Eating deliciously doesn't have to be at odds with eating healthily. Today, I'm sharing my recipe for some healthy yet equally delicious cookies that are suitable for vegans. They'll ask you for the recipe!
Ingredients:
1 cup boiled chickpeas
1/2 cup pitted dates
1/2 cup oat/almond flour
1/4 cup cocoa powder
1 teaspoon vanilla extract
A pinch of salt
Zest of one lemon
A handful of nuts
1/2 cup chopped chocolate
1/4 cup warm oat milk
Melted chocolate for decoration
* I used dandelion flowers for decoration and an additional nutrient boost
Mix all the ingredients as shown in the step-by-step video. Shape the cookies and cook them for 10 minutes in a pan, covered, on low heat for each side, or in a preheated oven at 200°C (392°F) for approximately 8-10 minutes. Dip them in chocolate when they're at room temperature.
