Already caption by the shopkeeper as yaha "fate purane note Badle Jaate Hain". You can find them while walking at from Lal qila to fatehpuri masjid and back at chandni chowk. They earn by talking commission by taking torn currency and returning with fresh and valid ones. You can also find with them old coins at times dating back to mughal Era.

Tawa fried aloo chaat from age old shop at Central Bank chaat wala, chandni chowk. It still tastes same as i remember having it in 1990s. It's an old shop under Jain dharamshal and Dr Mathur who is as old as my liking to Purani Dilli.

Kanji wada, a season delight when you move from winter to summer of Delhi. Moong and udad dal wada with fermented water rai, lal mirch,hing and salt add to taste.
You can find these at chaat wala round the year. This one is from chaat wala near Haldiram, chandni chowk for INR40.

Chole Kulche cart in the bylanes of Kinari bazaar. Awesome taste, good quality and INR30. Basically it is matra boiled with mild spices and salt and later spices and salt add to taste while serving on dhak ka patta.
People serving on these xarts are called khomchawala often doungbthis as business from generations.

The mashakwalas you may still find often around Puranidilli area around Jama masjid.
The etymology of the term mashak have had originated from its common use in India, referring to a skin bag used for carrying water. Mashaks were bags made of goatskin in which people carried cold water for selling in parts of northern India. These mashaks can be still seen in Puranidilli's Sakke Wali gali.
Mashaks have surfaced in stories of yesteryears. Mughal emperor Humayun was said to be once drowning in Ganga and was rescued by a water carrier, Nizam, who offered him his mashak to swim over the furious water.

Unfortunately this is one of the oldest profession dying due to modernisation.

सुबह जब में स्कूल बस में याहा से चढ़ता था तो दुकान बंद होती थी...पर शाम को स्कूल से घर आते ही खुल जाती...रसगुल्ला चम चम मिष्टी दोही का जो स्वद तब था वो आज भी वैसा ही है.. . चीनी की मिठास नहीं बड़ी...
बस पैसे और उमर दोनो बढ़ गए"
