Mint Chocolate Truffles ?

12 servings, 1 truffle each

5 oz. dark chocolate, 70% cocoa or higher, finely chopped
1 Tbsp. extra-virgin coconut oil, melted
½ cup canned lite coconut milk
½ tsp. pure mint extract (or pure vanilla extract)
⅓ cup unsweetened cocoa

1. Combine chocolate, oil, and extract in a small bowl; mix well. Set aside.
2. Bring coconut milk to a gentle boil in small saucepan over medium heat.
3. Add coconut milk to chocolate mixture; whisk gently to blend.
4. Place chocolate mixture, covered, in refrigerator for at least 4 hours, or overnight.
5. Using a melon baller or spoon, scoop out 1 Tbsp. of chocolate mixture. Roll into a ball. Roll in cocoa powder until evenly coated. Repeat to make twelve truffles.
6. Store in refrigerator for up to one week or in freezer for three months

Slow Cooker Mushrooms with Garlic and Herbs🍄🍄🍄😉

4 servings, approx. ½ cup each

1 lb . whole mushrooms (like brown, button, or cremini), stems trimmed
4 cloves garlic , finely chopped
2 Tbsp . finely chopped fresh thyme
1 bay leaf½ cup low-sodium organic vegetable broth
Sea salt (or Himalayan salt) and ground black pepper (to taste; optional)
¼ cup unsweetened almond milk
2 Tbsp . unsalted butter
2 Tbsp . chopped fresh parsley (for garnish; optional)

Place mushrooms, garlic, thyme, and bay leaf in a 3-quart slow cooker.

Add broth. Season with salt and pepper if desired. Mix well; cover. Cook on high for 1 to 1½ hours (or on low for 3 to 3½ hours), or until tender.

Add almond milk and butter; cook for an additional 30 minutes.

Garnish with parsley if desired; serve immediately.
Enjoy.

Skinny Peppermint Martini ???

This is the simplest and tastiest low-calorie cocktail out there. Just three ingredients and a bit of candy cane.
It’s beginning to look a lot like Christmas....

2 servings

1 fl. oz. vanilla vodka
2 tsp. raw honey
1½ cups unsweetened almond milk
1 fl. oz. peppermint schnapps
Mint leaves (for garnish; optional)

1. Place vodka, honey, almond milk, and peppermint schnapps in a cocktail shaker filled with ice; shake vigorously for at least 10 seconds, or until well mixed.
2. Strain evenly into two martini glasses. Garnish with mint leaves if desired; serve immediately.
Enjoy.

Holidays always bring me back to my childhood in Lithuania 🇱🇹
Today I recreated an old-time Lithuanian recipe, and oh my… my taste buds are so happy 🤍
Ingredients:
• Ricotta cheese
• Eggs
• Flour
• Baking powder
• Stevia drops
Baked at 350°F for 20 minutes, then a few minutes under the broiler for that golden top ✨
Simple ingredients, cozy memories, and pure comfort food.
