NIGERIAN BUNS RECIPE

Ingredients:

• 390 grams flour (3 cups)
• 1/3 sugar
• 2 teaspoonful baking powder
• 1 teaspoonful salt
• 3 egg
• 1/3 cup liquid Milk(needed to form a thick batter) ..You can use water as a substitute
• 1/4 cup melted butter (optional)
• Nutmegs (Optional)

Nigerian Buns Preparations :

• In a bowl, add the flour, sugar, baking powder, egg, salt, and milk(or water).

• To get a lighter consistency , you can use water .

• Mix thoroughly until the dough is well in cooperated.

• If your batter is thicker, you can mold it into balls

• Heat up the oil until moderately hot (the oil should not be smoking hot or the buns will just cook outside without doing the same inside).

• Scoop the batter or molded balls and drop into the hot oil .

• Fry on medium heat for about 5 to 10 minutes, or until it turns golden brown. Always steer with your spoon.

Note: if you want the texture of the buns sold on the streets, then leave out the eggs and use water in place of milk.

Tip: When you drop the batter, it should sink to the bottom of the pot or pan. Just wait a few seconds and move it a bit with your spoon.

FLAKY MEATPIE RECIPE
For the dough
Flour 500g
Margarine 300g
Salt 1/2 tsp
Egg 1/2 (use the remaining for egg washing)
Cold water 1/2 cup +little (gradually add the water, some flour absorb more water while others absorb less)

For the sauce
Beef
Carrot
Onions
Irish potatoes
Seasoning
Curry
Salt
Veg. Oil

Measure the flour, add salt, margarine and egg. Mix very well till it's like bread crumbs. Add the water and bring everything together. DO NOT KNEAD OR OVERMIX. Wrap it and keep in the fridge.

Cut your beef into small bits, season and cook till it's soft.

Dice the veggies and set aside.

Put little amount of oil in a pot, add the chopped onions, beef and fry for one minute, add the diced potatoes and carrots, fry for another two minutes. Add the seasonings, curry and salt to taste.

Mix a little amount of flour with the beef broth and add it to cook for like 3 minutes. Taste and adjust seasoning if need be.

Bring out your dough from the fridge and fill in the sauce using your choice of cutters.

Egg wash and bake till it's golden brown.

Why I Allowed Kidnappers Take Me Away— Anambra celebrity Native Doctor, Akwa Okuko Tiwara Aki

Chukwudozie Nwangwu, a popular ‘native doctor in Oba, Idemmili local government area of Anambra State, kidnapped on Sunday night, has regained his freedom, saying that he allowed the kidnappers take him away for a greater good.

Mr Nwangwu, nicknamed Akwa Okuku Tiwara Aki – roughly translated as, the Chicken’s egg that breaks the palm kernel- was released Saturday morning, social media video clips showed.

His release has been confirmed by the Police who said they were unaware of the conditions though the native doctor was rumoured to have paid over N300 million to his abductors as ransom.

Mr Nwangwu said at about 11:30pm on Sunday, he received a call from one Okay Japan, urging him to come over to one of his hotels where the caller claimed to have spent almost N300,000 as a first timer there.

He narrated that about thirty minutes after his arrival in his new car, gunshots were fired and he lost two of his aides during the attack but decided to submit himself to the kidnappers rather than escaping, an act which might infuriate his abductors to kill other surrendered customers in the premises.

He said his attackers that wielded sophisticated arms and ammunitions, including rocket-propelled gr***de (RPG) launchers, shot at him but none penetrated.

“When I came out to know what was wrong, they began shooting at me, but I know who I am,” the native doctor explained in Igbo language in the midst of his jubilant supporters. “They subsequently dragged me into their vehicle and zoomed off.”

“If I had wanted to run, I would have run, but I had seen people they would shoot at, if I dared to run. What I did was to save the souls of others. I followed them so I would also not be accused of bringing the kidnappers.”
