Shrimp Har How! 🥟 🧧
Dumplings are eaten during the Lunar New Year because they represent prosperity and fortune - their shapes are similar to the gold ingots in ancient times!
While I usually make ‘regular’ pan fried dumplings, Har Gow are some of my favourite things to order during Dim Sum and I wanted to try making them this year! The dough is a bit tricky to work with because it’s not as elastic as flour based dough, but this wheat and tapioca starch recipe is still pretty easy to make from scratch! Har Gow Recipe:
Filling:
400 g shrimp
1/3 cup canned bamboo shoots
1 tablespoon shaoxing wine ≈ 1/8 cup
1/2 teaspoon corn starch
1/4 tsp salt
1/4 tsp sugar
1/4 tsp white pepper
1 tsp sesame oil
1 tbsp neutral oil
Translucent Dough:
1 cup wheat starch
2/3 cup tapioca starch
2/3 cup boiling water
Pinch of salt
1/2 tbsp oil

The viral mango mochi! 🥭
I’ve seen these all over and even though good mangos are scarce right now here in Canada, I had to try making it. In this video I’m using these super sweet and little Colombian mangos I found at my local Asian supermarket, but I’m really excited to try this again in the summer when we have access to the giant, juicy, sweet ones from overseas.
Recipe below!
1/3 cup of mochiko (aka glutinous rice flour)
1.5 tbsp sugar
1/3 cup of water
1 large mango (or two wittle ones)
2 tbsp mochiko to toast and dust
I’m a microwave safe bowl whisk together mochiko and sugar first, then add water and whisk it all together.
Cover with a lid and microwave for 1.5 minutes. Use a spoon or a spatula to mix the half cooked mochi, and then cover and microwave for another minute. Mix this one last time and set it aside to cool completely.
Peel your mango cut off the two halves - get them as thick as possible.
Toast 2 tbsp of mochiko and use some of it to dust your work surface. Dust a bit on your mochi so that you can grab it and put it on the dusted surface. Continue dusting the toasted mochiko all over your mochi until it’s completely covered.
Use a knife or dough cutter to portion out the michi. Flatten with a roller and put a mango half (round side down, flat side up) on the mochi. Use your fingers to pull the mochi up from the sides and cover the mango completely. Pinch together seams and you’re done!

BBQ Pork Buns!! 😋 Recipe Below
There’s almost nothing better than a freshly baked bun, stuffed with a tasty filling like barbecue pork! These were some of my favorite treats growing up in Canada.
For the char siu sauce used to cook down the pork filling, you can use the same marinade below with a bit of corn starch added to thicken it. The filling is often made sweeter (with more sugar) but you can adjust to your taste.
Oh, and of course if you prefer to stuff the buns with anything else, you do you boo!
Friendly reminder that if your yeast doesn’t foam, it’s not working!
Chinese Bakery Bun Bread:
Wet Ingredients
* ½ cup white sugar
* 1 cup warm milk (110 degrees F/45 degrees C)
* 1 tablespoon dry active yeast
* 2 eggs beaten (one tablespoon set aside)
* 1/3 cup of vegetable oil
Dry Ingredients
* 4 cups bread flour
* 2 tablespoons milks powder
* 2 teaspoons salt
Egg wash
* 1 tbsp water
* 1 tbsp beaten egg
* sesame seeds for garnish

Char Siu (BBQ) Pork:
-3-4 lbs pork shoulder
-1/4 cup maggi or soy sauce
-2 tbsp grated ginger
-2 tbsp garlic
-2 tsp black pepper
-1 tbsp chicken bouillon
-1.5 tbsp asian 5 spice powder
-1 tbsp sesame oil
-1 tbsp hoisin sauce
-2 tbsp honey
-2 tbsp brown sugar
-Red Food Coloring (optional)

I really just made this video so I could say that word multiple times.
But in all seriousness, it’s a great technique for grilling/BBQing! Not only does it make the chicken easier and faster to grill since it’s flat to the grill, it also allows you to better season the meat by providing access to more surface area.
For the seasonings I just used the Basic B(lend) and All Purpose spices from @odenskitchen916, adding Japanese sweet potato 🍠 and cauliflower for roasting

I got 3 other friends together and we each pitched about $20 to make this giant seafood boil - so worth it. A $4.99/lobster tail triggered this idea!
The garlic chilli crisp sauce is so delicious, and so simple to make. A seafood boil is really just that - boiling seafood! The most important part is making a sauce that will saturate and enhance all the flavours in the mix.
Components of the boil:
-Lobster Tails (1 per person)
-Crab Legs
-Mussel Meat
-Shrimp
-Crayfish
-Small Potatoes
-Corn
-Sausage (like chorizo or kielbasa)
Garlic Chilli Crisp Butter Sauce:
-3/4 cup of butter
-3 tbsp of a good all purpose seasoning (I used 1.5 tbsp of the Basic Blend and 1.5 tbsp of All Purpose from @odenskitchen916)
-1 tbsp chicken bouillon
-2 tbsp brown sugar
-Juice of 1 lemon
-Chopped Parsley for Garnish
-Lemon Zest
*please always taste and adjust the sauce to your own preference!

Sopa de Lima! 🍲 AKa Yucan Style Lime Soup
This soup is sour, savoury, and just damn delicious. Mexican and Vietnamese cuisine have a lot of similarities when it comes to using acid and fresh herbs in their recipes, but Yucatan citrus is its own thing!!
This soup is typically made from Yucatan Limas, which are totally different from limes and lemons. Eating this soup in the Riviera Maya in Mexico was a dream come true. I would also never dare to dream about getting limas here in Canada, so the citrus here will have to do!

Sopa De Lima Recipe:
For the broth
-1 whole chicken
-Enough water to submerge chicken
-1.5 to 2 tbsp salt, depending on preference
-1 tbsp oregano
-1 tbsp thyme
-4 cloves of charred garlic
-3 whole cloves
-1 lime for juice
-1 lemon for juice
*Use Yucatan Limas if you have access to them
Sofrito:
-1 green bell pepper
-2 tomatoes (on the vine)
-1 red onion
Garnishes
-Fried strips of tortilla
-Slices of lime
-Thinly sliced red onion
-Cilantro
*Remember, the brand of salt you use is different from mine! Not all salt is the same - adjust the seasoning to your taste!

Mochi Brownies!
I have a few friends who aren’t able to eat gluten, so I’ve always made rice flour based ingredients for them! Aside from this rich, chocolate brownie, my other favourite is Hawaiian Ono Butter Mochi (with coconut). Give rice flour a shot in your dessert recipes!!
Dry Ingredients:
3/8 cups of melted salted butter
2 large eggs
1 ½ cups whole milk
1 teaspoon vanilla extract
Wet Ingredients:
1 cup glutinous rice flour
1 cup granulated sugar
1/3 cup cocoa powder
1 ½ teaspoons baking soda
Toppings:
2 chocolate bars chopped up
1/2 cup chopped nuts, optional
