I had El Pollo Loco’s Classic Double Baja Shrimp Salad 🥗 for lunch and it was delish! 😋 It contained a lettuce and super greens blend topped with a generous amount of Baja shrimp 🍤, avocado slices 🥑, queso fresco, pepitas, salsa fresca, and creamy cilantro 🌿 dressing. I asked for extra queso fresco because I love the stuff! The mix was scrumptious and filling.

I’m not much of a Pumpkin Spice 🎃 gal, but August 22nd marks the unofficial start of Fall 🍂 at Starbucks. The infamous PSL🥤makes its seasonal return, alongside another autumnal fave, the Apple Crisp. 🍎 Now that’s what I’m really looking forward to. 🤗

If you’ve been following us for a while now then you know how much we adore Adventure City. It’s the little theme park that’s big on fun. Yeah, it’s small compared to its sister amusement parks, but that’s the draw for many. Its size makes it manageable and you’re guaranteed to get on every ride without having to wait too long. Additionally, it’s relatively affordable, offers ample free parking, and sells Starbucks. Can’t beat that!

Every Spooky Season, Adventure City hosts the Bootastic Halloween party. This year it’s happening for eight nights starting Friday, October 4th. Tickets are available online NOW and sell out every time! We went the past two years and kiddo had great fun both times, as well as made friends easily. Adventure City is the perfect little theme park for little kids (I’d say up to 10 year olds) and their Halloween Party is really fantastic!

We were at the OC Source a few weeks ago and decided to stop by one of our fave shops called Princeton (named after the owner’s beloved doggo 🐶). Princeton is a Korean 🇰🇷 apparel store specializing in street wear and accessories. They carry brands such as Fjällräven Känken, Rip N Dip, Boy London, Levi’s, Lacoste, Loungefly, and others. They also sell modernized Hanbok (traditional Korean dress).

Kiddo really wanted a belt bag after he saw a lot of the kids carrying them at diabetes camp, so we picked one up. He also selected a cute shirt with a little cat head 😸 poking out of the front pocket. But as we were about to exit the store, Ry 👦🏻 stops me and gives me a mischievous look and giggle. Looking sus, I asked him what was going on. He responded, “Ok mom. Don’t get mad.” Oh great, what did that mean? Then he takes the shirt out of the bag and proceeds to unveil the hidden secret. 🙊🙈 It was non-refundable, so now we refer to his “cute cat tee” as his anti-diabetes shirt!

Princeton is located on the second floor of the OC Source and is connected to The Bakery Cafe.

Lots of prep and paperwork to complete before kiddo 👦🏻 can start his first day of 6th grade next week. Today he had multiple appointments at CHOC 🏥, the best in Pediatric Endocrinology!🩸Always making him feel safe, supported, and well taken care of. 😊

I asked kiddo 👦🏻 how he wanted to celebrate his birthday. After having gone to Knott’s a couple of weeks ago, it was a no brainer. So I ended up getting two Season Passes for us and buying single tickets through Groupon for his buddies. I was just grateful for the awesome deals! 😅

While at Knott’s, the kids first hit up Camp Snoopy to accommodate one of his pals who wasn’t into thrill rides (I could relate). Then they went on the bumper cars. That’s always fun. Afterwards, the three went on the scarier rides🎢. Our friend, Tony was nice enough to hook us up with single day use fast passes, which was used on the popular GhostRider wooden coaster and saved us an hour wait time. Thanks so much, Tony! We appreciate it!

So final tally of rides while we were at Knott’s from 2:45pm until 10pm closing:

Yesterday was a great day full of food 🍕, tween shenanigans 😎, thrilling rides🎢, and just good ol fun! We celebrated Ry’s 11th birthday 🎂 with his closest friends 👦🏽👦🏼👦🏻. We had lunch at Rock & Brews 🎸 followed by a whole day of excitement (and lots of walking 👟) at Knott’s Berry Farm. Ry’s bday 🥳 isn’t actually until next week though, which is when he also starts his new school. Exciting times ahead! 🤙🏼

We’ve been shopping at CostLess Wholesale for years and thought to share it with you folks, if you haven’t already heard about it by now. CostLess buys overstocks, close outs, returns and discontinued brands from large retailers and resells them at discounted rates. I’ve personally scored some cool stuff for my home and my office.

