🍚🍄🟫 Sautéed Oyster Mushroom, Greens, and Rice Bowl (Asian-Inspired)
Here is the recipe of my vibrant, nourishing bowl combines oyster mushrooms, crisp greens, and fluffy rice with a deliciously savory Asian-inspired sauce.# !
• 3 cups organic white rice or sticky rice
• 200g oyster mushrooms, torn into strips
• 1 tbsp of 5 spices
• 2 tbsp soy sauce or tamari (for a gluten-free option)
• olive or coconut oil (for sautéing)
• 1 tsp fresh ginger, grated
• 1 cup chard or spinach roughly chopped
• 1 cup baby bok choy, roughly chopped
• 1 tbsp sesame seeds (optional, for garnish
• 1 tsp sesame oil
• 1 green onion, finely chopped (for garnish)
• 1/2 tsp cayenne pepper powder (optional)
Cook the 🍚
Prepare the 🍄🟫
In a small bowl, whisk together the shredded oyster mushrooms + the 5 spices + soy or tamari sauce, Set aside.
In a large skillet or wok, heat the grated ginger and add the oyster mushrooms and sauté for about 5-10 minutes until they are golden brown and slightly crispy.
Cook the 🥬
In a skillet or wok, heat 1 tbsp of sesame oil over medium heat. Add the chopped bok choy and other greens to the skillet, and cook for an additional 3-4 minutes until the greens are tender but still vibrant in color. Add sesame seeds if you want.
Divide the cooked rice between bowls. Top with greens sautéed and put the mushrooms in top. Garnish with green onion and sesame seeds, if desired.
Serve warm, and enjoy this delicious and healthy Asian-inspired bowl.
Tips:
• Feel free to add other greens like spinach, kale, or choy sum for added nutrients.
• Substitute rice with cauliflower rice for a low-carb option.
