☔️ Need a rainy day recipe? These April showers window cookies are a perfect reminder that May 🌸flowers🌼 are just around the corner, plus they are adorable. 🪟🌧️
These cookies are literally SO easy to make AND they are quick bakes! 👩🍳
🧐 Pro Tip: Flavor your window panes with candy flavoring oil for a little extra flavor or dip in dyed royal icing for colored panes.
Ingredients
☔️ 1 1/2 cup all-purpose flour
☔️ 1 Tbsp Cornstarch
☔️ 1/4 tsp salt
☔️ 4 oz unsalted butter, at room temperature
☔️ 1/4 cup sugar
☔️ 1/4 cup confectioners sugar
☔️ 1 egg white
☔️ 1/2 tsp vanilla extract
☔️ isomalt
Instructions
☔️ Sift together dry ingredients (sifting will make the cookies lighter and more airy).
☔️ Cream butter and both sugars in a stand mixer until fluffy.
☔️ Add egg white and vanilla followed by the flour mixture until a soft dough forms. If dough is crumbly, add 1 Tbsp of water, but don’t do this unless absolutely necessary as it can cause the dough to spread a bit.
☔️ Wrap dough in plastic wrap and chill two hours.
☔️ Flour a clean work surface and roll dough to 1/4” thickness.
☔️ Cut windows, transfer to a cookie sheet and chill 10-15 minutes or until hardened - it’s really important that the dough is as cold as possible when it goes in the oven so that the cookies hold their shape.
☔️ Preheat oven to 375°F.
☔️ Add isomalt crystals to panes. To flavor, first add isomalt to a ziplock bag, drop in flavoring and shake to coat.
☔️ Bake 8-10 minutes or until isomalt crystals are melted and cookies are just golden.

This year’s easter table is a mix of old and new and I think that’s just a perfect metaphor for spring. 🌸🪺
I’ve had these baby bunnies for years and the boys love them almost as much as I do. Each year they are a special little thing to pull from storage and incorporate in whatever new finds I’ve fallen in love with for the season. 🐰💕
I love a simple table with plenty of room for food and conversation.
This year’s Easter luncheon will be served family-style at the table. Adding everything to trays helps make clearing decor for food much more simple. 🧺👩🍳

🪺 I’m on a roll with the Rice Krispies this year. 😂 But really, can you ever have too many Rice Krispies treats? 💕
These nests are so easy to make and they were a big hit with the kids! My youngest (who is currently REALLY into dinosaurs) kept “hatching” his dinosaur eggs… 🥰🪺🥰
Comment “nests” and I’ll send you the recipe.

🍫Do you have chocolate piling up?
Between Valentine's and Easter, we seem to pile in chocolate around the house. 💘🗓️🐣
Time to get creative with those Cadbury eggs and whip up some delicious puff pastry treats! 🐣🍫
You’ll need:
🥚 Puff Pastry
🥚 Small Cadbury Eggs
🥚 Egg Wash (1 egg + 1 Tbsp water, whisked)
🥚 Rolling Pin
🥚 Mini Muffin Tin
Instructions:
🥚 On a clean, lightly floured surface, roll out puff pastry.
🥚 Cut squares from dough.
🥚 Wrap egg by placing eggs in center and allow the weight of the egg to form the puff - this takes a little practice, but if you work slowly, you'll get a lovely egg shape!
🥚 Bunch excess dough at the bottom and twist - this is important so the chocolate doesn't melt out.
🥚 Cut off bulk excess and roll in egg wash.
🥚 Spray a mini muffin tin and add eggs pressing in slightly to ensure they remain centered and standing.
🥚 Airfry or bake at 400 for 8-10 minutes.
❕WARNING: Let these cool a bit before enjoying. I leaned the hard way the cream filling basically turns into molten lava! 🌋

“The best dessert I’ve ever made.” That’s what he said! 🫶
My husband inhaled these. Well, not all of them… I may have had one (or two) myself. 😉
These single portion pots of butterscotch cream are incredible! I served them in festive green ramekins as “Pots of Gold,” but they’ll do anytime of year! 🤍
Happy St. Patrick’s Day!!
🍀 Golden Pots de Crème 🍀
Ingredients
🍀 1 Tbsp unsalted Kerrygold (or European-style) butter
🍀 ½ cup dark brown sugar
🍀 1 ½ cups half and half
🍀 ½ cup whole milk
🍀 1 tsp vanilla extract
🍀 ½ tsp salt
🍀 3 large egg yolks
Instructions
🍀 Preheat oven to 325°F.
🍀 In a medium saucepan, melt butter over medium heat.
🍀 And add brown sugar and mix to combine.
🍀 Let simmer 8-10 minutes, stirring occasionally and taking care not to burn the caramel.
🍀 Lower the heat and slowly whisk in the half and half and milk - it will look like it’s not going to mix, but, trust me, it will if you whisk!
🍀 Turn off the heat and add vanilla and salt.
🍀 In a separate bowl, whisk the egg yolks and temper the eggs with a small amount of the warm butterscotch mixture, whisking steadily.
🍀 Pour egg mixture into remaining butterscotch mixture and whisk until thoroughly combined.
🍀 Pour the entire pan of butterscotch through a sieve and divide between four (6oz) ramekins or mini mason jars.
🍀 Place ramekins into a larger pan and pour boiling water to halfway up the sides of the jars.
🍀 Bake 30-35 minutes. To check for doneness, tap the side of one of the ramekins and test for jiggle. You want a little jiggle just in the middle - that’s perfection!
🍀 Remove from the oven and place ramekins on a cooling rack to room temperature.
🍀 Chill in the refrigerator for 4 hours before serving.
🍀 Serve within 3 days.

A few years ago, my husband handed me a random volume of an old encyclopedia set. I was confused at first until he showed me the treasure that lay within - about a dozen four-leaf clovers he'd collected in childhood. 🍀
I was shocked to say the least. My husband isn’t much for holding on to old things - that’s my department 😉, but what a treasure! 🫶
I've kept that encyclopedia safe through two moves, a renovation, and much packing, unpacking, and repacking. 📦
This year, I finally found the perfect frames to display what he so carefully guarded for so many years! 🖼️ They are the central pieces on this year's St Patrick's Day coffee table and in our living room, and I'll bet they'll find a permanent home in the library thereafter! 📚
I love little treasures like this on a coffee table (or wherever friends and family gather). For me, little mementos not only safeguard memories, but they allow us to share those memories we treasure with the people with whom we share our home. 🥰

Here’s a little tip for blind baking the perfect pie crust! 🥧
Crumple that parchment paper before you line your crust and fill with pie weights. Crumpled paper forms to the crust better and allows you to form the paper around the edges so nothing accidentally browns! 🫶🏻

🇮🇪 Ireland holds a near and dear spot in my heart. My husband and I have spent many weeks in the Irish countryside and it's by far one of our favorite places on earth. 🥰
We take St. Patrick's day seriously on the farm and celebrate with fond memories of our times in Ireland. The house is full of little mementos this time of year. I can't wait to show you more decor picks for this year paired with some of our little trinkets from the Green Isle! 🍀
Comment "pretty table" and I'll send you a link to all my St. Patrick's Day home decor picks this year!
