BANANA PUDDING

Ingredients:
* 4-6 ripe bananas, sliced
* 1 box (3.4 oz) instant vanilla pudding mix
* 1 cup cold water
* 1 cup milk/cream
* 8 oz cream cheese, softened
* 1 cup heavy cream
* 1 pack vanilla wafers or in my case i used 2 bags og eggnog 😂
Instructions:
* In a mixing bowl, prepare the instant vanilla pudding. Combine condensed milk, water and milk. Add the vanilla pudding mix. Mix until well combined. Allow it to set in the refrigerator for about 5-10 minutes.
* In a separate bowl, beat the softened cream cheese until smooth and creamy.
* Add the softened cream cheese to pudding mix.
* In another bowl, whip the heavy cream until it starts to thicken. Gently add the cream cheese mixture into the whipped cream. Mix until fully incorporated.
* In a serving dish, begin layering the dessert. Start with a layer of pudding mixture, followed by vanilla cookies and then a layer of sliced bananas.
* Repeat the layers until all the ingredients are used up, finishing with a layer of the pudding mixture on top.
* Optionally, you can crush a few vanilla cookies and sprinkle them on top.
* Cover the dish and refrigerate for at least 2-3 hours, allowing the flavors to meld and the pudding to set.
* Serve the banana pudding chilled.

SMORES COOKIE 🍪
* 1/2 cup (1 stick) butter
* 1/4 cup granulated sugar
* 1/4 cup packed brown sugar
* 1 teaspoon vanilla extract
* 1 egg
* 1 1/4 cups all-purpose flour
* 1/4 teaspoon baking soda
* 1/4 teaspoon salt
* 1/4 cup chocolate chips
* 5-6 pcs mallow pie or just use graham and marshmallow
Instructions:
* In a large mixing bowl, cream together the butter, granulated sugar, brown sugar until the mixture is light and fluffy.
* Add the egg and vanilla. Mix well until combined.
* Mix together the flour, baking soda and salt. Mixing until just combined.
* Gently fold in the chocolate chips.
* Chill the dough for 15 minutes before scooping.
* Using a spoon or cookie scoop, scoop the dough and flatten it. Place the Mallow Pie onto the flatten cookie dough and seal it with another scoop of flatten cookie dough.
* Chill for another 30 minutes or overnight.
* Preheat your oven to 375°F (190°C).
* Bake in the preheated oven for about 17 minutes, or until the edges are golden brown.
* Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Ube-Flavored Muffins 💟💜🍠
Ingredients:
* 2 cups all-purpose flour
* 1 cup white sugar
* 1 tablespoon baking powder
* 1/2 teaspoon salt
* 2 tablespoon Ube powder (optional)
* 1 cup milk
* 1/2 cup melted butter/ veg oil
* 2 eggs
* 1 tablespoon ube extract (for flavor)
Filling:
* Cream Cheese (optional)
Instructions:
* Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
* In a large mixing bowl, whisk together the dry ingredients: all-purpose flour, sugar, baking powder, salt and ube powder (optional).
* Mix in the milk, butter, eggs and ube extract. Mix until well combined. Avoid overmixing; a few lumps are okay.
* Spoon the batter into the prepared muffin tin.
* Bake in the preheated oven for approximately 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
* Once done, remove the muffins from the oven and allow them to cool in the tin for a few minutes. Then, transfer them to a wire rack to cool completely.

