- 1 LB Russet Potatoes
- 1/2 Red Bell Pepper
- 1/2 Green Bell Pepper
- 1/2 Onion
- 1 Can, Corn
- 1 Can, Black Beans
- 0.5 Cup Sun Dried Tomato, Sliced
- 1 TBSP Chopped Garlic
- 1 TSP Smoked Paprika, Cumin, Chili Powder
- Salt & Pepper
- 2 TBSP Olive Oil

1. Start By Prepping The Vegetables. Chop Potatoes Into Bite Sized Pieces. Cut The Peppers And Onions Into Even Sized Pieces. Slice The Sun Dried Tomatoes And Chop The Garlic.
2. Heat Up A Large Cast Iron Skillet Over Medium High Heat. Season The Steak With Salt And Pepper Then Once The Pan Is Nice And Hot, Cook Steak For 2 Minutes, Without Moving, Flip, And Repeat. Remove The Steak From The Pan And Rest.
3. In The Same Pan, Lower The Hear TO Medium And Add Some Olive Oil. Throw In The Potatoes And Cook 15 Minutes, Mixing Often. After 15 Minutes, Add In Peppers And Onions. Cook For 2 Min.
4. Add In The Sun Dried Tomatoes And Garlic. Mix And Cook Until Fragrant.
5. Add In The Beans And Corn. Mix Everything Together And Add The Seasoning.
6. Cut Up Your Steak And Finish With A Sliced Avocado.