Kiddo and I dropped by over the weekend and found authentic Sanrio backpacks for only $19.99. I also bought a new tower fan, some cleaning supplies, and hygiene products. For parents looking forward to Halloween, they’re selling quality superhero costumes for only $9.99 and princess dresses for $14.99. So go now as their items sell out and their stock changes frequently.

Full disclosure, some items are poorly made and cheap quality, but if you patiently scour the aisles, you’ll find something worth buying.

If you’ve been following us for a while now then you’d probably know that kiddo loves gold panning, gem sluicing, and fossil digging. So when he spotted the Geode Shop inside Knott’s Berry Farm, of course we had to go check it out.

Located in the Ghost Town section of the park, the Geode Shop offers a nice selection of geodes, fossils, minerals, and meteorites from around the world. They’re all on display and most are for sale. But what kiddo enjoyed most about the store was being able to pick out a mystery orb and have it sliced right in front of you by a machine.

The rock spheres range in price from $25 and upwards of $100+. If you end up with a dud orb (not having any special properties), then you can keep it for free. However, if your rock contains crystals then you’ll be charged for it. Kiddo picked out a $35 orb, which his Geode Deed revealed to be a “Mexican Coconut” excavated from the state of Chihuahua, Mexico. He liked it and when we got home immediately added it to his specimen collection.

So if you’re already at Knott’s and have a budding geologist with you or appreciate rocks yourself, then stop by the Geode Shop on your way to GhostRider. And don’t forget, season pass holders receive a discount on their purchase.

Just sharing kiddo’s daily routine as someone diagnosed with Type 1 Diabetes. He still does his finger pricks several times a day and self injects for meals and snacks over 10 grams of carbs, but we’ll try to get back on the monitor soon and look into the insulin pump. I’m so proud of my T1D warrior!

Kiddo and I would like to extend a heartfelt thank you 🫶🏻 to A Kid Again for hosting us and all those enrolled in the A Kid Again - California chapter who attended the free Knott’s Berry Farm adventure this past Tuesday. 😊

A Kid Again is a organization that offers and activities for families who have a child facing a life-threatening condition. 🤕 They handle all the expenses and details. We just have to show up to enjoy quality time with our loved ones.

For program eligibility, your child must be under 20 years old and diagnosed with a medical condition deemed life-threatening by a medical professional 👨🏾‍⚕️. Kiddo has 🩸, which qualified us.

If you or someone you know would like to participate in , please complete an application 📃. Once submitted, it will be reviewed by the organization’s Medical Advisory Committee 👩🏻‍⚕️ for approval.

A Kid Again operates nationwide, but not all states participate in the program. California was just added to the list within the past couple of years, so it’s still fairly new here. So far kiddo 👦🏻 and I have attended two events with A Kid Again, including Knott’s where we received free admission tickets, free parking, free lunch, and a lifetime of fond memories. Thank you, for giving illness a timeout! 🥰

Kiddo was the next person to board the GhostRider 👻 roller coaster🎢 at Knott’s when he and everyone else were instructed to evacuate the ride immediately. When I saw him walking down the steps looking disappointed 😣 I asked him what happened. He said that there was an earthquake. I honestly thought he was joking or that someone had pulled a prank because I didn’t feel anything nor did the people around me. And by that point my cell📱had already died so there was no way to verify the info until we got back to the car. But sure enough, a magnitude 5.7 earthquake hit near Bakersfield at 9:09pm. Did you feel it?

One of the ladies from yesterday’s CanAm ride texted me this video. I’m the second rider in purple. We rode through the San Gabriel Mountains ⛰️ to Mount Baldy Village and then back to base. It was loads of fun riding the three-wheel Ryker (that’s what it’s called) although I coulda gone without the bugs 🪰 hitting my helmet and face. 😁 We also saw a smushed rattlesnake 🐍 on the road and periodically rode through swarms of butterflies. 🦋

Watching Despicable Me 4

Kiddo went to watch the new Despicable Me 4 movie with his buddy and said it ranks as one of his faves from the media franchise. Can’t wait to watch it myself since all the Despicable Me movies have been super entertaining. Have you seen it yet?
