So excited to kick off my new series with this delicious but highly experimental ramen waffle, I have seen just a handful of these and most contain egg in the mix so I decided to give it a try just with the ramen.
I think it was complete success, crispy on the outside but soft in the middle. I topped it with a fried egg, siracha and spring onions, it made a banging lunch! 🤤

CINNAMON BUTTER COOKIES 🍪
Here is a simple but delicious idea, not quite cookies but something different to enjoy work your hot drink! ☕️😌

Recipe and method:
Cut a wrap @prozis into strips of around 1cm wide, roll them tightly and add to a muffin tray. Mix some coconut sugar, cinnamon and butter and melt. Add the cinnamon mix to the wrap rolls and air fry at 170c for around 10-15 minutes. Enjoy!

Here is a delicious breakfast idea to warm up your day, these baked oats are chocolatey and with a hint of caramel, a great start of the day 😌

🍫1cup Gluten-Free Oats @justnatural_uk
🍫1/2cup Plant-Based M*lk
🍫1 tbsp salted caramel zero syrup @proteinworks ALEXARCIAB for ££ off
🍫1tbsp Cocoa Powder
🍫1tbsp Chocolate Wondershake @proteinworks
🍫1tsp Baking Powder
🍫A Pinch of Salt
🍫Chocolate to top, I used @tonyschocolonely_uk_ire caramel sea salt little bits from @degustabox_uk
🍫 Salted caramel to drizzle (mix maple syrup and peanut butter)
Optional: chocolate chips
Method:
1. Preheat the oven to 180 degrees.
2. Blend all ingredients on high until you’re left with a runny batter.
3. Pour into a small oven-safe dish (stir in chocolate here) and cook in the oven for 15 minutes.
4. Remove from the oven and top with salted caramel, serve hot.

I haven’t eaten a whole cake this quick! And hard not to when it is so delicious, packed with protein and on the healthier side ☺️ using simple and nourishing ingredients and made on the stove, can’t get easier 🙌
Recipe:
🍎 1/4 cup cottage cheese
🍎 1 egg
🍎 1/2 cup oats
🍎 1/4 tsp vanilla paste
🍎 1 tbsp sweetener
🍎 1 apple chopped
🍎 Coconut oil
🍎 Sugar free syrup
🍎 Cinnamon
🍎 1 apple chopped
Method:
1. to a blender add cottage cheese, egg, oats, vanilla paste and sweetener, blend until smooth
2. Over a medium heat frying pan add the coconut oil and cinnamon, once it is bubbling add the apples and cook for around 5 minutes
3. Add the batter and cover, once the apples are golden brown flip the cake
4. Serve, top with some almond butter and enjoy!

Over a tortilla spread some cranberry sauce, top with some cheese slices and leftover turkey, roll the tortilla tightly and cut into around 2cm slices. Arrange them over a baking tin and top with some grated cheese. Bake at 180c for around 10mins. Enjoy!

You all know how much I love mango so I decided to make a dessert which is not only delicious and high protein but also super quick to make! 🙌🤤

Recipe:
🥭 1 chopped mango @oddboxldn
🥭 2 tbsp light cream cheese
🥭 2 tbsp skyr yoghurt @arladairyuk
🥭 Sweetener to taste
🥭 Sugar free biscuits @gullongalletas
Method:
1. Blend the mango, cream cheese, sweetener and yoghurt
2. Soak the biscuits into a little milk and then layer them in a ramekin, top with about 1/3 of the mango mix, repeat this step until you run out of mix
3. Leave in the fridge for around 15-20mins and enjoy!

Recipe:
🍳 1 protein tortilla @prozis support link in bio
🍳2 eggs
🍳1 chopped tomato
🍳Red pepper sauce or passata
🍳Grated cheese
Method:
1. Place the tortilla over a round baking tray, add the sauce to the base and top with the tomato, eggs and cheese and season to taste
2. Bake at 190c for 12-15 mins
3. Top with spring onions and enjoy!

