Phirni
Ingredients :-
2 tbsp basmati rice.
1 liters milk, full cream or whole.
Sugar as per required.
10 to 12 strands saffron.
4 tbsp hot milk.
2 tbsp Thandai syrup.
Recipe:-
1. Soak rice in water until it cover and set aside for 1 hour.
2. After 1 hour, drain water and grind rice in a wet grinder or small blender. Take care not to grind it too much – the rice should still be grainy and not become a powder.
3. Pour milk into a kadhai over high heat. Add ground rice just before the milk comes to a boil. Reduce heat to medium and stir well. Add saffron mixed milk, Continue stirring, cooking the milk and rice for about 40 minutes, or till thickened. Be careful that the milk does not catch at the bottom of the pan – Continuous stirring and scraping the bottom of the pan is important.
4. Add sugar and cook for another 10 minutes. The phirni will have thickened to a porridge-like consistency. Now add Thandai syrup and Dry fruits. Set aside to cool.
5. Now take the cooled down phirni and it's ready to serve with garnish of some dry fruits and saffron strands. Enjoy.
