Instructions: First step is to blind bake your chilled/frozen pie crust. Cover with parchment and weigh down with lentils, beans etc (I re-use them over cause I’m not eating them. In the oven at 375F for 10-15 mins, stick to 10 because you’re going to bake later with your filling. The most crucial step for your filling is making sure all your refrigerated ingredients are at room temperature. In a large bowl, mix everything in. Set aside your egg white from the yolk you used for your filling. Once your pie crust is done, brush the bottom while your pie is hot to create a seal. This prevents a soggy crust. Lower temp of your oven to 350F and add your filling into your pie crust and place in the oven on the middle rack. Bake for 55-60 mins. Check your pie at the 55 min mark - you don’t want to scorch your filling. Once your pie is done, cool completely. Cover with plastic wrap and I highly recommend you chill overnight. Giving the pie 24 hours to chill will help set the filling best.
