This is a sandwich my grandmother would make me for an afternoon snack when I was younger. It’s great for a filling snack or light lunch!

Ingredients:
- 2 eggs
- 2 tbsp kewpie mayo
- Ground Black pepper
- Kosher Salt to taste
- ½ of thinly sliced green onion (optional)
- Two slices of milk bread, toasted

Instructions
1. Place the eggs into a pot with water making sure that eggs are completely submerged in the water
2. Place the pot onto the stove on high heat with the lid on and cook for 13 min
3. While the eggs are cooking, toast the bread
4. Once the eggs are cooked, carefully peel each and set one aside
5. Place one egg into a small bowl and mash it with a fork
6. Mix in the mayo, green onion, and salt and pepper to taste
7. Cut the other egg in half vertically
8. Place the egg mixture onto a slice of bread and place the egg halves in the center
9. Place the second slice of toast on top and enjoy!
