KFC style fried CHICKEN 😋
Ingredients:
10 pieces of chicken (preferably thighs and legs with skin
2 cups of wheat flour
5 tablespoons cornstarch
2 eggs
1 cups of evaporated milk
1 tablespoon mustard
1 tablespoon chicken or meat seasoning
1 tablespoon minced garlic
Salt and pepper to taste
oil for frying
Preparation:
1. Wash and dry the chicken pieces well. Then, they are seasoned with a little salt and pepper.
2. In a large pot, place the chicken pieces and fill with water until half covered. Then, place it over low heat for 10 minutes with the pot lid on.
3. While cooking, prepare 2 large bowls. In the first, place the flour, cornstarch, ground garlic and seasoning and stir well. In the other, the eggs, milk, mustard, salt and pepper will be placed and must be stirred very well with a fork.
4. Once the cooking time has passed, the chicken must be removed from the water and dried well. Once this is done, pass each piece of chicken through the flour, then through the egg and again through the flour, making sure that it is very well covered, and take them to the refrigerator for a couple of minutes.
5. Meanwhile, in a stockpot or high skillet, heat enough oil to submerge the chicken over medium heat.
6. Once it's hot. Remove the chicken from the refrigerator and dip 2 to 3 pieces in the oil, frying until nicely browned on all sides, but without burning the chicken or the oil.
7. Once fried, leave the chicken pieces to rest on a plate with absorbent paper so that excess oil is removed.

Egg roll.

Ingredients

2 Cups Flour
1 Egg
1 Tsp Baking powder
1/4 Tsp Salt
1/2 Tsp Nutmeg
2 Tbsp Margarine
8-9 Tbsp Water
5 Eggs Boiled
2 Tbsp Sugar

Instructions
-In a large bowl, mix together the Flour, Baking powder, Salt, Sugar and Nutmeg

-Use your fingers to blend the Margarine into the flour until it’s crumbly.

-Add the beaten egg and mix together. The dough should look dry at this point.

-Begin to introduce the water a little at a time and work the dough till dough is soft and sticky but still workable.

-work the dough for about a minute then cover it and let it rest for about 15 to 20 minutes.
-Work the dough again for a couple of seconds to a minute and divide it into 5.

-Tightly wrap each of the dough around each Egg.

-Fry on a medium heat turning over and over again until it’s golden brown.

-Serve your Egg Roll hot or warm. Enjoy!

Please note:
'Do not wrap all the eggs at once except you are ready to fry them right away. Only wrap as you fry. If you do otherwise, the dough around the egg will continue to rise. This will cause the dough to lose its snug fit around the egg by the time you fry.

-The Egg Rolls should be fried on medium heat. Frying on a high heat will prevent the Egg Roll from cooking on the inside. Don’t worry the Egg Roll will not get soggy in the Oil as long as the Oil is not cold.

-Use enough Oil to deep fry in other to get the best result.

-You can also bake this if you choose to, but the Egg Roll will not be as soft on the inside as the deep fried.

How To Make Sardine At Home

To make sardines at home, you will need
fresh sardines, some basic ingredients, and

cooking equipment. Here's a simple recipe to make grilled sardines:

Ingredients:
- Fresh sardines (cleaned and gutted)
- Olive oil
- Lemon wedges
- Salt
- Pepper
- Fresh herbs (optional, such as parsley or thyme)

Instructions:

1. Clean the sardines: Rinse the sardines under cold water and pat them dry with paper towels. Remove the scales, if any, by scraping them off with a knife. Cut off the heads and tails if desired.

2. Preheat the grill: Heat your grill to medium-high heat. If you don't have a grill, you can also cook the sardines in a grill pan or broil them in the oven.

How to make plantain Egg pizza

👉2ripe plantain
👉7eggs
👉 Vegetable oil
👉Seasoning cube
👉Basil leaf or curry leaf
👉Red ball peppers
👉1 fresh tomato
👉Onion
Preparations
Peel off the skin and cut the plantain into any preferred shape you like. Add little salt. Then you shallow fry the plantains once the plantain are golden brown. Scoop them out. Add oil in another pan. Add onions. After one minute, add scotch bonnet and 1 tomatoes. Add red pepper,add seasoning cubes. You can also add thyme if you like the taste. Fry all for two mins. At this point you will pour in the 7 eggs. You have to low your gas. Then add in your fried plantain gently by arranging it. Let it simmer on low heat.
Add basil leaf or little curry leaf on top. Once it harderns up. It is ready. It is a breakfast idea.

