"BroCool" EP.9 Planet Matcha(Matcha Tiramisù)
In this episode, we arrive in a green planet like Matcha, where the river is made of Matcha (Japanese green tea powder)and then .....
Matcha tiramisù

It should be for 3-4 people, but we can't know if you are a real sweet tooth 🙂
For the cream:
-2 eggs
-50 gr of brown sugar
-250 gr of mascarpone (cheese)
-1 tbs of matcha or more (it depends on the color intensity that you want to obtain)
For the cookies bath:
-200ml of water
-1tbs of matcha
-12/15 savoiardi cookies or rice cookies.
Warm up the water, but don't boil it, and add the Matcha.
Mix the egg yolk and add the sugar and whip the egg whites in another bowl. Add to the egg yolk mixture the Mascarpone and the Matcha powder . Mix slowly and after add also the egg whites, until everything will be smooth and creamy.
Prepare a dish or single glasses , cups or whatever you'd like. Put on the bottom a little of cream and then the cookies, but first dive them into their Matcha bath.
Wet the cookies and place them on the cream. repeat until you prepare about 2/3 layers of cream and cookies.
Let it cool in the fridge for about 1 hour sprinkle it with some Matcha tea or cacao powder or cacao and serve.

Per 3-4 persone dipende da quanto siete golosi
Per la crema
2 uova
50 g zucchero di canna
250 g mascarpone
1 cucchiaio di matcha o più dipende dall’intensità di colore che volete dare
Per la bagna con i biscotti
200 ml di acqua
1 cucchiaio raso di matcha per l’acqua
12-15 biscotti savoiardi o biscotti di riso
Scaldare l’acqua senza farla bollire mettere il matcha e mescolare.
Montare i rossi di uova con lo zucchero e i bianchi a parte.
Unire ai rossi montati il mascarpone e il matcha in polvere, incorporare lentamente il bianco di uovo fino a rendere il tutto cremoso.
Preparare un contenitore unico oppure bicchieri, tazzine ,insomma a vostro piacere e mettere un pò

1 tsp salt
2 eggs
80ml water
[Fillings]
pumpkin 100g
100g onion
half red chili
30g garlic chives
60g cabbage
100g firm tofu
300g trout
pinch of salt
3 cloves of garlic
1 small piece of ginger
1 pinch of black pepper
1 tsp sugar
1 tbsp sesame oil
1 tbsp fried white sesame
[sauce]
3 spoon soy sauce
1 Mirin spoon
1 spoon of Sake
1 teaspoon of Sugar
1 piece of Ginger
1 piece Alga Kombu

ingredients for pasta
400 g flour
210 g egg yolks
10 g extra vergine olive oil
a pinch of salt
put the flour on a wooden or marble top, put in the center of the flour, the egg yolks, oil and salt.
first mix the eggs, then gradually take the flour.
knead until the dough is smooth.
put to rest for 30 minutes in a covered container.

Boil the potatoes with their skin
Put in a large pan the butter and the onion, let it cook slowly.
Add the salmon in small pieces, at high temperature (but without burning it), add the Vodka and burn it.
Add the milk cream and turn off the stove.
Smash the cooked potatoes and add to the all cooked ingredients, the egg and the lemon juice.
Add some salt, as needed and put inside Sac-à-Poche

ingredienti per la pasta

210 g rosso d’ouvo
10 g olio extra vergine di oliva
Un pizzico di sale
Mettere la farina su di un piano(legno o marmo)
Fare uno spazio al centro e mettere le uova, con olio e sale.
Con una forchetta o meglio le mani, sbattere le uova e poco a poco prendere la farina dai lati
Impastare il tutto fino a che l’impasto sia liscio
Lasciare riposare in un contenitore chiuso per 30

Ravioli stuffed in 2069 Russian Style
200 g Potatoes

50 g Vodka

Ripieno Ravioli in stile Russia 2069
200 g patate
150 g salmone
50 g vodka
25 g cipolla rossa
10 g burro
25 g panna fresca
Sale pepe
Scorza limone 3-4 pezzi
1 uovo
Bollire le patate con la buccia
Mettere in una padella larga il burro e la cipolla ,fare appassire lentamente.
Aggiungere il Salmone a piccoli pezzi fuoco alto(senza farlo bruciare) poi aggiungere la Vodka e far prendere fuoco
Versare la panna e spegnere il fuoco
Schiacciare le patate cotte e unire il resto degli ingredienti cotti, l’uovo e il succo di limone
Aggiustare di sale
Mettere dentro un Sac-à-Poche

Ingredients for a Focaccia in Love
Portion for a big heart
Mix
FLOUR 300 g + WATER 300 g (cook 1 BEETROOT in the Water for 8 minutes to give it a color)
Extra Vergine Olive Oil 38 g
HONEY 6 g
SALT 14 g
Mix them and add
YEAST 20 g + WATER 60 g
20 minutes to rest
add other FLOUR 300g
wait 2 hours before putting into the oven
bake for 20-30 minutes at 200°
Per un Grande cuore
Mescolare
300g di FARINA + 300g ACQUA (Cuocere una RAPA ROSSA per 8 minuti in acqua per prendere il colore)
38 g di Olio Extra Vergine di Oliva
6 g MIELE
14 g SALE
Mescolare tutto
Poi aggiungere 20 g LIEVITO di BIRRA sciolto in 60 g di acqua
Far riposare 20 minuti
Aggiungere altre 300 g di FARINA
Aspettare 2 ore prima di mettere in forno a 200° per 20-30 minuti
