MICROWAVE CORN ON THE COB
(EASY HUSK REMOVAL)

INGREDIENTS
Corn on the cob
Butter
Salt

DIRECTIONS
Place the corn, still in its husk, in the microwave. Cook on high for 3-5 minutes per ear, depending on the size of the corn. Do not overload the microwave; only do 3 small or 2 large at one time.
Carefully take the corn out of the microwave using an oven mitt or towel.
Cut off about an inch from the stem end of the corn.
Hold the uncut end of the corn and gently shake. The husk and silk should slip off easily due to the steam.
Butter, salt, and enjoy!

Elevate your dinner game with this seared tuna steak! Rare, juicy, and full of flavor. Tuna is a tasty and healthy alternative to add to your dinner rotation. Simplifying tip- Turn your leftover into delicious fish tacos using our fish taco recipe. Comment below for the fish taco recipe!

SEARED TUNA STEAK

INGREDIENTS
Tuna steak
Salt
Pepper
Olive oil
Optional- Your favorite mixed seasoning

DIRECTIONS
Pat the tuna steak dry with paper towels. Season generously with salt and pepper.
Heat a cast iron or stainless steel skillet over high heat. Add a drizzle of olive oil. Once the pan is smoking hot, carefully place the tuna steak in the pan. Cook for 1-2 minutes per side for rare, or adjust cooking time according to your desired level of doneness.
Remove the tuna from the pan and let it rest for a few minutes before slicing. This allows the juices to redistribute.

Who’s ready for this dreamy slow cooker creamy ranch chicken? Just throw in the ingredients, set it, and forget it! Dinner practically makes itself tonight. Let’s simplify life!

SLOW COOKER CREAMY RANCH CHICKEN

INGREDIENTS
8 oz container of chive and onion cream cheese
10.5 oz can cream of chicken soup
1 cup milk
1 oz package of ranch dressing mix
½ tsp garlic powder
½ tsp pepper
4 - 6 skinless, boneless chicken breast
2 cups Minute rice
Bacon bits for serving

DIRECTIONS
Grease the inside of a slow cooker.
In a microwavable bowl, microwave cream cheese spread for 25 - 30 seconds (soft enough to be stirred).
Add soup, milk, dressing mix, garlic, and pepper to bowl and whisk together.
Place chicken in the bottom of the slow cooker. Pour mixture on top of chicken.
Cook for 4 hours on low.
Right before the chicken is done, make Minute rice according to box instructions.
Serve chicken over rice and top with bacon bits.

Sheet pan Tuscan pork loin is the answer to your busy weeknight. Marinate overnight, pop it in the oven, and dinner is practically served! Tender, flavorful pork with roasted veggies - what's not to love?

Let’s simplify life!

SHEET PAN TUSCAN PORK LOIN

INGREDIENTS
⅓ cup balsamic vinegar
4 cloves garlic, minced
⅓ cup grapeseed or olive oil for marinade + ¼ cup for veggies
4 tsp dried oregano
2 tsp salt
1 tsp pepper
2 pork tenderloins, 1 pound each
4 sweet potatoes, diced
3 shallots
2 Tbsp brown sugar

DIRECTIONS:
Whisk together marinade ingredients: balsamic vinegar, oil, oregano, salt, and pepper.
Place pork loins into a resealable bag. Pour marinade into bag with pork loins and seal. Allow to soak for 8 - 24 hours.
When ready to cook, preheat oven to 450𝇈F.
Toss the sweet potatoes and shallots in ¼ cup oil and brown sugar.
Place shallots, sweet potatoes, and pork loins on two separate lined baking sheets.
Roast for 30 minutes, stirring vegetables halfway through cooking time.
Pork should be cooked to an internal temperature of 145𝇈F and vegetables should be fork tender.

HAMBURGER SLIDERS

INGREDIENTS
2 lbs ground beef
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tbsp Worcestershire sauce
12 pack Hawaiian rolls
*Toppings of your choice

DIRECTIONS
In a large bowl, combine ground beef, seasonings, and Worcestershire sauce.
Form the meat into 12 equal size patties.
Heat a large skillet over medium-high heat with a drizzle of olive oil. Cook the patties in batches for 4-5 minutes per side, or until cooked to your desired level of doneness.
Top with your favorite condiments and toppings.

