As tradition, on new year’s day I make a healthy meal to start the year off with healthiness.

My first meal was Vegan Mushroom Stroganoff with crispy onion bits, Black-eyed peas with kale, and green salad with arugula, kale, cabbage, beets, carrots, and pistachios. So deliciously GOOD! 😃

Mango
Dragon fruit
Sumo orange
Asian pear

Because of covid and car issues all of my Christmas plans didn't happen. BUT it still ended up a great day! A reminder that things can happen equally good or better than we imagined or planned.

Instead of the planned Christmas feast, I repurposed leftovers and it was delicious.

Vegan meal. Bowl of teriyaki beef with broccoli, caramelized onions and mushrooms using Next Meats skirt steak, Filipino Laing using spinach (dish is like a spicy creamed spinach in coconut milk), and brown rice with lentils.

Meal Idea: Chili Black Beans and Rice with Tempeh Bacon

An easy vegan meal to make using leftover chili. Heat up beans, rice and bacon in a pan. Put in bowl, mix in arugula and top with salsa, avocado and sour cream. Enjoy! 😃

The coucous is instant from a box. The tofu is premade by Hodo so you can just heat and eat. Got the rapini aka broccoli rabe at a farmers market.

Some post-mortem on the vegan Ube + Purple Sweet Potato pie with Biscoff crust.

▪️ Purple SP is more starchy than regular SP which helps give this pie with Ube more structure
▪️ Nutmeg is not a great fit. Cinnamon would work
▪️ Do not reheat pie. Biscoff crust becomes mush
▪️ I think cornstarch does a better thickening job for vegan pie filling than Arrowroot which is what I normally use
▪️ Used coconut cream which was tasty. Next time I want to try evaporated coconut milk

Overall this pie is delicious. 😃 Working on a recipe. Stay tuned!

HAPPY THANKSGIVING! Hope all of you had a wonderful time with family and friends enjoying a feast and quality time together. Blessings and gratitude! 😊

I cooked all the sides for our Thanksgiving meal plus a dessert. My 7the vegan, plant-based Thanksgiving. 🙌🏼

▪ Main dish: Pot pie with oyster mushroom, red kuri squash, carrots, peas, corn.
▪ Candied yam and sweet potatoes with marshmallows
▪ Cornbread stuffing with apples, walnuts, cranberries
▪ Mashed potatoes + mushroom gravy
▪ Scalloped creamer potatoes with crispy fried onions
▪ Kale and shaved Brussels sprouts salad with pomegranate
▪ Sauteed green beans with shallots, pecans, crispy fried onions
▪ Ube and Purple Sweet Potato with Biscoff cookie crust pie

I made the pie crust for the pot pie from scratch, my first time. Also, the pie is something I made up so I don't have a recipe…yet. When I do, I will share.

Everything was so masarap!

This was fun! Here’s the pie I made for Thanksgiving dessert before I add the whipped cream tomorrow.

It's a vegan Ube and Purple Sweet Potato combo with a Biscoff cookie crust. We'll see how it tastes tomorrow but for now the color is so pretty!

I made this pie up from various recipes and experimenting. There's already things I wanna do different with the next pie.

I did the Ube/Purple sweet potato combo because ube texture is kinda grainy on its own. The purple sweet potato adds some smoother structure.

The color is gorgeous!

I used to host dinner parties at my place. I really miss doing that. So much fun!

When I can again, I want to do a vegan dim sum dinner party. I've got a whole bunch of ideas for dishes. For now, grateful that I can just buy frozen versions and enjoy them at home.

Happy World Vegan Day! 😍

I went vegan in 2018. I'm the only vegan in my huge Filipino family. BUT, in that time I've helped inspire many of my friends and relatives to enjoy and cook more plant-based.

My mom has gotten REALLY good at cooking vegan Filipino dishes: Pinakbet and Munggo beans. Dad's famous Biko is already vegan.

Removing animals from our cuisine doesn't mean removing our culture. Vegan versions of Picadillo, Pancit, Pinakbet, Lumpia, Champorado, and even Dinuguan are delicious!
