Comforting and vegetarian one pot quinoa and vegetable soup!

When the temperatures get a bit cooler outside, a bowl of soup is always a good idea.

This soup is so easy to make, full of vibrant veggies and protein from the quinoa!

If you have any leftover veggies or protein like chicken, feel free to toss it into this soup!

Any vegetable will work but I really love the tomato, yellow squash and broccolini.

Comforting and veggie packed Japanese style vegetable and dumpling soup.

This recipe is easy to make, packed with umami and fully vegan.

As this soup is Japanese inspired but not truly authentic. I drew inspiration as kombu and dried shiitake mushrooms are often used to flavor the broth, also known as dashi.

I love adding colorful vegetables to my soups, it's not only visually appealing but also adds flavor, textures and nutrients.

A couple of year ago I ditched the tea bags and started buying loose leaf teas in bulk.

I also like to use fresh ingredients when available to make teas.

Rich, sweet and soft dark chocolate cookies with chocolate chips, of course!

I am most definitely a chocolate lover will never turn down a chocolate rich dessert.

You can pretty much always find chocolate chip cookies in my house.

I usually make a big batch of cookie dough then scoop and freeze the raw dough so that I am just 10 minutes aways from freshly baked cookies.

To turn a classic chocolate chip cookie into a dark chocolate cookie, you will just need to add one more ingredient - cocoa powder.

These cookies come out soft, chocolate rich and not too sweet.

4 ingredient, sweet and creamy Vanilla Soaked Oats!

This recipe is so easy to make, uses high quality ingredients and 100% vegan as I am using non-dairy milk.

Adding vanilla to desserts and sweet treats makes a lot of sense.

I love using vanilla paste as the vanilla taste is stronger and you can see the specks of vanilla!

This plant based vegetable lasagna ticks all of the comfort food boxes!

When I ask my husband what he wants for dinner his answer, without fail, will be “lasagna”.

Since ditching meat and mainly eating plant based, I still wanted to create a deliciously savory and filling lasagna. Just like the traditional!

This plant based vegetable lasagna has three layers, lasagna sheets, a tomato base vegetable layer and a creamy white sauce layer.

Creamy and savory lemon olive oil white bean dip!

This dip recipe is made in the food processor and is fully plant-based.

I love a good snack especially and it’s a platter with a dip in the middle that I can dip my crusty sourdough bread into!

Lemon and olive oil make a great pairing and are always used whenever I make sauces of dips.

Vibrant, dark leafy green and nutrition-dense SUPERFOOD SALAD.

I dislike boring salads. It has to have color, texture and some zest!

The best salads are made with produce that is in season and luckily most of the ingredients used here are in season all year round.

As with most salads, it starts with some greens.
