Chicken with Veggies 🌶🥕🥔 ...
INGREDIENTS
3-4 skinless & boneless chicken pieces (Breast or thighs)
2 lemons, squeezed.
5-6 cloves of garlic, minced
1 Tbs of onion powder
2 tsp Italian seasoning
1 tbsp pesto
1 tbsp balsamic glaze
Carrots, baby potatoes, bell peppers
Olive oil
1/2 to 1 cup of vegetable stock or hot water
METHOD...
** Season the chicken with salt, pepper and onion powder.
** In a nonstick pan heat some oil and stir fry the potatoes, carrots and peppers on medium heat for about 2-3 minutes. Move and set aside.
** Using the same pan sear the chicken on each side on medium heat until slight golden, then add the stir fried vegetables back to the pan that has the chicken.
* * In a bowl, mix the minced garlic, stock or hot water, onion powder, salt, pepper, Italian seasoning, vinegar and pesto and pour over the chicken and veggies..
** Stir gently then cover pan and cook on low to medium heat until chicken and potatoes are cooked through.
* Add the lemon juice, simmer for a few minutes then serve immediately with bread, rice, quinoa, couscous or on its own. Garnish with chilli flakes and enjoy 😉
