Do u know already Menemen ? Egg-celent Turkish warm tomato dish with eggs - one of our fav nourishing breakfast 🥚 🍅 I love to use some grated carrots for a sweet note . ( translate for 🇵🇱🇩🇪❤️)
Here comes the recipe ⬇️
Ingredients:
🍅1 sweet onion, chopped
🍅2 grated carrots
🍅2 Tbsp olive oil
🍅pinch of chili flakes
🍅2 cloves garlic
🍅1 can (500ml) diced tomatoes
🍅 salt , pepper , pinch of cumin seeds
Toppings:
Use crushed feta cheese or my lately fav cottage cheese, sesame some chili flakes & fresh greens .

Instructions:
In a non-stick pan, add the olive oil and heat. Add the onions , grated carrots, garlic & herbs to the pan. Cook while stirring until slightly browned.
Reduce heat to medium, add canned tomatoes if needed few Tablespoons water & simmer everything for 5 minutes.
Gently crack into eggs , close with lid & simmer for about 5 min .
Serve with some bread & your toppings .

Note :
traditional menemen is cooked without carrots & the eggs are scrambled like into the tomato sauce.

We all know classic cabbage rolls ( filled with meat & rice or lentils & rice & cooked with light tomato sauce ) - but what about the same meal but made a way easier & healthier as cabbage lasagna : with a lot of herbs , carrots?
I’m to lazy to roll them up for the whole family 😅
