Pastrami Brisket. Recipe below. ๐ฝ๐ง๐๐ฃ๐: โข1 1/2 gallons of water โข4-5 lbs of ice โข3 c of Kosher salt โข1 1/2 c white sugar โข2 tbsp pink curing salt โข1 whole garlic cloves โข1/4 c pickling spice ๐๐ช๐: โข1 tbsp coarse black โข1 tbsp smoked paprika โข1 tbsp garlic powder โข1 tbsp cumin โข2 tbsp onion powder ๐๐ฃ๐จ๐ฉ๐ง๐ช๐๐ฉ๐๐ค๐ฃ๐จ: โขIn a large pot bring water to a boil โขAdd in your brine ingredients and cook until salts and sugarโs dissolve. Constantly stirring โขIn a large bucket add in your ice and pour in your brine โขTrim your beef ribs and place in brine bucket then into the fridge for 7 days โขTake your brisket out of brine, rinse thoroughly and pat dry. โขYellow mustard as a binder then coat w/ rub โขPlace your thermometer in and set it to 200 degrees โขFire up your smoker to 250 degrees then place your brisket in and smoke till you have a nice set bark about 6hrs and temp around 170 โขSpritz down butcher paper then wrap. Flank Steak Pinwheels for this Throwback Thursday ๐ ๐๐ฃ๐จ๐ฉ๐ง๐ช๐๐ฉ๐๐ค๐ฃ๐จ: ๐Butterfly your flank steak, I cut off the edges to make more symmetrical ๐Cover in butcher or parchment paper then pound it out to flatten it out evenly ๐Season w/ your favorite BBQ rub ๐Add slices of provolone cheese ๐Top w/ my Habanero Chimichurri (see other video for that recipe) ๐Roll it up like a fatty ๐At this point you can use twine to secure it or skewers ๐Coat in almond oil as a binder ๐Season the outside w/ salt and pepper ๐Slice them up individually, if using skewers cut off the excess for better handling ๐While those rest fire up your grill indirect ๐Sear the pinwheels till you get some nice char on both sides ๐Then move them over to the opposite side and let it finish cooking till internal temp hits about 130-135 ๐When done let it rest, remove skewers and twine ๐Slice them up and enjoy while the cheese is still melted #flanksteak #pinwheels #chimichurri #bbqtiktok #tftibbq

Insert your @meatermade wireless meat thermometer in and set to 200 degrees 4. While your pork shoulder is soaking in all that flavor pre-heat your smoker to 350 degrees 5. Smoke your pork shoulder till you form a nice bark. Spritzing every 30-45 min 6. Once you get the bark you like (about 2-3hrs) place in an oven safe container w/ more Worcestershire sauce and orange juice then cover w/ aluminum foil 7. When the internal temp reaches 200 remove from smoker and place in a cooler or @cambro insulated box for 1-2 hrs 8. They both work great. Score the meat side to let in more seasoning, olive oil as a binder then season w/ garlic powder and pepper 2. Line a baking sheet w/ Reynolds Wrapยฎ Heavy Duty Foil for easy cleaning then place a wire rack on top 3. Place your pork belly skin side up and puncture holes all over skin. This will help with getting crispy skin 4. Cover the entire skin with a layer of kosher salt 5. Place in the pre-heated smoker at 250 degrees and smoke for 3-4 hrs until a probe glides through the fat like butter 6. When done remove from smoker. Remove all the salt 7. Place pork belly onto a sheet of Reynolds Wrapยฎ Heavy Duty Foil then fold all sides to form a boat with only the skin exposed 8.
