It's a vegan Ube and Purple Sweet Potato combo with a Biscoff cookie crust. We'll see how it tastes tomorrow but for now the color is so pretty!
I made this pie up from various recipes and experimenting. There's already things I wanna do different with the next pie.
I did the Ube/Purple sweet potato combo because ube texture is kinda grainy on its own. The purple sweet potato adds some smoother structure.
The color is gorgeous!
Along with garlic, chopped onion, and some avocado oil, I've started adding a Bay Leaf when I cook red beans and the flavor it adds is hearty and amazing!
I love it. Highly recommend.
Meal: Lentils with sweet potato, bok choy, rice/quinoa blend
Dinner today: Green lentils cooked with sweet potato, chopped tomatoes, poblano pepper, ginger, onion, garlic, and tomato sauce + vegan chicken broth.
Small bok choy Mui sautéed with onions, ginger, tamari. Jade rice/Quinoa blend cooked with turmeric. So tasty!
The green lentils cooked with sweet potato in tomato sauce was something I just made up on the fly and I gotta say it was damn well gooood! I ate almost a half of this pan already. 😄
I've fallen in love with poblano pepper and put it in recipes whenever I can. Adds nice flavor.
Vegan Pumpkin Spice Bicho Bicho Filipino donut
Ohhh ma gooooodness! You would've wanted to be in my kitchen today. 😂
My Sunday holiday cooking experiment was making vegan Pumpkin Spice Bicho Bicho which is a Filipino fluffy fried donut covered with sugar.
In this case, I added Pumpkin Spice seasonings to the sugar and WoooW!!! Made some regular sugar ones too for the folks.
Mom and dad said it tasted just like the regular version so I took that as a huge compliment!
This was my first time making a vegan version of Bicho Bicho and there are some tweaks I want to work on before posting a recipe but for a first time, I'm gonna take the W for this! 😄
The part I wasn't sure about which is why this was an experiment is what to use to replace the egg with for leavening. I used a baking soda/oil/water combo and it worked perfectly! Fluffy donut happened.
I also need to work on getting the oil temp right. I had it a bit too hot and the inside was just a bit undercooked. But I put it back in the oil at a little lower temp to fry a little longer and it was fine but the outside got darker than golden brown. Easy fix.
I kinda have a little stomach now because I ate the first one too fast and ate too many because it was SOOOO GOOOD!!! 😆
Mom made a vegan Ginisang Gulay and added purple hull beans. There’s also green beans, okra, bittermelon, eggplant and lima beans.
The purple hull beans are not a typical Gulay ingredient but I like them a lot! More protein FTW! This was so good for dinner with rice of course. 😋
Last night was enjoying watching a Hallmark Christmas movie. At commercial break, I see this for the new Plant-based MorningStar Farms Incogmeato Chik’n Nuggets and seriously was so excited to see vegan food advertised on Hallmark channel!
Those holiday movies get HIGH ratings, so this is big exposure. More example of plant-based foods becoming more mainstream. Exciting!

When making a #vegan Ampalaya Guisado (Bittermelon dish), on the side, for the egg part, I make a crumbled tofu scramble with just firm tofu seasoned with a little black pepper, garlic powder, turmeric for egg yellow color and some black salt aka Kala namak for that scrambled egg taste, and then add it in with the bittermelon.

I’ve made this dish for family events and surprisingly (happy) no one even noticed it wasn’t real eggs. 😂 Thats a great sign!