GREEK CHICKEN BOWL

INGREDIENTS
1-2 lbs. Chicken breast
1 cucumber, diced
3 roma tomatoes, chopped
½ red onion, diced
1 cup crumbled feta cheese
1 cup pitted kalamata olives, halved

For marinade:
¼ cup olive oil
1 tbsp minced garlic
2 lemons, juiced
1 tbsp honey
1 tbsp italian seasoning
S & P

DIRECTIONS
Chop all of your vegetables, combine, and set aside
Slice chicken into strips
Combine all the marinade ingredients
Use half of the marinade on the chicken and half on the vegetables
Saute the chicken until cooked through and browned
Build your bowl using your choice of couscous, rice, quinoa, or just veggies.

Crispy on the Outside, Fluffy on the Inside: Roasted Garlic Potatoes. Let's be honest, roasted potatoes are a side dish MVP. But these roasted garlic potatoes take it to the NEXT LEVEL. The slow-roasted garlic infuses incredible flavor, making them insanely delicious. Let’s simplify life!

ROASTED GARLIC POTATOES

INGREDIENTS
4-6 medium gold potatoes
4 Tbsp butter
1 Tbsp garlic powder
Salt and pepper to taste

DIRECTIONS
Preheat oven to 375 F
Wash potatoes and cut into small pieces.
Place potatoes into a large casserole dish (line dish with parchment paper for easy clean up)
Melt butter and pour over potatoes.
Add garlic powder, salt, and pepper. Stir to mix in seasoning
Bake for 30 minutes. Remove from the oven and stir potatoes.
Put potatoes back into the oven and cook for another 20-30 minutes or until potatoes are fork tender.

SIMPLIFY TIP: Potatoes can be peeled if desired, but we usually leave the peel on for less prep time. Also a bag of small petite potatoes can be used - just cut them in quarters for roasting.

There's just something about a steaming bowl of chicken and dumplings that brings back all the cozy feels. This classic comfort food is perfect for whenever you need a hug! Let’s simplify life!

CHICKEN & DUMPLINGS

INGREDIENTS
1 to 1.5 pounds of chicken, cooked and chopped
4 Tbsp salt
1 package of frozen dumplings
6 - 8 whole carrots (optional)
1 can cream of chicken
6 - 7 cups chicken broth

DIRECTIONS
Place 8 cups of water and 4 Tbsp of salt in a large pot and boil chicken until cooked thoroughly (roughly 30-35 minutes).
Peel whole carrots and cut into thin slices; set to side.
When chicken is done, remove and set to the side for chopping.
Add cream of chicken and carrots to chicken broth that was made by cooking the chicken.
Cook dumplings of choice per package instructions. While dumplings are cooking, chop chicken. Add back to the pot when dumplings are tender.

SIMPLIFY TIP: A rotisserie chicken can be used; just sub chicken broth from the store to cook the dumplings.

The salty crunch of pecans paired with the delicate flavor of salmon is a match made in heaven! This pecan-crusted salmon is a flavor explosion you won't want to miss. This meal is quick and easy and will have dinner done in 20 minutes! Let’s simplify life!

PECAN CRUSTED SALMON

INGREDIENTS
1-2 lbs salmon filets
2 tbsp honey
1 tbsp soy sauce
1 cup chopped pecans
2 tbsp butter melted
S & P
1 tbsp olive oil (or any oil for greasing the pan)

DIRECTIONS
Preheat oven to 400℉
Grease your baking dish and season fish
Combine the honey and soy sauce. Brush onto fish
In a separate bowl combine melted butter and pecans.
Top the salmon with the pecans
Bake for 9-11 minutes

Takeout who? This steak ramen stir-fry is ready in under 30 minutes, making it the perfect solution for busy weeknights. Packed with protein and flavor, it'll leave you feeling satisfied and happy.

STEAK RAMEN STIR-FRY

INGREDIENTS
1-2 lbs sirloin steak
2 tbsp olive oil
Any stir fry vegetables chopped
2 packages ramen noodles
2 ½ cups water
¼ cup soy sauce
3 tbsp sugar
1 tbsp cornstarch
S & P

*For stir-fry vegetables I used 2 carrots, 1 zucchini, 8 oz fresh mushrooms, 1 small onion, 1 head of broccoli. You could also buy a bag of chopped stir-fry vegetables.

DIRECTIONS
Cut beef into thin strips. Heat olive oil over medium heat and cook beef in a deep skillet for 3-5 minutes, until browned. Remove from the skillet.
Add water to the skillet and bring to a boil. Add the ramen (including the flavor packets) and vegetables to the skillet. Boil 5 to 7 minutes until vegetables are tender.
While the ramen and vegetables are cooking, combine the soy sauce, sugar and cornstarch.
Add the soy sauce mix and beef back to the skillet. Cook until the sauce starts to thicken, stirring frequently.
Allow it to cool for a few minutes before serving. The sauce will continue to thicken.

