Ingredients:
(For a 9inch blondie slab)
210g white chocolate
200g unsalted butter
1 tsp vanilla extract
160g caster sugar
50g dark brown sugar (I used all caster in the video because I ran out of dark brown!)
3 large eggs
180g plain flour
35g cornflour
9 mince pies
Method:
1. Preheat the oven to 160c fan and line a 9inch square cake tin with baking paper. In a microwavable bowl, melt the butter and white chocolate until smooth and combined. Pour in the vanilla extract, sugar, eggs and whisk until combined.
2. Add the flours and transfer to the cake tin. Place 9 mince pies evenly into the tin and bake for 30 minutes. Once baked, leave to cool and refrigerate for at least 2 hours before cutting.
3. Slice, serve and enjoy!

🍪RECIPE🍪
60ml unsalted butter, melted
100g caster sugar
110g dark brown sugar
3 medium eggs
185g plain flour
70g cocoa powder
1 tsp baking powder
100g icing sugar
100g salted caramel
1 tsp sea salt (I use @maldonsalt )
METHOD:
1. Preheat the oven to 160c fan and line two baking sheets with baking paper. In a large bowl, whisk the butter, sugars, eggs, flour, baking powder and cocoa powder until a dough forms. Refrigerate for an hour in the bowl.
2. Once firm, evenly form into 8 balls and roll in icing sugar. Place 4 balls on each tray and using a spoon, make a well in the centre. Add your caramel into this hole and bake for 14-16 minutes. Once out of the oven, sprinkle with sea salt. Leave to cool, serve and enjoy!

This definitely isn’t a repost from Spring and contrary to what I say in this reel, I definitely do have responsibilities. Although I am still trying to move away from my Bake Off blunders. Which is why I wanted to share this carrot cake🥕 It is inspired by the wonderful people @flourpotbrighton and it is SO GOOD. Gosh I was really chuffed when I developed this. It’s moist and has layers upon layers of flavour. From the spices, to the carrots, then the nuts and then the cream cheese icing, it’s just a gift that keeps on giving🎉 And did I mention it works for cupcakes, too? For the carrot cake:
(Makes 3x 7 inch layers or 24 large cupcakes)
300g caster sugar
175g soft light brown sugar
6 eggs
2 tsp vanilla extract
200ml melted butter
250ml vegetable oil
100g ground walnuts
175g chopped walnuts
430g plain flour
2 tsp cinnamon
3/4 tsp salt
1.5 tsp baking powder
1.5 tsp bicarbonate of soda
375g finely grated carrots
For the cream cheese Icing:
200g unsalted butter
250g cream cheese
1kg icing sugar
2 tsp vanilla extract
METHOD:
1. Preheat the oven to 170c and line your tins or cupcake trays. Grate your carrots and squeeze out any moisture in a muslin cloth.
2. In a food processor, grind 100g of the walnuts.
3. In the bowl of a stand mixer, whip the sugars, vanilla, oil and butter until light. This will take ten minutes. Add the eggs gradually and continue beating.
4. Mix together the dry ingredients in a separate bowl combine the remaining 175g chopped walnuts into the mixture. Add the flour, coated walnuts and carrot into the whipped sugar mixture and beat until just combined.
5. Distribute across your tins or cases and bake for 35 mins for the cake and 18

Ingredients:
(For the cake)
345g unsalted softened butter
345g light brown soft sugar
570g golden syrup
Zest 2 large oranges
4 medium eggs
450ml whole milk
1½ tbsp orange extract
2 tbsp ground ginger
½ tsp cinnamon
675g self raising flour
½ tbsp baking powder
300g raspberries with 2 tbsp plain flour
(For the blackberry filling)
250g frozen blackberries
Juice 1 lemon
125g golden caster sugar
40g cornflour
(To decorate)
450ml Waitrose Free Range Cream
125ml Icing Sugar
1 tbsp vanilla extract
Orange slices
Mint leaves
METHOD:
1. Preheat the oven to 160c and line 3 8 inch cake tins with parchment paper.
2. In the bowl of a stand mixer, beat the butter, sugar, golden syrup and orange zest for 10 minutes, until light and fluffy. Once beaten add the eggs one at a time, beating between each addition, followed by the orange extract.
3. Next, sift the flour, ginger, cinnamon and baking powder into a separate bowl. Add half of the dry mixture into the egg mixture, followed by half of the milk and combine on a slow speed. Repeat until all the ingredients are combined.
4. Transfer to the tins and bake for 35 minutes, or until a skewer comes out clean.
5. Whilst the cakes are baking, make the blackberry filling.

For the crispy chicken
2 diced chicken breasts
70g cornflour
1 large egg
1 tsp white pepper
1/2 tsp ground ginger
1/2 tsp salt
1/2 tsp Chinese five spice
450ml vegetable oil
For the sauce:
1 large onion, sliced
1 tsp garlic paste
1/2 red and green pepper, diced
1 tbsp rice or white wine vinegar
3 tbsp light soy sauce
1 tbsp dark soy sauce
1/2 tsp ground ginger
1/4 tsp salt
1/2 tsp white pepper
1/4 tsp black pepper
1/4 tsp MSG
4 oranges, juiced (or 130ml orange juice)
3 tbsp honey
2 tbsp cornflour mixed in 2 tbsp water
Tiramisu is one of those desserts you keep returning to and will never stop ordering at your favourite Italian. And if you’re wanting an Italian summer vibe like me this year, this recipe is for you 🇮🇹☕️ Layers of coffee soaked sponge fingers and a mascarpone cream filling are met with a chocolatey surprise which you won’t want to miss 🍫

💚🍫☕️RECIPE☕️🍫💚
Ingredients:
500g mascarpone, room temperature
600g double cream
175g icing sugar
2 tbsp vanilla bean paste
3 large eggs plus 1 egg yolk
400g sponge fingers
200ml fresh espresso
55g cocoa powder, with extra for dusting
Method:
1. In a large bowl, whip together the mascarpone, cream, icing sugar, vanilla bean paste and eggs. Set aside.
2. Next, brew the espresso. Whilst still warm, dip the sponge fingers in the coffee, making sure to dip both sides. Don’t let them get soggy- only 2 seconds on each side should do.
3. Line the base of a 12 x 8 inch baking dish with the soaked fingers and top with 1/3 of the mascarpone cream.
4. With the next 1/3 of the mascarpone cream, mix in the cocoa powder to create a chocolate mixture. Blob small amounts over the whole layer of the first mascarpone layer and swirl to create a marble effect.
5. Top the marbled layer with the remaining sponge fingers and finish with the final 1/3 of the mascarpone cream. Dust the cocoa powder over the top, covering the whole surface. Refrigerate for 8 hours before serving!
