Some people asked me what this was from my dinner last night at by . Remember in my previous post how I was telling you that throughout the dinner influences of England can be seen, heard and tasted? This is one example. On the menu it is called COLSTON BASSET STILTON. It’s a cheese bite of the awesome British cheese called Stilton. This specific one is less funky than the traditional Stilton and has more of a nutty flavor. 🇬🇧

Up close and personal is the way I like my photos. This is up close and personal with .birk , and team at in Dubai Marina. The whole experience was fantastic. It’s a multi sensory experience that even has a curated play list which I loved. The meal is done in 3 different rooms and there’s a hint of Britannia that’s always there be it in some of the dishes, in the design or in the culture such as tea time and so on. It’s a very cool discovery journey that if you pay attention to you’ll know is British at the heart of it.

Œuf mayonnaise à la japonais - recently at when and .sakagami collaborated. It was prepared tempura style but it tasted French with a hint of Japanese. This collaboration really worked. Rather than offering us dishes that were either French or Japanese we were offered dishes that contained elements of both. Just like Japanese and Peruvian works, this does too. It’s this dish from that inspired me to start working on a list of restaurants where you can “taste the love” in their food. It’s called joojeh koohi. Joojeh means chicken and koohi means from the mountain in Farsi.

The baby chicken is slow cooked in butter for at least 5 hours. It sounds like a confit of sorts. The sauce is a mixture of basil, coriander, parsley, dill and wild mint. It’s so tender and juicy and of course it’s delicious too. Butter = Love ❤️ and let’s not forget the caramelized garlic that you squeeze out and mix into the chicken and the sauce!!

There’s another version of this dish. The chicken is the same but the sauce is made of pomegranate and it’s tangy and slightly sweet at the same time.

Osaka, Japan - I found it to be the “anti” Tokyo. There’s mayhem here. There’s graffiti. There’s noise and there’s lots of bright lights in this big city. It’s chaos but in true Japanese style, even that is organized. This city works and I loved it!! I’ll never come to Japan without also visiting Osaka. Nikunotakumi Miyoshi by in Kyoto could very well be the finest Japanese beef meal I’ve ever had. The Tajima beef is beyond exquisite and a few dishes were prepared raw. This is a meal we will never forget. I’m already looking forward and hoping for a second visit.

Their original restaurant is a small place in the fish market. This is a new upmarket seafood yakiniku concept. It’s all about raw and grilled fish and we loved it!! I went with the and !

I’ll be in Tokyo from 5-11 April. It’s not my first trip and suggestions are always welcomed and appreciated. I have most of my trip organized and I have lots of free time. Please don’t suggest impossible restaurants to get into like Saito or Sugita unless you can get me in to them 🤣! Behold the “Arpège egg”! This chaud-froid d’oeuf (hot-cold egg) was invented about 20 years ago by legendary French chef at his 3 Michelin starred Arpège restaurant in the 7th Arrondissement of Paris.

I know someone who knows someone and managed to get my hands on these official photos which I wanted to share with you.

Meet - After finding success with his catering business in India, Gaggan headed to Bangkok in 2007 for a short consulting gig. Instead, he fell in love with the city and opened the renowned restaurant Red. He then sharpened his skills at El Bulli in Spain. In 2010, he launched Gaggan in Bangkok, blending Indian, Thai, and Japanese flavors with molecular gastronomy. The restaurant earned two Michelin stars and topped Asia’s 50 Best Restaurants list. Gaggan mentors chefs and collaborates with culinary stars like the twins. His avant-garde style mixes traditional Indian tastes with modern techniques, showcased in his famous 25-course emoji menu.

His latest project was kept a secret and just launched. Gaggan at in Bangkok looks stunning. I was with Gaggan a week before they announced and opened this project and it was kept a secret from us! I’ll be trying it on my next trip to Bangkok for sure.

Just a visit to your restaurant from is a big honor. But when he’s in your kitchen cooking a collaboration with you then you know you have made it to the big leagues. That’s exactly what happened to chef .orfali at his restaurant here in Dubai.

Alain Passard is a living legend of French gastronomy. He was so gracious with his time and knowledge during the dinner. It really was something special and a treat. We got to meet the chef and ask him anything we wanted.

Recently chef Alain has been championing the vegetable elevating it from a side dish or a garnish to the star of the show. That’s what’s happening at his legendary restaurant Arpège in Paris. We got a taste of that and it was delicious.

The young man in one of the photos is Passard junior, his son. At the end of the meal chef Alain told us he’s loving Dubai and wants to make it here at least once a year for a collaboration.

Arpège Paris holds 3 stars plus one green one for sustainability. Maximum stars!

The egg dish is his L’ Arpege signature hot and cold egg from 1986.

Ramadan Foods
“Foul mdammas” is a popular Middle Eastern dish made from fava beans that are cooked and mashed, typically seasoned with garlic, lemon juice, olive oil and cumin. It’s delicious and nutritious!

There are many variations of this dish. This one in the photo is from and has some chickpeas on it and the green is some crushed chili. It is commonly eaten for breakfast. During the holy month of Ramadan some people eat it daily.
