Tiramisu is great but have you ever tried a tiramisu cake? Hear me out. I know tiramisu is beloved but this is a game changer and such a good idea for a summer cake for all your friends and family🍰☕️
🍫☕️RECIPE☕️🍫
For the vanilla sponge:
175g unsalted butter, softened
175g caster sugar
1 tbsp vanilla bean paste
3 large eggs
175g self raising flour
For the chocolate sponge:
3 large eggs
260g caster sugar
1 tbsp vanilla bean extract
150g self raising flour
75g cocoa powder
1 tsp baking powder
1/4 tsp salt
2 tbsp espresso powder mixed in 100ml hot water
100g unsalted butter, melted
For the mascarpone filling:
400g mascarpone cheese
175g icing sugar
190ml double cream
1 tbsp vanilla bean paste
For the soak:
200ml fresh espresso or 4 tbsp espresso powder in 200ml hot water
METHOD:
1. Line 2x 8 inch cake tins with parchment and preheat the oven to 160c fan. For the vanilla sponge, beat all the ingredients together until combined. Transfer to one of the tins and bake for 35-45 mins (this can vary between ovens) until a skewer comes out clean.
2. For the chocolate sponge, whip the eggs and sugar with the vanilla until pale. Sift half the dry ingredients into the bowl followed by half of liquid, mix and repeat. Finish by adding the melted butter in slowly whilst mixing on a low speed.
3. For the mascarpone filling, beat the ingredients until thick and creamy.
4. Once all the cakes are cooled, slice each into 3 thin layers. Layer them with the mascarpone filling, soaking each layer in the espresso before the next layer of filling, until all the layers are stacked. Refrigerate for 1 hour before dusting with cocoa powder and serving!

For the crispy chicken
2 diced chicken breasts
70g cornflour
1 large egg
1 tsp white pepper
1/2 tsp ground ginger
1/2 tsp salt
1/2 tsp Chinese five spice
450ml vegetable oil
For the sauce:
1 large onion, sliced
1 tsp garlic paste
1/2 red and green pepper, diced
1 tbsp rice or white wine vinegar
3 tbsp light soy sauce
1 tbsp dark soy sauce
1/2 tsp ground ginger
1/4 tsp salt
1/2 tsp white pepper
1/4 tsp black pepper
1/4 tsp MSG
4 oranges, juiced (or 130ml orange juice)
3 tbsp honey
2 tbsp cornflour mixed in 2 tbsp water

And if you’re wanting an Italian summer vibe like me this year, this recipe is for you 🇮🇹☕️ Layers of coffee soaked sponge fingers and a mascarpone cream filling are met with a chocolatey surprise which you won’t want to miss 🍫

💚🍫☕️RECIPE☕️🍫💚
Ingredients:
500g mascarpone, room temperature
600g double cream
175g icing sugar
2 tbsp vanilla bean paste
3 large eggs plus 1 egg yolk
400g sponge fingers
200ml fresh espresso
55g cocoa powder, with extra for dusting
Method:
1. In a large bowl, whip together the mascarpone, cream, icing sugar, vanilla bean paste and eggs. Set aside.
2. Next, brew the espresso. Whilst still warm, dip the sponge fingers in the coffee, making sure to dip both sides. Don’t let them get soggy- only 2 seconds on each side should do.
3. Line the base of a 12 x 8 inch baking dish with the soaked fingers and top with 1/3 of the mascarpone cream.
4. With the next 1/3 of the mascarpone cream, mix in the cocoa powder to create a chocolate mixture. Blob small amounts over the whole layer of the first mascarpone layer and swirl to create a marble effect.
5. Top the marbled layer with the remaining sponge fingers and finish with the final 1/3 of the mascarpone cream. Dust the cocoa powder over the top, covering the whole surface. Refrigerate for 8 hours before serving!

There are only three words to describe this focaccia sandwich bread. Really chuffing good✨ (and absolutely monstrous) I keep seeing bakeries doing sandwich drops and they sell out in minutes and it speaks to my heart SO- I’ve come up with a very good recipe (if I do say so myself) to get you started at home! 🍞🫒
RECIPE:
140g very strong bread flour
65g warm water
20ml olive oil
4g fast action yeast
10g caster sugar
4g fine salt
Extra olive oil for drizzling
Fillings up to you!
Method:
1. Combine all the ingredients and knead until pliable. Set aside to rise for an hour.
2. After an hour, fold the dough over itself and repeat 4 times. Reform a ball and leave to rise for another hour.
3. Once risen, transfer to an oiled tin (I used an 8” circle) and leave to prove for half an hour, or until light and doubled in size.
4. Drizzle over your oil (I infused mine with parsley, garlic and chilli flakes) and season with a little more salt (I used sea salt for this step) Bake at 220c for 20 minutes.
5. Slice, serve and slay💅🏻
