My loaf for the challenge by and

I used my bread journey ufo lame, and I used colors from , black cocoa, and liquid whitener for the white spots!

I scored and painted two monarchs and some echinacea. There are loads of things you can plant to attract butterflies, we are trying to plant lots of butterfly attractants in our garden, have you ever seen a monarch butterfly?

“Some people care too much. I think it’s called love.” -Winnie the Pooh (A.A. Milne)

Lately I’ve been reading the classic Winnie the Pooh stories to my kids before bed, my daughter asked if I would make her some Winnie the Pooh bread. Seeing her face light up when she saw her favorite characters meant so much to me!

The struggle was real with this loaf! 😬🫠
From the shape and crumb I think I over proofed this one, which was a bit surprising because I shaped it earlier than usual. I added in 10g of red cabbage which is beautiful and made the dough SO silky and the color is gorgeous, and probably the glossiest crumb I’ve ever had which was an interesting quality I haven’t seen from many of the colored powders before. So I was disappointed that I overproofed but, I’m excited to give red cabbage a go again because it’s absolutely beautiful.
The score on this loaf was also kind of a mess I don’t think I really considered before how much irises would rely on depth and value more than the outlining shape. So it ended up looking like a bunch of very confusing squiggles. I honestly didn’t even want to paint this loaf but encouraged me to give it a shot, and I’m glad I listened. While it might not be my best bake, it’s certainly one of my favorite loaf paintings!

Here are the stills from my painted fancy gold fish loaf! This one was really fun to score it was so enjoyable finding all the places I could add texture. I think scoring the water was my favorite part. I did really enjoy painting this one, and I had a fun time picking out all the colors from and !

Last night I had some friends on my Live, pick my score!

Black cocoa and taro loaf!
I used about 20g of taro powder and dusted the top of this loaf with black cocoa. I have to say I LOVED the creamy, custardy almost nutty flavor the taro brought to this loaf and I will be using this often!

Painted florals 💐 scoring tips below⬇️

I’ve had a few questions about my loaves so I’m going to give my scoring tips below!

➡️Use a super fine or ultra fine rice flour to get your score to pop!

🧊Freeze your loaf, if your score is complicated or if you take your time when scoring freeze it before hand for up to an hour.

🫠If your loaf has a slack side do your expansion score on that side, if not pick a side. And sketch out where your expansion score will go then, you can make your design to avoid it or go through it!

✍️If you have an idea sketch it out, it helps to make adjustments before you put your lame on your loaf, you can sketch with pen and paper first, or quickly with a toothpick on your loaf!

🪽Use a light hand when scoring. Sometimes my blade is just barely touching the loaf to make my mark, sometimes I will go a bit deeper to emphasize areas

➡️ start scoring where you want more drama. This means, where you want more open scores start there, save the fine details for the last part, right before you bake the loaf!

I almost ruined this loaf! 😱⬇️

How did I almost ruin it? I had this idea in my mind of koi fish in a pool of water with lilly pads. I started painting the koi, and thinking of more and more things to add. But I decided to take some photos before I kept working, and it made me realize that this loaf didn’t need any more. If I had continued I would have felt it was overworked.

So what is overworking a piece?
This generally refers to when an artist ( in this case a bread artist) keeps refining and adding details beyond the point of completion. This can effect the impact that the piece has and compromise the over all quality of a piece ( or in this case loaf 🤭)

I once heard on a podcast
“a good artist knows how to create, a great artist knows when to stop” 🎨

👀➡️How can you help your designs so they don’t become overworked ?
🛑✋STOP. Put the tooth pick, lame or brush down. Take a step back and look at your loaf. If you see specific spots where you say “that needs something drastic”, keep going, if it’s just a desire for more but your not sure where, this is probably a good time to stop!
🤔🎨Be intentional about what you add, if you start adding elements randomly sometimes things can spiral and look chaotic. If that’s intentional awesome! But sometimes when I get a little wrapped up in adding things unintentionally the over all design looks a little haphazard and I have to find ways to tie it together this is the point where things have become overworked.
✨🖼️ less is more. If your idea has been conveyed, and nothing significant needs to be added, this is where the idea that doing less can lead to significant impact!