SLOW COOKER BREAKFAST CASSEROLE

INGREDIENTS
32 oz frozen hash browns
1 package bacon, cooked and crumbled
2 cups sharp cheddar cheese (shredded)
1 red bell pepper, diced
1 green bell pepper, diced
12 eggs
1 cup milk
1 ½ tsp dry mustard powder
1 tsp salt
1 tsp garlic powder
½ tsp black pepper

DIRECTIONS
Prep beforehand: Cook and crumble bacon. Remove seeds and dice red and green peppers.

Grease a large slow cooker. Place half of the hash browns, bacon, peppers, and cheese into the slow cooker. Repeat layers again by ending with cheese (do not stir ingredients).
Whisk eggs, milk, and all seasonings in a bowl.Pour over ingredients in the slow cooker.
Cook on low for 7-8 hours or high for 3-4 hours.
Once cooked, uncover and allow the casserole to rest for 15 minutes.

You’ve got to try these pork chops! These tender pork chops are bathed in a bright and flavorful orange sauce, making for a quick and delicious weeknight meal. Added bonus is that your kitchen will smell wonderful after cooking. Let’s simplify life!

PORK CHOPS IN ORANGE SAUCE

INGREDIENTS
4 pork chops, 1 inch thick
2 Tbsp cooking oil
Paprika
Salt and pepper

For the orange sauce:
½ cup orange juice
5 Tbsp sugar
1 & ½ tsp cornstarch
2 tsp grated orange zest
¼ tsp ground cinnamon
5 whole cloves
¼ tsp salt
3 orange slices (use the same orange that was zested)

DIRECTIONS
Heat cooking oil in a skillet over medium-high heat.
Lightly sprinkle pork chops with salt, pepper, and paprika.
Place pork chops in a skillet and brown on each side for 2-3 minutes.
Reduce heat to low and add 2 Tbsp of water. Cover and allow pork chops to cook, turning every 2-3 minutes, until pork chops are cooked throughout.
While pork chops are cooking, in a saucepan add orange juice, sugar, cornstarch, orange peel, cinnamon, cloves and salt. Stir until sauce thickens and becomes more clear. Allow to boil/bubble on low-medium heat for 5-6 minutes.
Remove saucepan from heat and add orange slices to sauce; allow sauce to sit for 5 minutes.
Remove pork chops from skillet and spoon orange sauce on top.

ROASTED GREEN BEANS

INGREDIENTS
1 pound fresh green beans, trimmed
1 tablespoon olive oil
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 clove garlic, minced (Optional)

DIRECTIONS
Preheat your oven to 400°F.
Line a baking sheet with parchment paper.
Wash and trim the green beans. You can leave them whole or chop them into bite-sized pieces, depending on your preference.
In a large bowl, toss the green beans with olive oil, salt, and pepper. You can also add the minced garlic here for extra flavor.
Spread the green beans in a single layer on the prepared baking sheet.
Roast for 15-20 minutes, or until the green beans are tender-crisp and slightly browned.

Weeknight Dinner Win! Looking for a delicious and EASY dinner idea? Look no further than this Honey Soy Pork Loin! This flavorful dish is perfect for a busy weeknight, and it's sure to impress your family and friends. Let’s simplify life!

HONEY SOY PORK LOIN

INGREDIENTS
2 pounds of pork loin (1 pound each)
2 Tbsp cooking oil
1 Tbsp minced garlic

FOR THE RUB:
1 tsp garlic powder
1 tsp paprika
1 tsp salt
1 tsp black pepper

FOR THE HONEY SOY SAUCE:
3 Tbsp apple cider vinegar
2 Tbsp soy sauce
½ cup honey

DIRECTIONS
Preheat oven to 350𝇈F.
In separate bowls, mix rub and honey soy sauce ingredients.
Sprinkle rub mixture over the entire pork loins.
In an oven safe skillet, heat cooking oil over high heat. Add pork loins and sear until golden all over.
When you rotate to the last side to sear, add garlic to the skillet and allow to cook until pork loins are done searing.
Pour honey soy sauce into the skillet and turn the pork loins so that all sides have been sauced.
Transfer skillet to oven and cook for 16 - 18 minutes or until pork is 145𝇈F.
Remove pork and place on a plate. Cover loosely with tin foil and allow to rest.
Place the skillet with the sauce back on the stove. Over medium heat, simmer for 3 minutes until liquid starts to thin to a syrup.
Remove from heat and add pork loin back to the skillet. Cover pork in the sauce and serve.

