I have 3 versions of Dinuguan. And this is one of my best versions.
Dinardaraan is the kind of Dinuguan that has lesser sauce to the point of it being dry.
Pork innards, specifically ISAW ( Large Intestine ) should be toasted and super crispy. Added LAPAY as well because it adds a creamy texture aside from the crisp from isaw. Lapay is soft and melts in your mouth and has this creamy taste.
Pork Kasim should not be toasted because it is much better when it's just soft and tender and also melts in your mouth.
Also, sauted aromatics such as grated ginger, garlic, onion, sili haba and lemon grass add much flavor to this dish and are a must. Sili haba should be added from the start and not in the end because it will give a nice kick of heat.
Vinegar should be reduced before adding pork blood. This technique would not make your Dinuguan too sour. It will balance the flavor and give just the right blend of salty and sour.
Overall, this recipe has different textures on your mouth and not just all crispy.
Very traditional and classic.
Again, best paired with hot rice or P**o.

Or Japanese Beef Lengua Curry with Coconut Cream
This is my take on the Classic Japanese Curry. This is not so traditional because I added some ingredients to give more flavor on the dish but lighter on the palate. Kids would also love this!
Usually, Japanese Curry is paired with Katsu, or Beef Sukiyaki. This time, I used Beef Lengua or Beef Tongue because, why not? Let’s break the usual Lengua Estofado dish we know and love.
Beef Lengua is also best paired with Japanese Curry because it has this distinct taste that cannot be overpowered by the curry. Also, we all want something that melts in our mouth and Beef Tongue is perfect for that. This dish is savory and not sweet. And best served with hot rice.
Also, Beef Tongue in Japanese is called Gyūtan.
Beef Lengua is Spanish. The most commonly used term.
