Winter weather got me cooking tonight’s awesome dinner.
Mushroom Spinach Curry Chicken
INGREDIENTS
1 large onion, diced
8 ounces mushrooms, sliced
2 tablespoons coconut oil
2 pounds skinless, boneless chicken breasts, cut into bite-sized pieces
1 tablespoon curry powder
1 teaspoon salt
1/2 teaspoon pepper
14 ounces full fat coconut milk
1/2 cup water
4 cloves garlic, minced
2-inch piece of fresh ginger, trimmed, chopped
2 tablespoons brown sugar
1 teaspoon red pepper flakes
6 ounces fresh baby spinach
1 cup rice
2 cups water
2/3 cup salted cashews
Start rice cooker filled with 1 cup rice, rinsed twice, then drained. Add 2 cups water.
Heat oil in a large skillet on medium high then add onions and mushrooms. Season with salt and pepper and sauté 8 minutes, stirring occasionally.
Toss chicken in curry, 1 teaspoon salt and 1/2 teaspoon pepper. Add to skillet and cooking 8 minutes, stirring occasionally.
Add ginger and garlic to chicken mixture, stirring and cooking 2 minutes. Add coconut milk, water, red pepper flakes and brown sugar. Simmer for a few minutes then add spinach. Cook until wilted.
Fluff cooked rice with a serving spoon, then serve curry over top. Add cashews.

Cheesy Potato Soup is a cozy meal on a cold day.
INGREDIENTS
4 cups potatoes, diced
1 cup carrots, diced
1 cup onions, diced
1 cup celery, diced
4 cups boiling water
1-1/2 teaspoons salt
1 teaspoon white pepper
1/2 cups butter
1/2 cup flour
4 cups milk
8 ounces grated cheese
1. Cook vegetables (potatoes, carrots, onions, celery with salt and pepper) topped with boiling water until tender on medium high.
2. Meanwhile in sauce pan, melt butter on medium. Add flour, stirring frequently until blended and cooked, 1 to 2 minutes. Pour in milk, stirring frequently until thickened.
3. Pour creamy sauce over vegetables, then cook on low 2 more minutes and serve while hot. An optional topping is crispy cooked bacon pieces.

Hearty Beef Stew
This recipe is a mild adaptation of the famous @williamssonoma Hearty Beef Stew, using what I had on hand — mushrooms instead of carrots, a large tomato instead of tomato paste, dried spices instead of fresh herbs and 48 ounces instead of 32 of beef broth.
INGREDIENTS
1.3 pounds boneless beef stew meat
8 ounces bacon, chopped
salt and pepper
1 onion, chopped
8 ounces baby portobello mushrooms, cut into chunks
3 celery stalks, diced
2 garlic cloves, chopped
2 tablespoons butter
6 tablespoons flour
48 ounces beef broth
1 over ripened tomato, chopped
1/2 tablespoon dried parsley
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 teaspoon dried bay leaves
1-1/4 pounds small golden potatoes, cut into small cubes
DIRECTIONS
Position a rack in the lower third of an oven and preheat to 325°F.
Cut the beef into 1 1/2-inch cubes and set aside.
In a large Dutch oven, cook the bacon on medium high heat, stirring occasionally, until the bacon is crisp and browned. Transfer to paper towels to drain and set aside. (Use bacon for another recipe or as garnish.)
Season the beef cubes with salt and pepper. Cook, stirring occasionally, until browned on all sides. Transfer the beef to a plate.
Add the onion, celery, mushrooms and garlic and cook, stirring occasionally, until the onion softens, about 5 minutes.
Stir in the butter and let it melt.
Sprinkle with the flour and stir well.
Gradually stir in the stock, and then stir in the chopped tomato and spices.
Return the beef to the pot and bring to a boil. Cover, place in the oven, and cook for 1-1/2 hours.
Prepare the potatoes, add them to the pot, stir, re-cover and continue cooking until both the meat and potatoes are tender, about 45 minutes more. Season the stew with salt and pepper. Serve while hot.

Comfort food. Texas Chili

1 pound ground beef
1 pound ground pork or Italian sausage
1 large onion, diced
29 ounces petite diced tomatoes
15 ounce can red kidney beans, drained
15 ounce can cannellini beans, drained
8 ounce can tomato sauce
1/4 cup chili powder
1 teaspoon cumin
1/2 teaspoon salt
3/4 teaspoon paprika
3/4 teaspoon oregano
3/4 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1/2 teaspoon onion powder
32 ounces beef broth
1 cup water
Brown ground beef with onions in Quick Cooker (or Instant Pot) on the seer setting. Add remaining ingredients and set to stew/chili setting. Chili will be done in less than an hour.
May also cook in a slow cooker or on stove top. Heat to a boil, then turn to low and simmer for an hour or until desired consistency.
Makes 8 servings. Serve with cornbread.
Last night we were treated to a sweet and wonderful Veteran’s Day music program at my son’s school. Great job, fifth graders! Isaac’s awesome teacher was there to support him and her other students too.

Fruity Pebbles Rice Krispy Treats 🎃💕
Melt 5 tablespoons butter on low in a very large pan, then add a 10 ounce bag of mini marshmallows. Stir frequently until melted. Combine 4 cups Fruity Pebbles and 2 cups Rice Krispies cereal and add to melted mixture. Stir until evenly coated then transfer to a rectangular baking dish. Flatten top and spread evenly. Cool several hours to set, then cut into squares, triangles or rectangular shapes.

Everyone is happy when I make this creamy, hearty, mushroom beef stroganoff, like I did tonight.
INGREDIENTS
1 pound beef stew meat, cut into small chunks
8 ounces fresh mushrooms, sliced
1 large onion, chopped
2 tablespoons butter
1 tablespoon flour (for vegetables)
1 tablespoon flour (for beef)
14.5 ounces beef broth
1/2 tablespoon Worcestershire sauce
1-1/2 cups water
8 ounces any pasta
6 ounces frozen peas
8 ounces sour cream
2 tablespoons Parmesan cheese
Cook the sliced mushrooms and butter on medium high in Dutch oven. Season with salt and pepper. Cook until the water has cooked out and mushrooms and have started to brown.
Add onions. Turn heat to medium high. Cook until tender and the onions start to brown. Add 2 tablespoons of flour and cook 1 to 2 minutes, stirring. Add half the broth, then cook a few minutes. Remove vegetables and everything from the pan. Leave remaining bits in the pan. Preheat oven to 350° F.
Add splash of olive oil to the pan on medium high, then add the beef. Season with salt and pepper, browning meat and stirring occasionally. Add 2 additional tablespoons of flour, cooking and stirring 1 to 2 minutes. Add Worcestershire sauce and remaining broth, then bring to a boil.
No churn, 3 ingredient ice cream is the simplest homemade recipe I’ve made. So good, too!
INGREDIENTS
2 cups heavy cream
1 can sweetened condensed milk
2 teaspoons vanilla extract
Whip cream until thickened. Mix together sweetened condensed milk and vanilla. Carefully hand-stir everything together. Pour into container, then freeze 12 hours and it’s ready!