At the end of the day, have fun with your scores, paints or other techniques you’re using on your bread!

If you don’t like it paint it!
This is the floral loaf I painted on my live the other evening! I ended up adding a lot more detail.
While I wasn’t pleased with my rushed score, the paint really pulled this loaf together! So my new motto is if I don’t like my score, I will paint it! 😂
Painting loaves has been such a fun new technique for me, but there are plenty of fantastic account who have painting beautiful loaves for a while now! And I am loving seeing people getting colorful and creative!

Milk bread 🍞
The other day I decided to try a a milk bread recipe from
Milk bread is super popular in our house so I made a double batch which was promptly devoured.
This recipe toasts so well, and my kids who normally will not eat grilled cheese, DEVOURED them! I think it would also make an incredible French toast bread!

I can’t believe I forgot to post this loaf!
This was the loaf I scored and painted live, I used all of my colors, some as well as some 365 by colors!

I started by mapping out the flowers with a toothpick and referenced the library (it’s on their website and it’s a great resource for gardening as well as an excellent artistic reference!)
Then I used my bread journey ufo lame.
After it baked I got to painting with the natural food colorings I mentioned above after I finished painting the flowers it looked a bit blank, and I asked the chat what I should add and came up with the idea to do the whole background green, so I mixed up a few shades and coated the whole loaf, and then dropped in some purples and yellows, and blue to add some more texture! I’m so happy with how this loaf turned out!
I’ve been putting my dahlias and zinnias from in and felt so inspired and excited I just had to score some! On this loaf you can see some of the dahlias Erin has bread, one of my favorites being the red and yellow cancan girls variety, as well as some of my favorites from the shooting stars, and petite floret varieties!
On the floret website there is a fantastic library with stunning pictures and information of all the incredible flowers Erin has, and it’s wonderful to use as an artistic reference!

To score I used my lames with Astra blades ( one of which I learned to cut into a forked blade from )

Its tiki time! 🌺🥥🌴🍹

This is the orange loaf that yall got a sneak peak of on the live the other night ( if you haven’t seen it you can watch it on their page!)

I used orange, as well as the red in the bread, for the painting I baked the loaf first and then painted with 365 brand natural food coloring as well as white food coloring.
I got the idea to do a retro tiki loaf because I have been listening to music from the 50s and 60s lately and heard quite a few songs talking about Hawaii and I had some memories on my phone from our trip to Disney and visiting the enchanted tiki room.
In my research for this loaf i learned a lot about Polynesian cultures and the Māori legend of Tiki (the first man) it’s been truly fascinating learning about the lore and legends from these cultures!

I finally got to score this dogwood loaf! Read more about my technique ⬇️ 🍞 👩‍🍳

The gorgeous lames are from 🐒💜 these lames are works of art and for me the most important part is they hold the blades firmly in place while scoring, I’ve had blade accidents so this is super important to me!

To score I looked at some images of branches and cut some from my yard and arranged them in a way that I thought fit nicely with where my expansion was planned to be, and sketched them using a tooth pick on my loaf!

For the subtle coloring I used a technique I saw my friend do where she used dry coloring powder and a brush to dust the powders on, it worked so well to create the subtle colors on the dogwood petals. I used matcha for all the green, purple sweet potato for the subtle pink, and black cocoa mixed with water to create a water color like paint, I had to paint a few layers of this to get the depth I was looking for. I did the colors before baking and then I added a bit more after baking to add some vibrancy!

I’ve had a couple people ask how I get such a smooth canvas for my loaf, I use oval proofing baskets to get a wonderfully smooth canvas for scoring

I’ve also had a few people wonder what flour I use, lately I’ve been using bakers classic 100% organic flour, and it’s a dream to work with. 😍👑🌾

Tips for swirly scores below! ⬇️
A gifted loaf for my neighbors sister. Featuring my lames from .

