during my morning walk with the dog.

I’m excited to see where this journey takes me. On days when I’m not doing strength training, I plan to focus on cardio and see how my body, now over 50, reacts and adjusts to this new routine.

When I’m juggling work and life, I love having a protein-packed bean salad on hand. It’s filling, a great source of protein, and just so delicious! Plus, it’s super easy to prep in advance and keep in the fridge for when hunger strikes. 🥗
