🛒 Ingredients

⅓ cup whole wheat pearled couscous
1 (15-oz) can chickpeas, rinsed and drained
1 Roma tomato, chopped
¼ cup sliced red onion
1 clove garlic, minced
¼ cup pine nuts
1 Tbsp olive oil
¾ tsp Greek seasoning
½ head Bibb lettuce, leaves separated
⅓ cup crumbled feta cheese
2 Tbsp chopped fresh flat leaf parsley

👩🏽‍🍳Instructions

Cook couscous according to package directions; rinse under cold water to cool.
Toss together couscous, chickpeas, tomato, onion, garlic, nuts, oil, and seasoning in a medium bowl.
Arrange lettuce in stacks of 2 leaves each; fill with chickpea mixture. Sprinkle with cheese and parsley.

3 cups (420g) all purpose flour, extra if needed
1 tbsp (16g) sugar
1 1/2 tsp (3g) instant yeast*

2 frozen falafel burgers

2 slices Havarti cheese
¼ cup refrigerated tzatziki dip
½ cup baby spinach
1 small tomato, sliced

Instructions

Preheat oven to 400°F. Arrange pitas on a baking sheet. Bake 3 to 5 minutes or until toasted.
Meanwhile, cook burgers in hot oil in a nonstick skillet according to package directions, topping with cheese during the last minute of cooking.

WHITE BEAN CAKES

Ingredients

1 Tbsp ground flaxseed
2½ Tbsp water
1 (15-oz) can cannellini beans, rinsed and drained
⅔ cup organic panko breadcrumbs
1 Tbsp nutritional yeast
¼ cup finely diced red onion
¼ tsp salt
¼ tsp pepper
1 clove garlic, minced
1 Tbsp olive oil
¼ cup vegan sour cream
¼ tsp ground cumin
⅛ tsp smoked paprika
Instructions

Whisk together flaxseed meal and water. Let stand 5 minutes until thickened.
Meanwhile, pulse beans in a food processor until finely chopped, scraping sides as necessary. Stir in breadcrumbs, nutritional yeast, onion, salt, pepper, garlic, and flaxseed mixture. Shape into 6 patties; refrigerate 30 minutes.
Cook patties in hot oil in a large skillet over medium heat 4 to 5 minutes per side or until browned and firm.
Stir together sour cream, cumin, and paprika. Serve dip with patties.

1⁄4 cup vegan green chile enchilada sauce
1⁄2 tsp ground cumin
2 organic burrito size flour tortillas
1 small avocado, thinly sliced
1⁄3 cup pico de gallo

Instructions
1. Preheatovento425°F.Tosstogetherpotatoesandoilonarimmedbakingsheet. Season lightly with salt and pepper, if desired. Bake 20 to 25 minutes or until potatoes are tender, stirring once.

👩🏽‍🍳INGREDIENTS
1 Cup Light coconut milk
1/2 Cup Uncooked quinoa
1 Cup Strawberries, thinly sliced and halved
1 Cup Nectarine, thinly sliced (about 1 nectarine)

HERB TOSSED SWEET POTATOES 🌿🍠
Here’s a healthy spin on traditional candied yams! With savory and sweet flavors, this recipe gives your pallet so much to explore with a whole lot of yummy! 😋💚🤤

THE DISH
3 lbs sweet potatoes peeled and cubed
Water
Kosher salt and pepper
1/2 tsp ground nutmeg
1/2 tsp ground cardamom
1/2 tsp ground cinnamon
1 tbs Earth Balance
Handful of chopped basil
3 cloves of garlic chopped.

Step 1: boil potatoes in water for 15 minutes.
Step 2: Drain potatoes and add to a large mixing bowl. Step 3: Add Earth Balance, all seasonings, basil, garlic and seasonings
Step 4: Transfer to serving platter and set aside for a few minutes to let the flavors blend before serving.

While juicing can be tasty and provide vitamins extracted from vegetables and fruit, I’ve decided to discontinue daily juicing. If you have a juicer sitting somewhere in a kitchen cabinet, you’ll understand.

Inconvenience: Daily juicing became impractical and time-consuming. As you know, one of my main focuses is providing time, saving ways to maintain health.

Varying Taste: Not every juice recipe tasted great the next day, leading to a lack of consistency in flavor and flavor is what keeps you coming back for more. This makes patch juicing a non-option.

Separate Breakfast Preparation: I had to prepare a separate breakfast, adding to the overall time spent on meal preparation.

Caloric Needs: Ensuring I met my required calorie intake for weight loss and maintenance became more challenging while incorporating juices.

Fresh Produce Management: Sustaining a continuous flow of fresh produce in stock proved to be a logistical challenge. Fridge space was scarce. I will keep my juicer around, but the important thing is to keep trying healthy options until you find. What works best for you!

**Ingredients:**
- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/2 cup Kalamata olives, pitted and halved
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup extra-virgin olive oil
- 2 tablespoons lemon juice
- Salt and pepper, to



**Instructions:**

1. **Cook Orzo:** Cook the orzo pasta according to the package instructions in a large pot of salted boiling water. Drain and rinse the orzo under cold water to stop the cooking process. Let it cool completely.

2. **Prepare Vegetables:** In a large mixing bowl, combine the cooked and cooled orzo, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, parsley, and basil.
