Ingredients:
Syrup
- 1 cinnamon stick
- 1⁄2 tsp boiled Saffron liquid
- 2 tbsp Rosewater
- 1 1⁄2 cup Sugar
- 1 1⁄2 cup Water
- 1⁄3 cup Honey
- 1 tbsp Lemon juice

Baklava
- 200g chopped/powdered Pistachio
- 1⁄2 tsp Cardamom powder
- 160g Butter
- 1 pack Filo pastry

Direction:

1. Start by making the syrup. In a pot add cinnamon, sugar, water, honey and lemon juice.
2. Put on medium heat and allow to simmer for 10 minutes.
3. Add in rose water and Saffron and simmer for an extra 2 minutes. Then set aside to cool down.
4. Preheat oven to 180°C and butter a baking tray.
5. In a bowl mix together the pistachio powder and cardamom powder.
6. Roll out the filo sheets. Gently brush a layer of pastry with butter. Sprinkle the pistachio mixture on lower 1⁄3 of the pastry.
7. Start rolling the pastry from side with pistachio to the other end, carefully not to tear the filo. Then scrunch together.
8. Place the rolls in baking tray one by one.
9. Once all the rolls are aligned, brush the top of the rolls with more butter.
10. Using a scissor or sharp knife cut the rolls in line before baking.
11. Bake the Baklava in oven for around 40 min, until golden on top.
12. Take the tray out and while still hot pour syrup on top.
13. Let the Baklava soak overnight and enjoy.

Ingredients:
- 1kg cream cheese
- 7 eggs
- 1.5 cups sugar
- 1 tablespoon all-purpose flour
- 200ml whipping cream
-Nutella (topping)

Direction:
1) Preheat oven to 210oC
2) Line a springform baking pan with sheets extending out
3) In a large bowl add all the ingredients and mix with electric mixer till smooth
4) Pour batter into the baking pan and bake on middle level for 35-50 minutes (Till the center
is still jiggly). The top should be browned, if not broil for 2 minutes
5) Let the cheesecake cool outside the oven for 1 hour
6) Fridge overnight (minimum 4 hours)
7) Slice the cheesecake and top with Nutella (optional)