My signature stuffed pancakes but make them Christmas! One of my favourite festive flavours has to be chocolate orange and combining it with pancakes was a totally successful breakfast 🤤

Recipe:
🍊 1 cup almond milk @alpro
🍊 1 tsp apple cider vinegar
🍊 1 cup flour self raising flour
🍊 1 scoop vanilla vegan extreme @proteinworks ALEXARCIAB for ££ off
🍊1 tbsp coconut oil @organickitchen_uk nic
🍊 1 orange
🍊 Dark chocolate melted, I used gingerbread from @hipchocolate from @degustabox_uk
Method:
1. Mix the oat milk with apple cider vinegar and set aside
2. In a large bowl sieve the flour, protein powder and baking powder. Add the milk mix and coconut oil to it and mix well
3. Cut the oranges in ring and dip them in the chocolate, leave to set in the fridge
4. Dip the chocolate covered orange rings in the pancake batter and cook over a medium heat frying pan
5. Once golden brown turn and cook the other side. Serve and enjoy!

2. Whisk the eggs, milk and vanilla essence
3. Dip the naan into the egg mixture and cook over a medium heat frying pan flipping once golden brown

MEATBALL SUB TRAY 🍝
This is a very simple but delicious meal idea, I am not sure about you but sometimes I don’t feel like cooking or spending long in the kitchen and this tray was life saving, made in no time and high in protein.

Recipe and method:
Cut your baguette @slooowbread in half lengthways, open it and place on an oven tray. Heat up a frying pan, add some olive oil, onions and meatball, one the meatballs start browning add your save (I used @plantastic_uk ) stir and cover to for 15-20mins).
Spread the meatballs and sauce over the e bread, top with some cheese and bake at 180x for around 12 minute. Serve with some @doubledutchdrinks lemonade and enjoy!

What’s your favourite Indian dish?
I recently visited @paroindian restaurant in Covent Garden serving the most delicious Indian food. I was really excited to try their curries which are made from their secret 48 spice mix sourced from the bazaars of Calcutta. We were served some crispy papadums accompanied with mango chutney, a sweet almond paste and onions. Others choices were:

These are the only cookies you’re gonna want to have from now on! My take on a healthier version but keeping them delicious, crispy on the outside and soft and gooey in the middle 🤤

🍪 50g melted light butter @lurpakuk
🍪 70g coconut sugar @justnatural_uk
🍪 1 tsp gingerbread spice mix
🍪 85g plain flour
🍪 1/3 tsp baking powder

🍪 Chocolate chunks @_wellandtruly
Method:
1. Mix all the wet ingredients first and then incorporate the dry ones
2. Add the chocolate chunks and leave the mix in the fridge for around 30mins
3. On a lined baking tray form 6 balls
4. Bake at 180c for 10 mins, let cool slightly and devour!

I’m not the best at making seasonal recipes but here is my first try! A very gooey chocolatey brownie filled with salted caramel chocolate truffles, very easy to make and delicious!
Recipe:
🍫 4tbsp oat flour
🍫1 tbsp double chocolate Wondershake @proteinworks ALEXARCIAB for ££ off
🍫1 tbsp cocoa powder
🍫1 tbsp sweetener of choice @nkdliving
🍫1 tbsp yoghurt
🍫Around 80-100ml milk @alpro
Filling

Method:
1. mix all the ingredients, add to an oven proof ramekin, add the chocolate in the centre and cover with more mix
2. Air fry at 170c for 13 minutes, serve and enjoy!

CINNAMON RAISIN BRIOCHE BAGELS 🥯
There is something magical about freshly baked bagels that just makes me happy, I still can’t believe how good these were, if you love cinnamon raisins these are for you 🤤
✅ Easy to make ✅ Healthier
Recipe:
🥯 7g instant yeast @allinsonsflour
🥯 310ml lukewarm milk
🥯 90g melted light butter @lurpakuk
🥯 50g sweetener
🥯 480g bread flour @homepridebaking
Filling
🥯 1 cup raisins @justnatural_uk
🥯 1.5 tbsp cinnamon
🥯 1 tsp vanilla essence
🥯 Egg wash
Method:
1. add yeast and milk to a bowl and mix, add rest of dough ingredients, mix well and rest for 15 mins
2. In the meantime soak the raisins in warm water and vanilla. Drain and dry, add cinnamon and mix
3. Once the dough has rested add the raisins making sure well distributed, cover and rest for 50 mins
4. Punch dough and divide in 8, fold each part inwards at least 20 times and shape into a ball, make a hole in the middle, put on a tray and rest for further 45 mins
5. Brush with egg and bake at 180c for 20-25 minutes. Enjoy!
