So typically the rule is to feed your starter once a week, and store in the fridge if you don’t plan on using it. What if you forget? Or you’re going on vacation? Will it die or is it dead? Short answer NO, starter can last months in the fridge without being fed and it’s not dead. Your starter will develop a “Hooch” which is a liquid on top, this just means it’s hungry. The liquid can look gray. This is normal, just means your starter is hungry. It’s safe to feed as long as there is no mold. If you plan on keeping your starter on the counter, it will need feed daily. Equal parts water and flour to starter. * Sourdough is forgiving! Yes there are things you have to do in order to make artisan bread. But do what works for you! * If you don’t want to fed your starter everyday DONT , place it in the fridge and feed it 12hr before you’re ready to bake. * If you want to use all purpose flour- DO IT!
