RECIPE
1. cauliflower steak - pan fry and baste with oil until each side is golden brown. season with sumac and black pepper.
2. chickpeas - canned, drained, rinsed
3. canned beets - diced
4. yee haw no frills dills - diced only had 1 brand that was allium-free
5. sauce - tahini, maple syrup to balance the bitterness from the tahini, lemon juice, paprika, dill, cayenne, a little bit of water to thin out the consistency, and a pinch of salt. microwave in 15s increments and mix until smooth.

sometimes when I make a good soup, I make variations of it on repeat. especially since the d**g guas from my parents' backyard are humongo. swipe to see me get a ton of prickly thorns in my hands. 🙃 just learned today from googling cantonese food puns that d**g gua tofu has inauspicious connotations and signifies misfortune. 😰 feel free to swap the tofu with something else 😭 but otherwise enjoy!

RECIPE
d**g gua, wintermelon, dad's garden
tofu
gluten cubes
mushrooms (baby king oyster, shiitake, orange)
smashed organic ginger chunk
lemongrass, tied
mushroom seasoning, salt, white pepper, black pepper
water to cover all ingredients
kombu concentrate

白頁豆腐 taiwanese frozen baiye tofu

try some fresh 田七! apparently it's called notoginseng and the dried herb is known to relieve pain and improve blood circulation? (don't quote me on my naive google search)

it's easy to grow. it's super delicious in soups. it gives the soup a nice thicker consistency without additional starch. the leaves have a thick kelp-like texture, and the texture of the little root nubs are kinda like the taro you eat during mid-autumn festival but less starchy

RECIPE (this literally was all ready in under 10min)
mushroom no-meat sauce from
1 can tomato paste 6oz
1 can corn 15oz
3 handfuls of baby spinach
2 servings of noodles, prepped according to package

heat pan and add everything except spinach and noodles. 🌽Maize well🌽 before adding noodles. Add in spinach at the end right before turning off the heat.

vegan ramen soondubu with a side of purple crysanthemummies 💐 every time I make this, I play around with different ingredients, and it's always just as comforting.

RECIPE
3/4 box tofu
mushrooms, zucchini
a timy little bit of potato + carrots
1/3 large napa cabbage
dried ramen

2 cups water
1 cup salted noodle starch water (from cooking noodles)
1 tbsp mushroom seasoning
2in piece of kombu
1in chunk of ginger, smashed
1 tbsp gochuchang
1 tbsp doenjang
1 tbsp ketchup
1/2 tsp black vinegar
1 tsp double black soy sauce
2 tsp gochukaru (red pepper powder)

plain or matcha tang yuan?? all my matcha was cermeonial matcha so these matcha balls came out bitter 💀 the texture of fresh homemade tang yuan always beat the frozen ones tho

RECIPE
plain: glutinous rice flour + water added little by little until you get a nice ball of dough
matcha: add to plain dough a couple tsp of matcha powder (use culinary, not ceremonial since we're going to boil these), add in a generous amount of brown sugar or sweetener of choice

a bowl of vegan savory tang yuan. made this for cny but nobody said we can't make this any other time of the year. you can basically sub tang yuan with any noodle in soup and it'll be uniquely yours.

RECIPE
15-20 tang yuan balls (handmade, water added to glutinous rice flour little by little to knead dough)
1 tomato
1/2 fuzzy melon (mo gua or zi gua)
few pieces of home grown mushrooms
few slieces of seaweed soyfish .usa
1 small chunk ginger, smashed, pinch of salt
a splash of kombu soup seasoning, mirin, soy sauce, mushroom soy sauce

DIRECTIONS
heat a pot up. add oil, ginger, and pinch of salt. add tomatoes and fuzzy melons.
stir until edges have some golden color.
add seasoning and enough water to cover the ingredients. bring to a boil.
add tang yuan and then turn down the heat to simmer. simmer for a few more minutes until fuzzy melon is soft and tang yuan is cooked.

vegan doenjang jjigae (된장찌개) (korean soybean paste stew)

who's with me always craving what I see in kdramas 🙋🏻‍♀️ doenjang jjigae is so comforting. I could have stew every day and not get tired of it.

RECIPE

1/2 block silken tofu
1/2 small zucchini
baby bella mushrooms
1in kombu soaked in 2 cups water used to rinse rice
2 tbsp doenjang (korean soybean paste)
1/2 tsp vinegar
(optional) korean red pepper powder for that extra KICK

heat pot, add some oil and add in doenjang. sautee mushrooms and zucchini until nicely golden. add in kombu stock, vinegar, and red pepper powder. once boiling, add in tofu and boil for another minute.

when my vegetarian sesame oil chicken has more mushrooms than tofu/chicken, is it 素麻油雞🐔 or 麻油菇🍄

RECIPE

Ginger
Lions mane mushroom, enoki mushroom, shimeji mushroom
Frozen tofu
Shianghai vegetarian chicken
Napa cabbage
Goji berry
4 tbsp sesame oil
2 tsp sugar, to taste
Salt, to taste
2 tsp soy sauce
3 cups water

Stir fry mushrooms and ginger with sesame oil and salt until golden brown. Then add in tofu. Season with soy sauce and sugar and add water. Bring to a simmer before adding napa cabbage, chicken. Simmer for a couple more minutes before adding goji berries. Season with more salt or sugar to taste and garnish with some cilantro.
