This recipe is too good not to share right away, in time for Thanksgiving!! If you are on a grain-free diet, you are going to love this Grain-Free Sourdough "Corn" Bread! There's no cornmeal at all, but it tastes just like cornbread! It would be perfect in a cornbread stuffing recipe for Thanksgiving.

Eventually, I plan to add this to the blog when I can get more pictures. But, for now, here's the recipe:

Ingredients

- 75g grain-free sourdough starter
- 85g plain yogurt
- 3 large eggs
- 30g honey
- 30g melted butter
- 168g almond flour
- 3/4 tsp baking soda
- 3g salt

Directions

1. Preheat your oven to 350 degrees F and grease a 9 inch cake pan. Then line the bottom of the pan with parchment paper.

2. To a large bowl, add the starter, yogurt, eggs, honey, and melted butter. Whisk to combine. Then add the almond flour, baking soda, and salt. Stir to combine with a rubber spatula.

3. Pour the batter into the prepared cake pan and smooth the top with an offset spatula.

4. Bake 25-30 minutes util golden brown.

For ANY sourdough starter you need these FIVE things:

1. Nutrients (high quality flour to provide food for your starter. For grain-free that is almond flour & cassava flour.)

2. Filtered Water (the less chemicals the better)

3. Time (it can take up to 10 days to become active and alive in the beginning)

4. Temperature (you need the right temperature for the good yeast and bacteria to grow. Ideally, between 75-80 degrees F. Once it’s established the temperature can vary and it will still thrive!)

5. Room to Grow (it needs enough room in the jar to at least double or even triple)

🌟 This recipe is really simple with minimal ingredients. It includes gf oats cooked in cashew milk with almond flour and tapioca as the flours. It is also made all in ONE DAY and you do not need a banneton!!

✨Paleo Sourdough Pizza Crust!✨

🍕 This recipe is now up on the blog! This paleo sourdough pizza crust is incredibly delicious with a nice tang from the grain-free sourdough starter. It is fermented overnight in the refrigerator for extra flavor and the texture is similar to a traditional thin crust pizza. My family has given this recipe two 👍 ⬆️ 👏😊.

I was almost out of tapioca flour, so I decided to try using more almond flour and less tapioca for my Grain-Free Sourdough Bread. It worked very nicely! I have updated the recipe to be 60% almond flour and 40% tapioca. 😊

🥞 Easy Overnight Sourdough Pancakes 🥞

✨These pancakes are absolutely delicious and so easy to make! Combine most of the ingredients the night before to have amazing sourdough pancakes the next day.

This recipe uses sourdough discard and plain yogurt instead of milk, making it extra gut healthy. 👏

Ingredients:

- 113g sourdough discard
- 227g plain yogurt
- 14g maple sugar (or whatever sugar you like!)
- 120g all purpose flour
- 1 large egg
- 28g melted unsalted butter
- 1/4 tsp salt
- 1/2 tsp baking soda

Directions:

1. Combine starter, yogurt, and sugar. Whisk well and then add the flour. Stir until fully incorporated.

2. Cover and let sit at cool room temperature for up to 12 hours.

3. Add the egg, butter, salt, and baking soda. Whisk to combine. A dough whisk is best if you have one!

4. Cook pancakes in an iron skillet over medium heat with plenty of butter. You can also use a griddle if you prefer.
