Cool blast from the north
1st time making hollandaise from scratch. Using a stick blender is a game-changer. It took 2 minutes to make the sauce.
RECIPE:
Melt a stick of butter — yes, a WHOLE stick — and this is the important part: make sure the butter is in a container that allows you to pour slowly, and steadily without making a giant mess.
Place egg yolk in glass measuring cup (not the same cup as the butter). Add 1 tsp of water, 1 tsp lemon juice, grab your stick blender (immersion blender) and blend the egg, juice, water, a tiny pinch of kosher salt, and slowly begin pouring the hot, melted butter. It will take only 1 minute if blending to get a perfect hollandaise. Add a little sprinkle of cayenne pepper into the emulsion. Finish with cracked black pepper.
This makes enough hollandaise for a proper breakfast for 4-6 people. It can also be stored in the fridge.
