Chicken with Veggies 🌶🥕🥔 ...
INGREDIENTS
3-4 skinless & boneless chicken pieces (Breast or thighs)
2 lemons, squeezed.
5-6 cloves of garlic, minced
1 Tbs of onion powder
2 tsp Italian seasoning
1 tbsp pesto
1 tbsp balsamic glaze
Carrots, baby potatoes, bell peppers
Olive oil
1/2 to 1 cup of vegetable stock or hot water
METHOD...
** Season the chicken with salt, pepper and onion powder.
** In a nonstick pan heat some oil and stir fry the potatoes, carrots and peppers on medium heat for about 2-3 minutes. Move and set aside.
** Using the same pan sear the chicken on each side on medium heat until slight golden, then add the stir fried vegetables back to the pan that has the chicken.
* * In a bowl, mix the minced garlic, stock or hot water, onion powder, salt, pepper, Italian seasoning, vinegar and pesto and pour over the chicken and veggies..
** Stir gently then cover pan and cook on low to medium heat until chicken and potatoes are cooked through.
* Add the lemon juice, simmer for a few minutes then serve immediately with bread, rice, quinoa, couscous or on its own. Garnish with chilli flakes and enjoy 😉

Seared Beef Bowl 🍚 🥬 🌶 🥑
Prepare the sauce by adding the following in a jar and mix well.
4 tbs rice vinegar
4 tbs soy sauce
2 garlic cloves, pressed or finely minced
1 to 2 tsp ginger, grated or finely minced
A handful of finely chopped spring onions
1 tbs sesame oil
1 tsp of sesame seeds
1 tsp chilli oil
Salt to taste
Chopped fresh red chilli (optional)
:
Pan sear the strips of beef in a hot pan with a drizzle of oil, salt and pepper. Do not over cook.
Serve with steamed pak choi, avocados, toasted seaweed and steamed broccoli over cooked jasmine rice. Pour over as much sauce as desired.
Serve immediately
Save the rest of the sauce in the fridge for later use)

Brunch Idea 😋😍
Sautéed oyster mushrooms and baby potatoes (half boil the potatoes before sautéing) in olive oil, seasoned with garlic, salt and pepper.
Served with sunny side-up eggs avocados and dried dill seasoned smoked salmon.

2 Tbsp Butter or Ghee
4 Garlic Cloves pressed
1 Cup Heavy Cream or milk
1 Tsp Gluten-free Flour
½ Tbsp Lemon Zest
1 Tbsp Italian Seasoning Mix
1 Tsp Chili Flakes or to taste
1 Tsp Cayenne Powder
¼ Cup Sun-dried Tomatoes Chopped

Garlic Mushroom Chicken Thighs 😍😋

Ingredients
▢ 6 boneless skinless chicken thighs
▢ 1 teaspoon onion powder
▢ 1 teaspoon garlic powder
▢ ½ teaspoon paprika
▢ ½ teaspoon dried thyme
▢ ½ teaspoon ground black pepper
▢ ½ teaspoon salt
▢ 2 tablespoons olive oil
▢ 2 tablespoons unsalted butter
▢ 8 oz brown mushrooms sliced
▢ 1 tablespoon garlic finely chopped
▢ Salt & pepper
▢ Chopped parsley to garnish

Instructions
In a small bowl combine the ingredients; onion powder, garlic powder, paprika, thyme, black pepper and salt.
Season the chicken thighs with the prepared spice mix evenly.
Heat a large skillet with oil on a medium flame, add the chicken thighs and sear for 9-10 minutes until they turn golden on both sides. Transfer them to a plate and set aside.
To the same skillet add the butter. Once the butter is melted, add mushrooms and garlic. Saute for 3-5 minutes and season the mushrooms with salt and pepper.
Transfer the chicken back to the skillet and garnish the chicken thighs with chopped parsley and serve over mashed potato.

SPICY PRAWNS WITH VEGETABLES🍤 🌶
INGREDIENTS
250g raw deveined prawns
broccoli, coloured peppers, sweet corn (use any vegetable of your choice)
Oil
2 cloves garlic, crushed
1 tsp grated ginger (more or less according to taste)
Sauce: Mix 2 tbs of light soy sauce, 1 tsp of sesame oil, 1 tsp fish sauce (optional), 3 tbs of hot water, salt, pepper and chilli sauce in a small bowl.
METHOD
1- Heat some oil in a non-stick frying pan, over medium heat. Fry the garlic and ginger for 20 seconds or until fragrant,(do not burn)
2- Add the prawns, stir and cook until opaque.
3- Add the vegetables, continue to stir fry until nearly cooked but still crisp.
4- Add the sauce and stir well until prawns and vegetables are well coated with the sauce.
Serve immediately with rice, noodles or on its own.
Enjoy!

STIR-FRIED VEGETABLES WITH PRAWNS 🍤 🌶🥦
INGREDIENTS
Sliced mushrooms
Vegetable oil
Sliced garlic
Onions, broccoli and coloured peppers (use any vegetable of your choice)
Cooked prawns (I only had a handful 🤦‍♀️)
1-2 tbs hot water
Spices: cayenne pepper, turmeric powder, ground cumin
Salt and pepper
Lemon juice
METHOD
1- Heat a nonstick skillet over high heat until very hot. Drizzle some oil, then sauté mushrooms, stirring until golden brown then throw in some sliced garlic and stir with the mushrooms for a few seconds (making sure not to burn the garlic)
2- Add in the vegetables, water, salt, pepper, cooked prawns and spices. Stir well and cook on low/ medium heat for a couple of minutes then add the juice of half a lemon and cook until vegetables are fork tender and coated with the sauce.

Yogurt and cucumber salad: plain yogurt, minced garlic, dried or fresh mint, salt, pepper and extra virgin olive oil + a mixed salad with a simple dressing of extra virgin olive oil, lemon juice and salt.

SEARED SALMON WITH PRAWNS 🍤
1- Season the salmon fillets with salt, pepper, paprika, garlic powder and chilli flakes.
2- Pat dry the prawns with kitchen towel and season the same way as the salmon.
3- Pan sear the salmon on medium heat with avocado oil. When cooked through on both sides, move to the side of the pan and add the prawns.
4- Stir and cook the prawns till pink ~ 2-3 minutes. Once cooked, add some lemon juice over the salmon and prawns. Adjust seasoning if desired.
Serve with a salad of your choice.