Catfish pepper soup.

Ingredients:
1.2 kg fresh fish
110g onions, chopped (1 medium)
2 seasoning cubes
1 tablespoons ground crayfish
2 scotch bonnet
salt
2 big ehuru (3 small), ground 1/2 teaspoon ground uziza
2 sticks uda utazi leaves (bitters)

Cooking directions:
-Toast and grind ehuru, hit uda to just break it open.
-Wash catfish slices well.
-Pour hot water over the fish slices and leave to stand for 1-2 minutes, drain and rinse in cold water.
-Place in a pot and add just enough water to just cover the fish. Place over medium heat.
-Add onions, seasoning cube, crayfish, peppers and sprinkle some salt.
-Cover and bring to a boil, add ground ehuru, uziza and uda, gently shake and swirl your pot, cook for 5-8 minutes.
-Add about 5 leaves of shredded utazi and some water. Taste and correct seasoning.
-Cook for another 5-8 minutes until fish is well cooked. Take off the heat.
-Serve your Catfish pepper soup with boiled yam, plantain, rice, agidi (eko, corn paste pudding) etc.

Please note:
-To prevent your catfish from disintegrating in your pot of soup, use the hot water method. The hot water hardens the flesh so you can cook it long enough to get the seasonings and spices into the fish.
-Do not overload your fresh fish pepper soup with too many seasoning and spices.
-If using a spice blend, use just enough to have a mellow (not harsh) taste.
-Cook long enough to remove that harsh raw taste of spices.
-If you can stand the heat of hot peppers, this is one pepper soup that benefits from being very hot.
-Fish is one ingredient you do not want to cook from frozen.
-It needs to defrost properly right through to the centre and because it cooks very fast, there is no way the centre will defrost and cook at the same time as the outside.
-Leave your fish to totally defrost before cooking.
-Toast ehuru or better buy already toasted one like I always do.

PLEASE DON'T EVER EAT NOODLES WITH FRIED EGG AGAIN AT VENDORS ESPECIALLY AT ABOKI JOINTS!!!

I can't believe it but it happened to my friends last night.

My friends went to a food vendor to eat, they told the mallam to fix 3 packets of Noodles and 8 eggs then they sat down to chill till he finished preparing the food; he was cooking and they were gisting.

Suddenly he told them the food was ready then he served them the food. While they were eating he asked them what they wanted to drink and they ordered for fanta and Maltina, he brought the drinks, they opened it and drank.

30 minutes​ later, they finished eating and paid the mallam and they started walking back home when one of them suddenly remembered that he left his phone on the table then he ran back to get it, luckily for him the phone was still there and he picked it and ran back home to sleep.

And that's exactly what happened.

HOW TO BAKE WITHOUT THE USE OF OVEN

Do you wish to bake cake or pastries but you don't have oven to do all these.

Here is the Solution, though it's long but it's worth reading.

STEPS:
1. First prepare your baking pan by either lining with a parchment paper or greasing with butter and dust lightly with flour. Next, gently pour the clean sand into the pot, place an aluminium or metal plate on it and heat up for 5 minutes. While the pot is heating up, prepare your batter,pour into the prepared baking pan.

2. Carefully, open the now hot pot and place your cake pan on the hot rack Important: Never place the cake pan directly on the bottom of the sand, or the cake will burn. Always make sure there is a separation between the cake pan and the sand.

3. Now cover the pot again and leave the cake to bake well on medium- high heat for about 5 minutes, then reduce to low heat and let the cake continue baking for 15 to 30 minutes (depending on the size of the cake you are baking and the type of cooker you are using) .

4. After 15 minutes open up the pot and check for doneness by dipping the center with a skewer/toothpick. If the skewer comes out clean, then the cake is done baking, but if it comes out moist, let the cake bake a little longer and test with the skewer again, after 5 minutes.

5. When the cake is done, take it out of the hot pot and leave to cool for 10 minutes before turning it over on a cake rack or plate.

Serve and Enjoy.
