Pumpkin & Sticky Toffee Cinnamon Rolls! Dough: 175ml warm milk, 7g dry active yeast, 50g granulated sugar, 1 egg and 1 yolk, 60g melted butter, 375g bread flour and pinch of salt. Mix these together in a stand mixer for 10 mins. Proof in a greased bowl for 90 mins. Roll out and add your filling and some more cinnamon. Slice and add to baking tray with our toffee sauce and proof for a further 45 mins. Bake at 180c for 20-30 mins (until golden at the top) Pumpkin filling: 1 small pumpkin, 100g apple sauce, 100g brown sugar, 50ml brown sugar, 1 tsp nutmeg and cinnamon, 75ml water. Let the water evaporate, then once soft blend to a purée and leave to cool. Toffee sauce: 125g salted butter, 100g brown sugar, 1 TBSP instant coffee, 125ml cream and pinch of salt. Chicken Pot Pie Bakes for my Wife! Filling: 50g Butter, 1 Onion, 3 carrots, 3 celery sticks, 60g flour, 1 TBSP Salt, 1 tsp oregano, 1 tsp black pepper, 1 tsp rosemary,1 tsp thyme, 50ml vermouth or white wine, 350ml chicken stock, 125ml milk, 1 rotisserie chicken (shredded), 50g Parmesan,75g frozen peas. Easy salmon dish for my wife Sauce/Marinade: 2 TBSP oyster sauce, 2 TBSP light soy, 1 TBSP dark soy, small splash of sesame oil and white rice vinegar, 1 TBSP honey, 1 TBSP chilli oil. Marinate for 1 hour using half the sauce. Then bake at 180c for 9 minutes. Then add some more sauce and add to your grill/broil setting for 2 mins. Beef & Guinness Pie! 800g slow cooking beef 500ml Guinness (or any stout) 500ml beef stock 1 onion 3-4 Carrots 3 garlic cloves 15ml Worcestershire sauce 3-4 cloves black garlic (optional) 2 TBSP cornflour mixed with water to thicken at the end. Short crust pastry - 2 Rolls Makes 8 small pies or 1 XL pie! Brown the beef then remove. Add onion, carrot and garlic and soften this. Back in with then beef and add salt and pepper. Add the Guinness and cook the alcohol out. Then add beef stick, Worcestershire sauce and black garlic. Cook on low heat for 2 and half hours until the beef is soft. Sticky Toffee Pudding, the perfect warm winter dessert! Soak 150g chopped dates with 1 TBSP instant coffee and 150ml boiling water. Meanwhile mix 2 eggs, 75g melted butter and 125g caster sugar and 1 tsp vanilla extract together. Fold in the soaked dates after 10 mins and then fold in 175g self raising flour. The wife wanted Moussaka, so she gets Moussaka! Before you start commenting this is not a traditional moussaka, yes I know, I just cater to my wife’s preferences! Slice and bake 2 large courgettes and 3 potatoes which you’ve seasoned with paprika, oregano, salt and pepper. 15-20 mins at 180 until soft. Meat filling: sweat down 1 onion and 3 minced garlic cloves. Add 500g 15% beef mince. Then season with salt, pepper, oregano cinnamon,and paprika. Add tomato purée and let simmer until cooked. Béchamel: warm 600ml milk, while that’s warming, melt 75 butter and once melted add 3 TBSP plain flour to form your roux. Add 2 eggs to your warm milk and stir making sure don’t cook the eggs. Then add your roux. Once thickened season with salt, pepper and nutmeg. Finish with Parmesan and pour over the layered potato, courgette, tomato and mince meat. Lamb Shank Pie! Need day old lamb shank - recipe for this below: Recipe: to a baking tray add 2-4 lamb shanks - lay this on a bed of lamb fat (ask your butcher for this). Add 1 onion, 3-4 garlic cloves, season with salt, pepper, oregano and rosemary. Place in the oven uncovered for 30 mins until a nice golden brown. Cover with foil then bake for a further 4 hours at 180c. Once soft and tender, bring to room temp then chill in the fridge overnight ready for the pie. Smash down into your pie ramekin and add lamb fat and your favourite gravy. Saffron & Butternut Squash Risotto! Peel and slice 1 butternut squash (half to be left whole and the other half to be sliced thin for garnish) roast the squash with olive oil, salt and pepper. Once soft remove and blend the half squash with 25ml maple syrup and 50ml chicken stock. Season to taste. To a pan add 15g butter alongside 2 finely slices shallots. Toast 300g saffron infused risotto rice then add your squash purée. Ladle in one spoon of WARM chicken stock until cooked (have 800ml chicken stock warmed and ready for this - you might not need it all) season to taste once cooked.
