Caprese Stuffed Avocados
Ingredients:
2 ripe avocados
1 cup cherry tomatoes, halved
1 cup fresh mozzarella balls, halved
2 tablespoons fresh basil leaves, chopped
2 tablespoons balsamic glaze
Salt and pepper, to taste
Optional: extra basil leaves for garnish
Instructions:

Cut the avocados in half and remove the pits. Scoop out a small amount of flesh from each avocado half to create a larger cavity for the stuffing.
In a bowl, combine the cherry tomatoes, fresh mozzarella balls, and chopped basil leaves. Season with salt and pepper to taste.
Spoon the tomato and mozzarella mixture into the avocado halves, filling them generously.
Drizzle each stuffed avocado with balsamic glaze.
Optional: Garnish with additional basil leaves for extra flavor and presentation.
Serve immediately and enjoy your delicious Caprese Stuffed Avocados as a healthy and flavorful appetizer or side dish!

Homemade BBQ Sauce
Ingredients:
• 1 1/2 cups tomato ketchup
• 1/2 cup apple cider vinegar
• 1/4 cup Worcestershire sauce
• 3/4 cup packed light brown sugar
• 2 tablespoons yellow mustard
• 1 tablespoon paprika, or to taste
• 2 teaspoons onion powder
• 1 teaspoon ground black pepper, or to taste
• 4 garlic cloves, minced
• 1/2 cup water
Instructions:
1. In a saucepan, I'll combine all the ingredients. I'll bring it to a boil, then reduce the heat and let it simmer uncovered for 30 minutes or until the sauce thickens.
2. I'll adjust the taste by adding more sugar or seasonings if desired, then I'll remove it from heat.
3. Allowing the sauce to cool completely to room temperature, I'll cover and store it in the refrigerator for up to 2 weeks.

Seven-Layer Taco Dip
Ingredients:
• 1 can (16 oz) refried beans
• 1 packet taco seasoning
• 1 cup sour cream
• 1 cup salsa
• 1 cup shredded cheddar cheese
• 1 cup diced tomatoes
• 1/2 cup sliced black olives
• 1/4 cup chopped green onions
• 1 cup shredded lettuce
• Tortilla chips for serving
Instructions:
1. As I begin, I'll prepare the seasoned refried beans by combining them with the taco seasoning in a bowl, making sure to mix them thoroughly.
2. Now, I'll move on to assembling the layers:
• Layer 1: I'll evenly spread the seasoned refried beans at the bottom of a serving dish.
• Layer 2: I'll spread the sour cream over the beans.
• Layer 3: I'll pour the salsa over the sour cream layer.
• Layer 4: Sprinkling the shredded cheddar cheese over the salsa comes next.
• Layer 5: I'll scatter the diced tomatoes evenly.
• Layer 6: Adding a layer of shredded lettuce is the next step.
• Layer 7: To finish, I'll garnish with sliced black olives and chopped green onions.
3. After assembling, I'll chill the dip for at least 1 hour in the refrigerator to let the flavors meld. Finally, I'll serve the chilled dip with tortilla chips.

Best Broccoli Salad Ever 😋😋🥗
Ingredients:
• 2 heads of fresh broccoli (not frozen)
• 1/2 cup chopped red onion
• 1/2 pound bacon
• 1 1/2 cups cheddar cheese, grated (For better texture, I prefer using a block of cheese and grating it myself instead of opting for pre-grated options.)
• 2 1/2 tablespoons vinegar
• 1 cup mayonnaise
• 1/3 cup sugar
Instructions:
1. I cut the bacon into bite-sized pieces and cook it until it reaches the desired crispness. After cooking, I drain the bacon on paper towels.
2. I chop the broccoli florets into bite-size pieces and mix them with the bacon, chopped onions, and grated cheddar cheese in a large bowl.
3. In a separate bowl, I blend vinegar, sugar, and mayonnaise. I then pour this mixture over the broccoli combination and toss everything to ensure thorough coating. Afterward, I cover the bowl and refrigerate it until I'm ready to serve.
Notes: To slightly soften the broccoli, I usually steam it in the microwave for about 2 minutes. For this, I place the broccoli in a microwave-safe bowl, add approximately 1/2 inch of water to the bottom, cover it with a paper towel, and microwave for 2 minutes. This recipe is equally delicious even without the cheese!

Stuffed Bell Peppers 😋😋🫑🫑
Ingredients:
• 4 large bell peppers
• 1 tbsp olive oil
• 1 small finely chopped onion
• 1 lb lean ground beef
• 2 tbsp keto taco seasoning
• 1 can (15 oz) diced tomatoes with juices
• 1 cup steamed cauliflower rice
• 2 cups shredded cheese (divided)
Instructions:
1. Preheat the oven to 190C/375F and grease a large baking dish.
2. I cut the tops off the bell peppers, removed seeds and membranes, and sliced each pepper in half. I placed them in the prepared dish.
3. In a non-stick pan over medium heat, I sautéed onions in olive oil for about a minute. I added ground beef and cooked until no longer pink. Then, I added taco seasoning, poured in diced tomatoes with juices, and let it simmer for 1 minute.
4. I removed the pan from heat. I stirred in steamed cauliflower rice and one cup of shredded cheese.
5. I evenly distributed the filling among the bell pepper halves and topped them with the remaining cheese.
6. I baked the stuffed peppers for 20-25 minutes until the cheese was melted, and the peppers were tender.
7. I removed them from the oven and served immediately.