Dinner practically cooks itself tonight! Slow cooker chicken and rice with vegetables is an all-in-one recipe. Let’s simplify life!

SLOW COOKER CHICKEN & RICE

INGREDIENTS
4-5 pound whole chicken
2 celery ribs, chopped
3 whole carrots, chopped
½ cup salted butter, melted
1 tsp salt
¼ tsp pepper
2 tsp Italian seasoning
½ tsp paprika
2 cups minute rice

DIRECTIONS
Remove any extra parts from the whole chicken and discard.
Chop celery and carrots and add them to the bottom of a large slow cooker.
Add the chicken to the slow cooker.
Pour melted butter on top of the entire chicken and sprinkle seasonings all over.
Cover and cook on low for 7-8 hours (high for 5-6 hours).
Remove the chicken and set aside on a platter.
Remove some of the liquid from the slow cooker; leave only 2 cups of liquid and the vegetables.
Pour in 2 cups of minute rice and replace the lid. Cook for 40 minutes on High.
Serve pieces of chicken with the vegetable and rice mixture.

Taco Tuesday….not this week. Calling all nacho lovers! Our Simple Supreme Nachos are a mountain of crispy chips, melty cheese, beefy goodness, and all of your favorite toppings. Who wants to join us for a plate (or two) of our Supreme Nachos?

SIMPLE SUPREME NACHOS

INGREDIENTS
1 pound ground beef or venison
2 cloves minced garlic
1 Tbsp Taco seasoning
½ tsp salt
15 oz can refried beans
¼ cup water
2 cups shredded sharp cheddar
2 cups shredded monterey jack
15 oz can black beans, drained
1 large bag tortilla chips

TOPPINGS:
Tomato
Avocado
Cilantro
Sour cream

DIRECTIONS
Preheat oven to 425𝇈F.
In a large skillet on medium heat, cook ground beef until no longer pink. Drain grease.
Add garlic, taco seasoning, and salt to the skillet with ground beef. Cook until meat is well browned and slightly crispy, about 5 minutes.
Add refried beans and water to the skillet and stir until well combined.
Arrange ⅓ of tortilla chips on a lined baking sheet. Top with ⅓ beef-bean mixture, ⅓ cheese mixture, and ⅓ drained black beans.
Repeat layers of chips, beef-bean mixture, cheese, and black beans.
Bake nachos until cheese is melted, about 15 minutes.
Add toppings and serve warm.

INGREDIENTS
3 cups shredded rotisserie chicken
2 can cream of chicken soup
3 cups frozen vegetable mix
2 cups Colby Jack cheese, shredded
1 can biscuits (homestyle or flaky layers work best)
2 Tbsp butter, melted

DIRECTIONS
Preheat an oven to 375𝇈F. Lightly grease a 9x13 baking dish.
In a large bowl, stir together chicken, cream of chicken soup, vegetables, and cheese until mixed thoroughly.
Pour mixture into the baked dish.
Cut biscuits into quarters and place in a small bowl. Drizzle with melted butter and toss to coat.
Spread biscuits over chicken mixture.
Bake for 20 minutes or until biscuit pieces are baked through.

GRILLED SQUASH AND ZUCCHINI

INGREDIENTS
3 medium yellow squash
3 medium zucchini
2 Tbsp cooking oil
1 Tbsp onion powder
1 Tbsp garlic powder
Salt and pepper to taste

DIRECTIONS
Cut squash and zucchini into ¼ inch rounds and place in a bowl.
Add cooking oil, onion powder, garlic powder, salt, and pepper and toss to coat evenly.
Place squash and zucchini into a grilling pan.
Grill until fork tender.

Skip the store-bought marinade…Who's ready for insanely flavorful grilled chicken? Marinate your chicken breast in this magic, then throw it on the grill for perfectly tender, delicious chicken everyone will crave! Let’s simplify life!

GRILLED CHICKEN MARINADE

INGREDIENTS
2 Tbsp grapeseed oil
4 cloves minced garlic
3 Tbsp red wine vinegar
1 tsp Italian herbs
2 tsp salt
1 tsp pepper
2 pounds boneless, skinless chicken

DIRECTIONS
Mix all marinade ingredients in a bowl.
Place chicken in a large ziploc bag and pour in marinade.
Close bag and shake up to ensure marinade coats all pieces. Allow bag to sit in refrigerator for 2 hours or overnight.

To grill: Heat grill to 350𝇈F and cook for 40 minutes, turning every 10 - 15 minutes. Internal temperature should reach 165𝇈F.

This smash burger is a fun spin on regular burgers. And it has the Ultimate sauce! This sauce is the perfect partner for your griddle-pressed burgers! Let’s simplify life!

