Whole Apple Jam
On each apple, make a few deep punctures with a toothpick. But do not pierce the fruit through, otherwise the peel will peel off during cooking.
Pour sugar into a saucepan and pour over water. Put on moderate heat and wait until the sugar begins to dissolve. Add citric acid and, while stirring, cook until sugar is completely dissolved.
Put apples in syrup, mix and bring to a boil over very low heat. Cook for another 5 minutes and remove the pan from the stove.