Oreo Nutella Cookies 🍪
Ingredients:
For the Cookie Dough:
* 1/2 cup unsalted butter, softened
* 1/4 cup brown sugar
* 2 tbsp white sugar
* 1 egg
* 1 teaspoon vanilla extract
* 210g all-purpose flour
* 1/2 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1/4 teaspoon salt
* 1/2 cup crushed oreos.
For the Filling:
* Nutella or any hazelnut chocolate spread
Instructions:
Preparing the Nutella Filling:
*Scoop out 1 tablespoon of Nutella and place it on a piece of parchment paper. Freeze it for approximately 30 minutes until it becomes firm.
Making the Cookie Dough:
* In a large mixing bowl, cream together the softened butter , brown sugar and white sugar until light and fluffy.
* Add the egg and vanilla extract to the butter-sugar mixture and beat until well combined.
* Whisk together the flour, baking powder, baking soda. Mix until a cookie dough forms.
* Add the crushed oreos. Mix until well combined.
* Scoop out a portion of the cookie dough and gently flatten it in the palm of your hand. Take the previously frozen Nutella and place it in the center of the dough.
* Fold the cookie dough around the Nutella, sealing it completely to form a ball. Make sure there are no Nutella leaks.
* Place the Nutella-stuffed cookie balls on the prepared baking sheet, leaving some space between each one.
* For the best results, chill the cookie dough balls for a minimum of 30 minutes. Alternatively, you can chill them overnight. If you're in a hurry to bake, a 15-30 minute freeze also works well to prevent over-spreading during baking.
* Preheat your oven to 350°F (175°C).
* Bake in the preheated oven for 15 minutes or until the edges are golden brown. The center will be soft but will firm up as the cookies cool. (This is a 100g cookie, if you prefer smaller cookies, adjust the cooking time accordingly.
* Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Nutella Bread 🍫🌰🥖
For the Dough:
* 1 3/4 cups all-purpose flour
* 2 tablespoon granulated sugar
* 1 1/2 teaspoons active dry yeast
* 1/2 teaspoons salt (skip if you are using salted butter)
* 2 eggs
* 3 tablespoon milk
* 1/2 cup unsalted butter, softened and cut into small pieces
For ghe filling:
Nutella ( depends on how much nutella you want.)
For the Egg Wash:
* 1 egg
* 1 tablespoon milk
Instructions:
* In a mixing bowl, combine the flour, sugar, yeast and salt.
* Add the eggs and milk. Mix until a dough forms.
* Knead the dough on a floured surface or on a electric mixer for about 10 minutes until it becomes smooth and elastic.
* Gradually add the softened butter, a few pieces at a time, while continuing to knead. Keep kneading until all the butter is incorporated and the dough is glossy.
* Place the dough in a greased bowl with cover and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.
* Punch down the risen dough and divide it into 6 equal portions.
* Flatten each portion and add the Nutella. Seal the edges making sure that the filling won't leak out and place them on a baking sheet lined with parchment paper, leaving some space between each bun.
* Cover the buns and let them rise for about 30-45 minutes, until they are puffy.
* Preheat your oven to 375°F (190°C).
* Brush the dough buns with egg and milk mixture.
* Bake the buns in for about 15-20 minutes (adjust baking time based on the bun size) or until they are golden brown.

Whipping up some magic in my trusty OMEGA baking dish 🍰✨
TRES LECHES
For the cake:
* 1 cup all-purpose flour
* 1 1/2 tsp baking powder
* 1/4 tsp salt
* 5 eggs, separated
* 1 cup granulated sugar
* 1/3 cup whole milk
* 1 tsp vanilla extract
For the three milks mixture:
* 1 can condensed milk
* 1 can evaporated milk
* 1 cup whole milk (i did use heavy cream 😂)
For the topping:
* 2 cups heavy cream
* 1/2 cup powdered sugar
* 1 tsp vanilla extract
Instructions:
* Preheat your oven to 350°F (175°C).
* In a bowl, combine egg yolks, 3/4 cups sugar and milk.
* In another bowl whisk together the flour, baking powder, and salt. Set aside. Pour in the egg yolk mixture and vanilla extract. Mix until well combined.
* In a separate bowl, beat the egg whites until soft peaks form. Gradually add the remaining 1/4 cup of sugar and beat until stiff peaks form.
* Gently fold the beaten egg whites into the cake batter until just combined.
* Pour the batter into the prepared baking dish and spread it evenly.
* Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted into the center comes out clean.
* While the cake is baking, prepare the three milks mixture by combining the sweetened condensed milk, evaporated milk, and whole milk in a bowl.
* Once the cake is done, remove it from the oven and let it cool for a few minutes. Then, using a fork or skewer, poke holes all over the cake.
* Pour the three milks mixture evenly over the warm cake, allowing it to soak in.
* Refrigerate the cake for at least 2 hours, or overnight if possible, to allow it to absorb the milks.
* Whip the heavy cream with powdered sugar and vanilla extract until it forms stiff peaks. Spread the whipped cream over the chilled cake.
* You can garnish the Tres Leches cake with fresh fruit or a sprinkle of cinnamon if desired.