SMASH BURGER

INGREDIENTS
1 pound ground beef, 80/20
1 tsp salt
1 tsp pepper
6” flour tortillas
5 slices of provolone cheese

BURGER SAUCE:
½ cup mayonnaise
½ tsp paprika
½ tsp onion powder
¼ tsp garlic powder
½ tsp yellow mustard
2 Tbsp minced bread & butter pickles
1 tsp pepper
¼ tsp Worcestershire sauce

DIRECTIONS
Whisk together all burger sauce ingredients. Refrigerate until ready to use.
Turn griddle on high heat.
While griddle is heating, roll ground beef into 1.5” diameter balls.
In a bowl, combine salt and pepper. Roll each ball into salt and pepper seasoning.
Place each ball on the hot griddle and top with a tortilla.
Firmly press down on top of the tortilla with a spatula or meat press. Smash the meat until it is thin.
Allow to cook for 1 minute and then mash again to release grease from around the edge.
Leave the smash burger to cook for another 2-3 minutes.
Use a spatula to scrape under the burger and flip over the tortilla.

Tired of boring pork chops? Level up your dinner game with this EASY & FLAVORFUL marinade! Whisk it all together, toss in your pork chops, and let them marinate for at least 2 hours (or up to overnight for maximum flavor). Let’s simplify life!

GRILLED PORK CHOP MARINADE

INGREDIENTS
½ cup grapeseed oil
⅓ cup soy sauce
3 Tbsp brown sugar (or honey)
2 Tbsp Dijon mustard
3 cloves minced garlic
¼ tsp pepper
5-6 bone-in pork chops, 1” thickness

DIRECTIONS
Mix all marinade ingredients in a bowl.
Place pork chops in a large ziploc bag and pour in marinade.
Close bag and shake up to ensure marinade coats all pork chops. Allow bag to sit in refrigerator for 2 hours or overnight.

To grill: Heat grill to 425𝇈F and cook for 15 minutes, turning halfway through time. Internal temperature should reach 140𝇈F.

Wow! This creamy no-bake banana pudding is AmAzInG!! With only 5 ingredients, it’s ready in minutes. And the best thing about it….no baking needed. This is the perfect dessert to take to that July 4th party. Let’s simplify life!

NO BAKE BANANA PUDDING

INGREDIENTS
5.1oz box of vanilla instant pudding
3 cups cold milk
4 medium to large bananas, thinly sliced
8 oz Cool Whip
1 box of Nilla Wafers

DIRECTIONS
Prepare instant pudding per package directions.
After pudding is mixed, stir in half of the Cool Whip until well blended.
In a 9 x 13 baking dish, line Nilla wafers on the bottom of the dish.
Place a layer of thinly sliced bananas over the wafers.
Spread half the pudding-Cool Whip mixture over the bananas.
Repeat the layers another time.
Spread the remaining container of Cool Whip on top.
Refrigerate for 2 hours or overnight.
Serve chilled.

Comfort Food Craving Alert! Who's ready for a dinner that's pure nostalgia? This juicy hamburger steak smothered in rich, savory gravy is the ultimate comfort food. Pair it with mashed potatoes and your favorite greens for a meal that warms the soul. Let’s simplify life!

HAMBURGER STEAK & GRAVY

INGREDIENTS
1 pound ground beef
1/2 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
1/4 tsp pepper
1/2 tsp ground mustard
1 Tbsp Worcestershire
1/2 Tbsp butter
mushrooms (optional)

Gravy:
2 cups beef broth
1/4 tsp garlic powder
1/2 tsp pepper & salt
2 tsp Worcestershire
1/2 cup cold water
3 Tbsp cornstarch

DIRECTIONS
Mix ground beef, garlic & onion powder, salt, pepper, ground mustard, and Worcestershire. Make small patties that are thin (~1/4 inch thickness).
Heat butter in a skillet on medium-high heat.
Add patties to skillet and cook on each side for 4 minutes (until cooked thoroughly).
Optional to add mushrooms - after patties are cooked, add sliced mushrooms to the same skillet and cook until tender (4-5 minutes).
To make the gravy, add beef broth to a sauce pan and bring to a boil on medium-high heat.
Stir in garlic powder, salt, pepper, and Worcestershire.
In a bowl, combine cold water and cornstarch until dissolved. Remove saucepan from heat and whisk cornstarch mixture into sauce pan until gravy has thickened.

SIMPLIFY TIP: Great for serving with mashed potatoes. No time for real mash potatoes...use instant potatoes for a quick side dish.
