Jam Tarts

𝙸𝚗𝚐𝚛𝚎𝚍𝚒𝚎𝚗𝚝𝚜

• 2 cups cake flour
• 1 tsp baking powder
• ¼ cup sugar
• 125g butter
• 1 egg
• 5 ml vanilla extract
• 250g smooth apricot jam

𝙸𝚗𝚜𝚝𝚛𝚞𝚌𝚝𝚒𝚘𝚗𝚜

• Preheat oven to 180C.

• In a bowl, mix together the flour, baking powder and sugar.

• Rub the butter into the dry ingredients.

• Add vanilla and egg then mix well.

• Press 2/3 of the dough into the prepared baking tray.

• Spread on the apricot jam to cover the dough.

• Grate the remaining dough then sprinkle onto the jam layer.

• Bake for about 20 to 30 minutes or until golden brown and cooked through.

• Remove from the oven and cut into squares in the tin while still warm.

Leave to cool completely before removing from the tray.

𝙱𝚛𝚎𝚊𝚔𝚏𝚊𝚜𝚝

𝙿𝚊𝚗𝚌𝚊𝚔𝚎𝚜 𝚁𝚎𝚌𝚒𝚙𝚎 🥞

∙Ingredients
∙2 and ½ cups flour
∙3 teaspoons baking powder
∙½ teaspoon salt
∙1 tablespoon sugar
∙1 and ¼ cups milk
∙1 egg
∙3 tablespoons butter, melted
∙1 teaspoon vanilla

Instructions

Stir together flour, baking powder, salt, and sugar in a bowl. Add in milk, egg, butter, and vanilla and whisk until evenly distributed.
Lightly coat a large pan with butter and heat over medium-low heat.
Pour in ¼ cup batter.
Flip when bubbles appear. Cook opposite side until slightly golden. Repeat with remaining batter, coating pan again with butter after each batch.

𝙵𝚛𝚒𝚎𝚍 𝙵𝚒𝚜𝚑

∙ Hake fillets
∙15ml lemon juice
∙Black Pepper
∙250ml flour
∙20ml Spice for Fish
∙10ml Parsley
∙3 eggs
∙5ml Salt
∙2 cups Oil

𝙸𝚗𝚜𝚝𝚛𝚞𝚌𝚝𝚒𝚘𝚗𝚜

1.In a bowl whisk the eggs together with the Salt.

2.In a separate bowl marinade the hake fillets in the lemon juice and a pinch of Black Pepper.

3.In another bowl mix flour together with the Spice for Fish and Dried Parsley.

4. Heat the oil in thick based pan.

5.While the oil is heating dip the hake fillets in the seasoned flour until well coated and then into the egg mixture.

6.When the oil is hot enough, fry the fish for 5 minutes turning once or until golden brown.
