Sausage Balls

Ingredients :

1 pound spicy pork sausage you can use mild if preferred
2 cups sharp cheddar cheese shredded
2 cups biscuit baking mix e.g., Bisquick
¼ teaspoon garlic powder
¼ teaspoon onion powder
½ teaspoon black pepper
¼ cup milk optional, for moister balls

Instructions :

Set your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and to make cleanup easier.
In a large bowl, combine the sausage, shredded cheddar cheese, biscuit mix, garlic powder, onion powder, and black pepper. If your mixture seems a little dry or you prefer moister sausage balls, add the milk. Mix until all ingredients are well combined. It's easiest to use your hands for this to ensure the ingredients are thoroughly integrated.
Roll the mixture into 1-inch balls and place them on the prepared baking sheet. Space them about an inch apart as they will expand a little while cooking.
Transfer the baking sheet to the oven and bake for 20 to 25 minutes, or until golden brown and cooked through. The sausage should be sizzling and the cheese melted and lightly browned.
Remove from the oven and let the sausage balls cool slightly on a wire rack before serving. They can be served warm or at room temperature.

Everyone welcome Duke, our new cafe manager here at Christy's Corner! We are so excited to have him on our team and we cannot wait to see what the future holds! Now, let's learn more about our new manager!

Duke is happy to be working here alongside two of his daughters, Delaney and Olivia. This is Duke's first job where he feels like he has a purpose and can make a difference in his community. He loves that he can watch his daughters thrive and he can see the impact Christy's Corner has on them.

Duke's favorite thing about working at Christy's is the positive atmosphere and being able to work with great people! He loves being able to look out at the dining room and see people that he knows, supporting our mission and our cafe. Duke also noted that he is very pleased to be a part of the community of care that Christy's Corner provides.

Duke has had to go through some difficult times to get where he is today. Just earlier this year, he had a blood clot that traveled from one leg to the other. He wasn't supposed to survive, but he did. After this scary experience, Duke knew he wanted to make a difference in his community. Duke expressed that taking this job at Christy's Corner was meant to be.

A little fun fact about Duke is that he loves to go boating in his free time! Duke is looking forward to implementing changes to Christy's menu and the 5th birthday of Christy's Corner this fall.

Garlic Parmesan Chicken and Potatoes
Ingredients:
2 chicken breasts
4-5 small/medium-sized potatoes
Olive oil
Salt, pepper, garlic powder, paprika (for potatoes)
2 tablespoons butter
1/2 teaspoon each of salt and pepper
1 teaspoon each of paprika, onion powder, and Italian seasoning
2 tablespoons minced garlic
Buffalo Wild Wings Garlic Parmesan Sauce
1 cup shredded mozzarella cheese
Directions:
Prepare the Potatoes:
Wash and peel the potatoes, then cut them into small cubes.
Toss the potato cubes with olive oil, salt, pepper, garlic powder, and paprika.
Cook the potatoes in an air fryer at 400°F for about 20 minutes, shaking them a couple of times during cooking.
Prepare the Chicken:
Cut the chicken breasts into small cubes.
Season the chicken cubes with 1/2 teaspoon each of salt and pepper, and 1 teaspoon each of paprika, onion powder, and Italian seasoning.
Cook the Chicken:
Melt the butter in a skillet over medium-high heat.
Add the seasoned chicken and cook until it reaches an internal temperature of 165°F.
Add the minced garlic and Buffalo Wild Wings Garlic Parmesan Sauce to the skillet, stirring to coat the chicken.
Combine and Finish:
Once the potatoes are done, add them to the skillet with the chicken and toss to coat with the sauce.
Sprinkle the shredded mozzarella cheese on top.
Place a lid on the skillet until the cheese melts, or broil in the oven until melted.
