Jam Tarts
𝙸𝚗𝚐𝚛𝚎𝚍𝚒𝚎𝚗𝚝𝚜
• 2 cups cake flour
• 1 tsp baking powder
• ¼ cup sugar
• 125g butter
• 1 egg
• 5 ml vanilla extract
• 250g smooth apricot jam
𝙸𝚗𝚜𝚝𝚛𝚞𝚌𝚝𝚒𝚘𝚗𝚜
• Preheat oven to 180C.
• In a bowl, mix together the flour, baking powder and sugar.
• Rub the butter into the dry ingredients.
• Add vanilla and egg then mix well.
• Press 2/3 of the dough into the prepared baking tray.
• Spread on the apricot jam to cover the dough.
• Grate the remaining dough then sprinkle onto the jam layer.
• Bake for about 20 to 30 minutes or until golden brown and cooked through.
• Remove from the oven and cut into squares in the tin while still warm.
Leave to cool completely before removing from the tray.
