Legend has it that a traveling salesman planted the first pink cloves in Lautrec, and now this fragrant garlic has become a regional treasure.

French cheese and charcuterie with my homemade jams and pickles – what more could you want?

The pickled cherries and the chilli peach jam are made from scratch with cherries, chillies, and peaches from last year’s harvest in the garden.

Enjoy delicious duck liver parfait and pork rillettes from local suppliers around Montmorillon and the cheeses are sourced from the Limoges undercover market. Delicious.

🍇✨ Crafting Cassis: A French Delight✨🍇

Excited to share my latest creation from the garden! I forgot to share it with you before the gooseberry gin.

After growing luscious cassis berries or black currants as you might know them, I’ve transformed them into a delicious Cassis liqueur using vodka. This rich, flavorful drink will be a perfect addition to our gatherings. 🍷🌿

Recipe

Ingredients
- 400g cassis berries/black currants
- 100g caster sugar
- 700ml vodka

Method
Combine all ingredients in a sterilized jar, seal it up, and give it a shake every three days. Store in the cave for at least 3 months, though 6 months will yield the best flavor. 🍇

What an unforgettable day it was Saturday as the Olympic flame made its way through our beautiful town of Montmorillon in the Vienne department! 🇫🇷✨ The community came together in a joyous celebration, and the atmosphere was filled with excitement and pride.

It was incredible to witness this historic event up close. The Olympic flame symbolizes peace, unity, and the enduring human spirit, and seeing it here in our town was truly inspiring. 🥳✨

Now, I can't wait for the Olympics in July in Paris! 🎉👏 I’m excited to cheer on our athletes and also to explore more fabulous foodie spots to add to the next edition of my food guide, Paris: A Fabulous Food Guide to the World's Most Delicious City. 🍽️✨

We’ve been to Paris, Lyon, Dijon, Tain L’Hermitage, Versailles, Nice, Menton, Vence, Grasse and a quick day in Italy over the last eight years.

French Onion soup is a beloved dish that has a rich history and numerous variations. It is a classic soup that is made with caramelized onions, beef broth, and bread and is usually topped with melted cheese. While its origins are unclear, it is believed to have originated in France and has since become a popular dish worldwide.

The history of French Onion soup dates back centuries. Some believe it originated in ancient Rome, where a similar soup made with onions was popular among the working class. Others suggest that the soup was first created in the 18th century by French farmers who had access to plenty of onions and beef broth.

French Onion soup quickly gained popularity in France and became a staple of French cuisine. Over time, the soup has evolved, with various regions of France putting their own unique spin on the classic recipe. One popular variation is the Lyonnaise version, which is made with chicken broth and is topped with a crouton and poached egg. Another variation is the Provençal version, which is made with a mixture of beef and chicken broth and is topped with grated Parmesan cheese.

Perhaps the most famous variation of French Onion soup is the gratin version. This version is made with a layer of bread or croutons at the bottom of the bowl, followed by the soup, and then topped with cheese, which is melted and browned under a broiler. The gratin version is a delicious twist on the classic recipe that adds a crunchy, cheesy topping.

French Onion soup has become a popular dish in restaurants around the world. Chefs have put their own twists on the dish, adding ingredients such as red wine, bacon, and beer. Some restaurants have even turned French Onion soup into a main course, serving it with a side of salad or a slice of crusty bread.

In conclusion, French Onion soup is a beloved dish with a rich history and numerous variations. Whether you prefer the classic version or one of the many variations, French Onion soup is a delicious and comforting dish that is sure to warm your soul. The gratin version, in particular, adds an extra layer of flavor and texture that makes it a standout dish.

My recipe for French Onion Soup is as follows.

Ingredients

50g unsalted butter
1 kilo of onions sliced
2 teaspoons of salt
1 teaspoon of grey or black pepper
1 tablespoon of plain flour
200 ml of dry white wine
1.5 litres of filtered water
1 teaspoon sugar
1 baguette sliced
150g gruyere cheese or elemental cheese grated

Method

1. In a large saucepan melt the butter on medium to high heat
2. Add the onions and cook for 5 minutes until softened
3. Add the salt and pepper and cook the onions until browned around 20 to 30 minutes
4. Once browned add the plain flour and stir in untilled combined
5. Then add the wine and 1/3 of the water and mix with a whisk to make sure the flour has not formed lumps
6. Add the rest of the water and sugar and bring to a boil
7. Simmer for 15 minutes and then the soup is ready
8. Heat a grill in the oven on high
9. Place the baguette slices on a baking tray and toast under the grill on one side
10. Put the soup into bowls and place the baguette slices untoasted side into the soup and then place the cheese on top
11. Heat the cheese under the grill until golden
12. Allow to rest for a couple of minutes then serve