Okay so how do you do a swirly score?
1) you’re doing to start by sketching large swirls, and then sketch some medium ones around it. If you want a very clean expansion score edge, mark where you want the expansion with a tooth pick and give it some room. I don’t recommend doing an expansion score until after you have finished, the tension is needed when you do so many little slashes
2. Don’t make the swirls too tight, remember the slashes take some room and will cause the swirl to be visually tighter.
3. Start with one side of the wheat stalk, I like to start on the left, or the outer side I score the entirety of one side then I go back and start the next side. I find doing this allows me to create more even stalks.
4. When you’re done with your large and medium stalks it’s time to fill in some of the negative space, you can add in more swirls if you have the room, or some sweeping wheat stalks ( think like a swirl that’s unraveled so curving in on its self, or squiggly shapes)

I like to bake for 3-5 min and then do my expansion score with these loaves.

Featuring my beautiful lames🐒💜
Last nights bake, I was feeling like I had no ideas.
When I feel like this I have a few things I like to do.
➡️First thing is, don’t stress, it’s okay if sometime you don’t have ideas it can be stressful, but take a deep breath, not every score will be a masterpiece, but that’s okay even most of the great masters of the art world have only a collection of the thousands they’ve created which are considered masterpieces!
➡️Second… start sketching score ideas, if that’s too much look though your sketches! Don’t know where to start, hop on instagram or Pinterest, I like to look at line art, printmaking, illustration or folk art to jog my creativity. ( if you end up loving and recreating someone’s work give them some love by crediting their original piece!)
➡️Third Look at the tools you have, string, jars, paper, play with those.
➡️Fourth Try something new, add some color, pull out a paint brush, get experimenting!
➡️Fifth look up sketching prompts on Pinterest, ask a friend, family or your kids!

Want to know why I think you should bake it any way?
This is a loaf I left in the fridge too long, almost 36 hour cold ferment. But I’m pleased with how it baked, it’s crisp and flavorful.

So why do I think you should bake it anyway? Because sometimes we have tried and true methods that work, but when something goes wrong we can learn two things:
-why that method works for us, and how it effects the bread.
- if the step that has been skipped has flexibility.
I’m a big believer in “you have to learn the rules before you break them” my favorite art teacher always told me that. And with sourdough there are lots of rules that are there and important to follow, especially when you’re just starting, but I do find sometimes I learn more from my “failures” or as Bob Ross would say happy accidents!

You won’t believe how easy it is to get a marble like this! ✨🦋
🤫 also one of my best artistic scoring tips for busy people

To marble⬇️✨🦋 I sprinkle a tsp of butterfly pea flower powder, before each of the last 2 coil folds, and rub some powder on the dough during shaping.
Thats it!

This little seahorse score was quite fun, though I did have to pause midway through and get my son down for a nap.

Scoring tip 🤫⬇️🎨
When I have to break from scoring especially if it’s a longer more complex ones I move my bread sling to a plate, cover loosely ( I try to make a bit of a tent so none of the scores get tugged on) and then I refrigerate, I’ve done this for a little over an hour with out having problems with my scores opening too far! But it’s a great because sometimes it’s hard to find a solid 20 minutes.

✨🌾 🐇 folk art inspired rabbit score.
Today I took another crack at my rabbit score, my lovely friend did a beautiful rabbit score, and with Easter coming up I’ve had rabbits on my mind. My favorite animal as a child was rabbits, I even had a stuffed rabbit my mother made who I brought everywhere called Emma Bean.
I’ve also been admiring my new bread friend and her beautiful quirky birds. I just adore her illustrative scores! If you’re wanting to try out scoring illustrations she’s definitely someone to follow!
So this score is a collage of ideas and inspiration!

I used rice flour and purple sweet potato powder to create the pinky-purple hue. Anyways are y’all excited for spring? I sure am!

Another soft blue loaf, 1g of butterfly pea flower powder, and nope it doesn’t change the flavor!

I saw do a beautiful graphic wheat stalk score, which inspired the scoring for this loaf.

I don’t really know how to feel about the crumb on this one, I didn’t pop a single bubble.
